LOBSTER AND TARRAGON RISOTTO

I ate lobster on my wedding day. And no, not some fancy surf and turf, a whole lobster served in a tin pan with corn, potatoes, mussels and sausage. A good 'ol Cape Cod clambake. I tore it open with my hands (lucky for me it was a soft-shell) and smelled of lobster the entire evening. It was the best day of my life. Pure romance. My husband, on the other hand went with the steak. He's much neater than I am, and lobster is not exactly his favorite. But marriage is all about compromise (or maybe me getting my way?), so I set out to develop a lobster recipe he'd love. Not such an easy feat. He's for sure not touching the shell, don't even ask. And the antennas? Get rid of them. Tomalley? It's a full stop for him. However, add a little mascarpone and Parmesan cheese and serve that crustacean lazy-man-style in risotto and we're in business. What I love about this recipe is you can stretch one lobster to feed 4 people, and you even use the shells to make a quick and easy stock to flavor the risotto. The risotto is so rich thanks to the butter and cheese, you don't need pounds and pounds of precious lobster on top, a few luscious morsels will do just fine. The verdict? - In a large, heavy bottomed pot, heat 4 tablespoons of butter and olive oil over medium heat. Once butter is melted add shallots and fennel and season with salt and pepper. Cook for 5 minutes, or until slightly softened. Meanwhile bring lobster stock to a simmer in a separate pot.
- Add rice, tossing to coat in butter and oil, and cook for 2 minutes, or until fragrant. Add wine and let reduce by half. Once wine has reduced, begin adding lobster stock in one cup at a time, stirring frequently until it has all absorbed. Continue adding stock 1 cup at a time, until the rice is tender (but still has a slight bite), which should take about 20-25 minutes.
- Once rice is tender, add peas and lobster meat and cook for about 3 minutes, or until warmed through. Remove risotto from heat and stir in remaining butter, mascarpone, Parmesan, parsley, tarragon, lemon juice and lemon zest and red pepper flakes. Adjust seasoning and serve immediately.
- In a large stock pot, heat oil over medium heat. Add all ingredients except water and sauté for about 5 minutes. Add cold water and bring to a boil. Reduce heat to a simmer and cook for 30 minutes, straining off any impurities that rise to the surface while cooking.
- Once stock has simmered for 30 minutes, strain through a fine mesh strainer. Season to taste with salt and pepper. Use immediately or cool to room temperature and store in the fridge for up to 2 days, or in the freezer for 3 months.
- *Note: If you are using homemade lobster stock, the recipe should yield exactly 8 cups. If you wind up with less, you can add in water or store bought seafood or chicken stock to make up the difference.
LOBSTER RISOTTO
So you cooked some lobster and that was great. You sautéed the empty shells in oil and cooked them off in a lot of water with an onion, a couple bay leaves and a few peppercorns, and made stock. This is as it should be, always. Lobster is expensive. Make its flavors last. And when you are ready, make this risotto. Heat the stock in a pot. Melt butter in a heavy saucepan next to it, add onions and cook them translucent, salt the whole and add Arborio rice, then stir to combine. Now start adding hot broth to the rice, a cup at a time, stirring endlessly all the while, never adding more stock until everything you have added has been absorbed. When everything is tender and creamy, add Parmesan and any leftover lobster meat you happen to have. If the answer is none, do not worry in the least. This is a rich risotto without meat, luxury eating on the cheap.

- In a medium pot, heat the stock and keep warm.
- In a large, wide saucepan, melt the butter in the oil over medium-high heat. Add the onions and sauté until translucent, about 4 minutes. Add a large pinch of salt, then add the rice and stir constantly for about 2 minutes. Add 1 cup of broth and simmer, stirring until the broth is almost absorbed. Add more broth, a cup at a time, allowing each addition to be absorbed before adding the next. Stir often. Cook until the rice is tender and the mixture is creamy, 20 to 25 minutes.
- Stir in the lobster meat until heated through, then add the chives and ¼ cup of the Parmesan. Season to taste with salt and pepper. Serve immediately with remaining Parmesan. Reserve excess risotto for Eggs Over (Easy) Lobster Risotto Patties (recipe here).

