- Preheat oven to 425. Lightly grease or spray a 13" x 9" (or larger) baking dish.
- Rinse fish filets and pat dry. Set them in a single layer in the prepared baking dish.
- In a small bowl, combine melted butter, lemon juice, garlic, sugar, pepper, thyme and parsley. Stir well. Pour evenly over fish filets.
- Sprinkle with the breadcrumbs.
- Bake at 425 for about 20 minutes or until filets are opaque and flakey.

LOU'S BAKED FISH
Steps:
- Preheat oven to 375 degrees F. Rinse fish under cold water, pat dry and set aside. Cut fish into 8 (4 oz. each) servings. Spray the bottom of a 9x13 baking dish with the butter flavor spray. In a plastic bag, crush Cheese Nips; remove 1/2 cup and sprinkle in the baking dish, coating the bottom. To the bag, add hot sauce and 1/4 cup parmesan/Romano cheese, tossing to combine well.
- Dredge a piece of fish in the flour, " paint" with 2 Tbsp. of dressing, coat with the Cheese Nips and place into baking dish; continue with the remaining fish. Sprinkle with the remaining 1/4 cup of parmesan/Romano cheese.
- Place in oven and lower temperature to 325 degrees F. Bake for 10-15 minutes or till fish flakes easily with a fork. Remove from oven and serve immediately.

- Melt butter in large glass Pyrex measuring cup and add lemon juice, spices and sugar.
- Place bread crumbs in a shallow bowl or platter.
- Spray a shallow baking dish with vegetable spray.
- Cut fish into individual serving pieces.
- Dip fish into butter and then coat each fillet well with bread crumbs.
- Place bread coated fillets into baking dish.
- Repeat until all fish fillets are covered.
- Spoon the remaining herb butter mixture over fish.
- I also use a pastry brush to lightly tap the tops of the breaded fish to make sure it is all cover.
- You may need to melt more butter to coat fish.
- Bake, uncovered, for 15 minutes at 400 degrees.
- Fish is done when fish flakes easily with a fork.

- Preheat oven to 400°F. Butter 13x9x2-inch glass baking dish. Combine 3 tablespoons butter, sweet paprika, 1 tablespoon chopped fresh parsley, fresh lemon juice, lemon peel, salt, and ground pepper in small bowl and stir to blend. BAKED FISH
Cooking fish for 10 minutes per inch of thickness is an old rule of thumb that works perfectly when roasting fillets or steaks. It's just enough time to cook the flesh through so that it's opaque, but not so much that it flakes. The only hitch comes with fillets that are uneven. Use your judgment but err on the side of less is more. You can always put any undercooked parts back in the oven, but you can't undo overdone. Serve these as is in their purist form, or add your favorite sauce on the side. A pesto, aioli or vinaigrette would work well.
