I got this recipe off of another site but modified it quite a bit to suit our tastes. It is very easy and will certainly impress company or make a nice dish for a romantic meal! The key is to use fresh herb in this dish. Serve with a good crusty bread, green salad and a nice white wine.

2 tablespoons olive oil
1 lb large shrimp, peeled and deveined
3 cloves garlic, minced
3 -4 tablespoons fresh basil, chopped
3 tablespoons butter
1/4 cup of a good white wine (Do not use cooking wine!)
1/2 lb linguine, cooked al dente
chopped fresh parsley (to garnish)

Steps:

  • Heat the oil in a skillet.
  • Add the shrimp and cook until just pink.
  • Add the garlic, basil and butter.
  • Saute just until butter is slightly melted.
  • Add wine and bring to a boil then reduce and simmer just until slightly reduced and alcohol evaporates.
  • Add cooked Linguini to pan and toss to coat.
  • Garnish with fresh parsley.

This is a very tasty seafood pasta, and less than 1/2 hour to make. Most of time is spent on cleaning & deveining the shrimp.

3 tablespoons olive oil
1 lb shrimp, large, peeled and deveined
2 teaspoons garlic, minced
3 tablespoons basil, fresh, chopped
3 tablespoons butter
1 lb linguine (preferably fresh)
grated asiago cheese (as desired)

Steps:

  • Boil water for the linguine, adding 1 tbsp of the olive oil and a pinch of salt to the water. Cook the linguine for 7-8 minutes (al dente), stirring every minute. While the pasta is cooking, heat a large skillet with remaining olive oil.
  • When th e oil is hot, add the shrimp to the skillet, sauteeing until the shrimp turns pink, about 3-4 minutes.
  • Add the garlic and the basil and cook an additional 2-3 minutes.
  • Add the butter, and toss in the pasta, making sure to coat the pasta with the sauce. Remove from heat.
  • Serve immediately and garnish with the Asiago cheese as desired!

6 tablespoons (3/4 stick) butter
1 1/2 pounds uncooked large shrimp, peeled, deveined
6 green onions, chopped
6 garlic cloves, coarsely chopped
1/2 cup dry white wine
2 teaspoons finely grated lemon peel
2 8-ounce bottles clam juice
1/2 cup whipping cream
1/2 cup chopped fresh basil

Steps:

  • Cook pasta in pot of boiling salted water until tender but still firm to bite; drain.
  • Melt butter in large skillet over medium-high heat. Add shrimp; sprinkle with salt and pepper. Sauté shrimp until almost opaque in center, about 2 minutes. Using slotted spoon, transfer shrimp to medium bowl. Add onions and garlic to same skillet; sauté 1 minute. Add wine and lemon peel. Boil until reduced to glaze, about 2 minutes. Add clam juice and cream; boil until sauce thickens, about 8 minutes. Return shrimp and juices to skillet. Add pasta; toss to coat. Mix in basil. Season with salt and pepper.

1 cup quartered cherry or grape tomatoes (about 12)
5 large fresh basil leaves, chopped, plus extra for garnish
Kosher salt and freshly ground black pepper
1 1/2 pounds medium-large shrimp, shelled and deveined
Extra-virgin olive oil
1 large clove garlic, minced

Steps:

  • In a medium bowl, toss the tomatoes with the basil and season with salt and pepper, to taste. Set aside while you prepare the shrimp.
  • Divide the shrimp between 2 (8 or 9-inch) pie pans and pat them completely dry with a paper towel. Arrange the shrimp so they lay flat and are evenly spaced in the pans.
  • Heat 2 large skillets over medium heat, or do this in 2 batches if you only have 1 pan. Season 1 side of the shrimp with salt and pepper. Add enough oil to lightly film the bottom of the pan and turn the heat up to high. Invert the pan of shrimp so they all fall into the skillet(s) at once. Saute the shrimp, undisturbed, until they turn golden brown on the bottom, about 2 minutes. Add a bit more oil and 1/2 the garlic to each pan. Turn the heat off and turn the shrimp over with tongs. Cook the shrimp for 1 minute in the residual heat of the pans. Transfer the shrimp to the bowl with the tomato mixture and toss to combine. Divide the shrimp among 4 plates or a serving platter and serve hot or at room temperature.