- Preheat oven to 425°F. Cook lobster in large pot of simmering salted water until cooked through, about 10 minutes. Transfer to bowl of cold water to cool. Drain lobster. Remove meat from shells; reserve shells. Cut meat into 1/2-inch pieces.
- Break shells into large pieces. Place on baking sheet; bake 15 minutes. Blend shells with 1 cup chicken broth in blender until finely chopped. Strain through fine sieve. Reserve lobster broth; discard shells.
- Bring 2 1/2 cups chicken broth to simmer; keep hot. Heat 1 tablespoon truffle oil in heavy large saucepan over medium heat. Add carrots and shallots; sauté 2 minutes. Add rice; stir 2 minutes. Add brandy; reduce heat to medium-low. Simmer until brandy is absorbed, stirring constantly, about 2 minutes. Add lobster broth and 3/4 of chicken broth. Simmer until rice is just tender and mixture is creamy, adding remaining broth by 1/4 cupfuls as needed and stirring often, about 20 minutes. Add lobster and cream; stir until heated through. Remove from heat. Stir in 2 tablespoons truffle oil and chives. Season with salt and pepper.

Steps:
- Heat 2 tablespoons oil in a large skillet over medium heat; cook and stir onions until light brown and tender, about 20 minutes.
- Bring chicken broth to a boil in a pot; reduce heat to low and keep at a simmer.
- Heat remaining 2 tablespoons oil in a large, flat-bottom pan over medium-high heat. Cook and stir shallot and garlic in the hot oil until fragrant, about 2 minutes. Add Arborio rice to shallot mixture; cook and stir until rice begins to brown, about 3 minutes. Add wine and cook for 1 minute.
- Stir 1 cup chicken broth into rice mixture; cook, stirring constantly, until broth is absorbed. Repeat adding broth, 1 cup at a time, until all the broth is used, stirring constantly until broth is absorbed each time, about 30 minutes.
- Mix honey into onions and cook 5 minutes more.
- Stir butter into rice mixture until melted. Add cream and stir until rice mixture thickens, about 3 minutes. Add paprika and cayenne pepper; stir well. Add sherry and mix well. Stir lobster meat into rice mixture and cook until heated through, about 3 minutes. Mix Parmesan cheese into rice mixture until melted. Add onion mixture and mix well; season with salt and pepper.

BOILED LOBSTERS WITH TARRAGON BUTTER

- Fill a 6-quart pot three fourths full with salted water and bring to a boil. Plunge lobsters headfirst into water and boil, covered, 7 to 8 minutes. Transfer lobsters with tongs to a colander and drain head down to remove excess liquid.
- Finely chop shallot. In a small saucepan melt butter with shallot, tarragon, vinegar, and salt and pepper to taste.
- Arrange lobsters on a platter and using kitchen shears remove thin, hard membrane from underside of each tail by cutting just inside outer edge of shell.
- Spoon some tarragon butter over each lobster tail and serve remainder on the side.
BAKED LOBSTERS WITH TARRAGON-CREAM SAUCE

- Preheat the oven to 500 degrees.
- Remove and discard the rubber or wood claw holders from lobsters.
- Bring the water to a vigorous boil in a large kettle and drop the lobsters into it. When the water returns to the boil cook the lobsters for exactly 2 minutes and drain. Arrange the lobsters shell side up in one layer in a baking pan. Place in the oven and bake exactly 12 minutes.
- Break off the lobsters' claws. Crack the claws in several places. Place the lobster carcasses shell side down on a flat surface and crack each lengthwise to cut them in half. Pull away and discard the tough sac at the beak end of each lobster. Scoop out the soft mass (the tomalley, coral, liver and so on) from the inside of each lobster. Spoon and scrape this into a saucepan. Save any juices and add these to the saucepan.
- Add the shallots to the saucepan and bring to the boil, stirring.
- Arrange the lobster halves shell side down in one layer on a baking pan. Pull and discard the upper half of each claw shell. Add the remaining claws to the baking pan.
- Add the cream to the mixture in the saucepan. Add salt and pepper and bring to the boil. Add the lemon juice. Cook about 2 minutes.
- Line a saucepan with a sieve and pour the mixture into the sieve. Rub with a rubber spatula to extract as much liquid as possible. There should be about 1 cup. Discard the solids.
- Put the sauce on the stove and bring to the simmer. Swirl in the butter and tarragon.
- Spoon the sauce over the cut portions of each lobster and serve.
