For this healthy turkey meatball recipe, lean ground turkey is mixed with fresh mushrooms, oats, garlic, spices and a little Parmesan cheese for a meatball that's moist, delicious and has more fiber and less saturated fat than a traditional beef and pork version. Serve these tasty meatballs over whole-grain pasta with fresh tomato sauce for a satisfying take on spaghetti and meatballs, and save the leftovers to stuff into sandwiches.

1 teaspoon olive oil
3 cups sliced fresh button mushrooms (8 ounces)
1 egg, lightly beaten
⅓ cup quick-cooking rolled oats
⅓ cup finely grated Parmesan cheese
3 cloves garlic, minced
2 teaspoons dried Italian seasoning, crushed
½ teaspoon salt
¼ teaspoon ground pepper
1 ¼ pounds lean ground turkey
1 recipe Linguine with Fresh Tomato Sauce (see Associated Recipes)

Steps:

  • Preheat oven to 400 degrees F. Line a shallow baking pan with foil; coat the foil with cooking spray.
  • Heat oil in a medium skillet over medium heat. Add mushrooms; cook, stirring occasionally, until tender and all of the liquid has evaporated, 8 to 10 minutes. Transfer the mushrooms to a food processor; process until finely chopped.
  • Combine egg, oats, Parmesan, garlic, Italian seasoning, salt and pepper in a large bowl. Add the mushrooms and turkey; mix well. On a cutting board, pat the meat mixture into a rectangle and cut into 30 squares. Roll each square into a ball and place the balls 1/2 inch apart in the prepared pan. Bake until the meatballs are no longer pink and their internal temperature reaches 165 degrees F, 12 to 15 minutes.
  • Divide the linguine and sauce between 4 plates or shallow bowls. Top each serving with 6 meatballs. (Reserve the remaining meatballs for another meal; see Note.)

1 pound lean ground turkey (about 94 percent lean)
1/2 cup whole-grain breadcrumbs
2 large eggs, lightly beaten
1/3 cup grated yellow onion (about 1/2 medium onion)
1/2 cup grated Parmesan
2 tablespoons finely chopped fresh basil plus 1/4 cup torn fresh basil leaves
2 teaspoons finely chopped fresh oregano
2 large cloves garlic, minced
Kosher salt and freshly ground black pepper
1/2 teaspoon fennel seeds
1/2 teaspoon crushed red pepper flakes
10 ounces whole-grain linguine or spaghetti
3 tablespoons heavy cream
1 1/2 teaspoons extra-virgin olive oil
Juice and zest of 1 lemon (about 3 tablespoons juice)

Steps:

  • Preheat the oven to 475 degrees F. Bring a large pot of unsalted water to a boil. Spray a rimmed baking sheet with cooking spray.
  • Add the turkey, breadcrumbs, eggs, onions, 1/4 cup of the Parmesan, chopped basil, oregano, garlic, 1 1/4 teaspoons salt, 3/4 teaspoon black pepper, fennel seeds and red pepper flakes to a large bowl and mix with your hands until evenly combined. Form the mixture into 24 meatballs (about 1 1/2 tablespoons each) and place them on the prepared baking sheet, evenly spaced. Spray the meatballs with cooking spray and roast until cooked through, 12 to 15 minutes, turning each meatball over about halfway through.
  • Meanwhile, add the linguine to the boiling water and cook according to package directions. Strain, reserving 1 cup pasta cooking water.
  • Bring the reserved pasta water, cream and oil to a boil in a large saucepan over high heat. Add the linguine and toss to combine. Add the lemon juice and meatballs and toss to combine. Add the remaining 1/4 cup Parmesan and 1/8 teaspoon salt and toss to combine. Adjust seasoning with salt if needed.
  • Transfer the linguine and meatballs to four large pasta bowls or a large rimmed platter. Sprinkle with the lemon zest and torn basil.

2 bunches broccolini, cut into bite-size pieces
8 ounces sweet Italian turkey sausage, casings removed
1/4 cup extra-virgin olive oil, plus more for drizzling
4 cloves garlic, thinly sliced
Pinch of red pepper flakes
1 large egg
Freshly ground pepper
1/2 cup grated ricotta salata or parmesan cheese (about 2 ounces)

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, adding the broccolini during the last 2 minutes of cooking. Reserve 1 cup cooking water, then drain the pasta and broccolini. Meanwhile, roll the sausage meat into about 20 small meatballs. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the meatballs and cook, turning occasionally, until browned and cooked through, 5 to 6 minutes. Drain on paper towels. Pour off any drippings from the skillet, then add the remaining 3 tablespoons olive oil, the garlic, red pepper flakes and 1/2 teaspoon salt. Cook over medium heat, stirring, 1 minute. Add the pasta, broccolini and meatballs. Whisk the egg with the reserved cooking water in a small bowl, then add to the skillet and stir until the sauce thickens slightly. 2oz pancetta, diced
1/2 yellow onion
1lb ground turkey meat (we used extra lean)

