4 med. cooking apples, peeled, cored, sliced thin
1 tbsp. lemon juice
12 sheets frozen phyllo dough (17x12), thawed
3/4 c. butter (melted)
2 tbsp. sugar
2 tbsp. brown sugar
1 tsp. cinnamon

Steps:

  • Sprinkle juice over apples. Working on waxed paper, lightly brush one sheet phyllo with melted butter. Keep rest of phyllo dough covered with damp towel. Repeat with 5 more, stacking. Place 1/2 of the apples in 2-inch strip along one long edge, leaving 2 inches at each short end. Sprinkle with combination of sugar, brown sugar, and cinnamon, using half of mixture. Fold in end 2-inches of short sides and roll tightly from long side. Place seam side down on greased 15x10x1 jelly roll pan. Repeat to make a second roll. Brush with butter. Bake 30-35 minutes at 350 degrees. Cool slightly. Loosen from pan; cool in pan on wire rack. Slice.

Using prepared puff pastry makes baking this apple strudel a little easier and quicker than some of the more 'traditional' recipes! You can serve this hot or cold. It's delicious topped with cream!

flour for dusting
1 (17.5 ounce) package frozen puff pastry sheets (2 sheets), thawed
water, as needed
6 small tart apples - peeled, cored, and sliced thinly
1 ½ teaspoons ground cinnamon
1 tablespoon brown sugar
¼ cup toasted slivered almonds
¼ cup butterscotch chips
1 tablespoon butter, melted
½ teaspoon white sugar

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Lightly dust a working surface with flour. Line a baking sheet with parchment paper.
  • On your prepared work surface, join the two sheets of puff pastry by their short edges to make a long rectangle. Brush water along edges and press down gently with fingertips to seal.
  • Mix the apple slices, cinnamon, brown sugar, almonds, and butterscotch chips together in a bowl until evenly combined; spoon the mixture onto one of the long edges of the pastry. Fold one side of pastry over the mixture and roll into a long strudel. Make sure to seal at both ends. Brush pastry with melted butter; make two-inch diagonal slits the length of the strudel with a sharp knife. Transfer to the prepared baking sheet.
  • Bake in the preheated oven for 15 minutes. Sprinkle the sugar over the top of the strudel and return to oven until the pasty is golden brown and flaky, another 15 to 20 minutes.

1-1/2 cups chopped peeled tart apples
2 tablespoons plus 2 teaspoons sugar
2 tablespoons chopped walnuts
1 tablespoon all-purpose flour
1/4 teaspoon ground cinnamon
6 sheets phyllo dough (14 inches x 9 inches)
Butter-flavored cooking spray
Confectioners' sugar, optional

Steps:

  • In a small bowl, combine the apples, sugar, walnuts, flour and cinnamon. Set aside., Place one sheet of phyllo dough on a work surface (keep remaining dough covered with plastic wrap and a damp towel to prevent it from drying out). Spray with butter-flavored spray., Fold in half widthwise; spray again with butter-flavored spray. Spoon a scant 1/3 cup filling onto phyllo about 2 in. from a short side. Fold side and edges over filling and roll up. Place seam side down on a baking sheet coated with cooking spray. Repeat., With a sharp knife, cut diagonal slits in tops of strudels. Spray strudels with butter-flavored spray. Bake at 350° for 20-22 minutes or until golden brown. Sprinkle with confectioners' sugar if desired.

  • Make the filling. In a large skillet heat ghee and extra virgin olive oil. Add the sliced apples, brown sugar, cinnamon, nutmeg, cardamom and orange juice. Cook over medium heat, stirring as needed, for about2 minutes or so (you are not looking to cook the apples all the way, just a little bit to allow some juice to release.) Stir in walnuts and raisins. Remove from heat and set aside briefly.
  • Prepare a large sheet pan lined with parchment paper. Pour the juices from the apple filling in a small bowl and mix with a little more extra virgin olive oil (you'll use this mixture to brush the phyllo sheets).
  • Lay 10 to 12 sheets of phyllo flat on a clean surface (you can cover with a clean towel to keep the phyllo from drying, although this should be a quick process.)