1/4c sun dried tomatoes
1/2c egg beaters
3/4tsp salt

Sauce:
1/4c olive oil
1 28-oz can San Marzano tomatoes, cut up
2 whole cloves garlic, peeled
1/4c fresh flat leaf parsely
1/2tsp salt
1/2tsp black pepper
1/3c finely chopped fresh basil

Steps:

  • Meatballs:
  • Preheat the over to 450F.
  • Heat 3tbs olive oil over medium heat
  • Add pancetta and cook for 2min
  • Add onion and cook until pancetta is crisp and onion is tender, approx. 4min
  • Remove from heat and let cool.
  • In a large bowl, combine the pancetta and onion mixture with the remaining meatball ingrediants and stire.
  • Form into 2in balls, using about 2tbs of mixture each
  • Place on a foil-lined and greased baking dish and bake for 20min
  • Cook pasta 8-10 minutes. Drain and reserve about 1c of the pasta water.
  • Sauce:
  • In a medium saucepan, warm 1/4c olive oil over medium heat
  • Add tomatoes, garlic cloves, parsley, salt and pepper
  • Cook for 10 minutes
  • Discard the garlic cloves
  • Add the cooked meatballs and pasta to the sauce, tossing to coat. Add pasta water, if extra moisture is needed, 1/4c at a time. Garnish with basil and serve.

Steps:

  • Mix first nine ingredients by hand using a light touch.

  • Mix tomato paste, tomato sauce and water.
  • When last side of meatballs are nearly brown, add tomato sauce mix to the pan.

  • Stir, being careful not to break up meatballs, cover and simmer for at least an hour.
  • Add fresh chopped basil and oregano to taste during the last ten minutes.

Easy home made tomato pasta sauce with turkey meatballs. Let it simmer all day, for an easy dinner which freezes great. This is my base recipe for all pasta dishes, the meatballs can be removed for sandwiches.

2 tablespoons extra virgin olive oil
1/2 large diced onion
1 teaspoon kosher salt
3 garlic cloves, minced
8 ounces sliced mushrooms
1/2 green pepper, diced
2 celery ribs, chopped
1/4 cup fresh basil or 1 1/2 tablespoons dried basil
3/4 tablespoon dried oregano
1 teaspoon thyme
1/2 teaspoon seasoning salt
1/2 teaspoon ground black pepper
1/8 teaspoon cayenne pepper
1/4 teaspoon cinnamon
6 -8 cups tomato sauce or 2 (28 ounce) cans good quality tomatoes, crushed
1 bay leaf
2 tablespoons balsamic vinegar

1 teaspoon oregano
1 teaspoon garlic powder

Steps:

  • Heat large pot or dutch oven on medium heat. Once pot is heated, add oil. Lower heat and add chopped onion, stir then sprinkle with healthy pinch of kosher salt. Heat for 2minutes then add minced garlic and stir. Cook for one minute being careful not to burn and add sliced mushrooms, celery and diced green pepper, stir. Add spices and stir. Once vegetables are tender add tomato sauce and stir. Add bay leaf. Simmer. Add 2 tbsps balsamic vinegar and a generous splash of red wine. Continue to simmer, stirring to ensure that sauce is not sticking to bottom of pan. Reduce heat if necessary.
  • To make the meatballs.
  • In a medium bowl add Italian bread crumbs, dried basil, oregano, garlic powder, onion powder, season salt and black pepper. Stir and add minced lean turkey. Mix well but try not to handle too much to keep them tender. Form into balls and drop into sauce. Ensure meat balls are covered in sauce. Simmer and stir carefully until done, a good 2 hours. Ensure that sauce does not burn to bottom of pot. Add chicken broth or water if sauce becomes too thick. Once meat balls are cooked, taste sauce and add more salt, seasoning and/or cayenne pepper to taste.
  • I have found, depending on thickness of pot the sauce will sometimes be very thick. When I make at home I often have to add cups of liquid to the sauce, but it is dependent upon personal preference.

The salty pancetta and the sweet sun-dried tomatoes make these meatballs that people will rave about for a long time.

2 ounces pancetta, finely diced

1/2 cup freshly grated Romano cheese

1/4 cup chopped sun-dried tomatoes
2 eggs, lightly beaten
3/4 teaspoon salt
3/4 teaspoon freshly ground black pepper
1 pound linguine
1/4 cup extra-virgin olive oil
1 (28-ounce) can whole San Marzano tomatoes, drained and cut into pieces with kitchen scissors

  • To make the meatballs, preheat the oven to 450°F.
