Nothing says low carb comfort food like this creamy cauliflower casserole with cheese sauce.

1 head cauliflower
1 cup heavy cream
¼ cup cream cheese
1 tablespoon butter
½ teaspoon dry mustard powder
½ teaspoon onion powder
pinch cayenne pepper
¼ cup parmesan cheese
1 ½ cups sharp cheddar cheese (divided)

Steps:

  • Preheat oven to 375°F.
  • Cut cauliflower into bite sized pieces. Boil 4-5 minutes or until tender crisp. Place in a strainer and drain very well.
  • Add heavy cream, cream cheese and butter to a saucepan and stir over medium heat until smooth and cream cheese is melted.
  • Add seasonings, bring to a boil and let boil 2 minutes while whisking.
  • Remove from heat, stir in parmesan and 1 ¼ cups cheddar cheese.
  • Place in a 9x9 baking pan and top with remaining cheddar cheese. Bake 20-25 minutes or until golden.

Creamy, baked & loaded. This cheesy veggie dish is a perfect side dish if you miss the mac and cheese type sides. It's not inteneded to taste like the full carb side dish but it sure does fill the gap in the healthiest way. Feel free to sub broccoli for the cauliflower and make it the exact same way...or not, you're the boss.

16 oz cauliflower (cut into florets - frozen is fine)
⅓ cup heavy whipping cream
⅓ cup unsweetened almond milk (or more heavy cream)
2 oz cream cheese (cut into cubes)
2 tbsp parsley (fresh chopped)
½ tsp garlic powder
¼ tsp paprika (or to taste)
¼ pepper (to taste)
½ tsp chicken bouillon (or ¼ tsp salt)
1 cups shredded cheddar cheese (divided in half)
½ cup shredded mozzarella cheese
¼ cup shredded Parmesan
salt & pepper to taste (TASTE IT before baking.)
1/4 cup Parmesan cheese (grated)
2 slices bacon (* optional diced and cooked crispy)
1 tablespoon melted butter

Steps:

  • Preheat oven to 375˚F. Butter a 9x13 baking dish or 6 individual ramekins and set aside.
  • Steam cauliflower florets in the microwave for 4 minutes or on the stove for 7 minutes and drain to dry.
  • Add cream, cream cheese and all spices to a small sauce pan and set to medium heat. Whisk until the cream cheese is melted and smooth.
  • Add ½ cup shredded cheddar cheese, ¼ shredded Parmesan and ½ cup shredded mozzarella cheese; gently stir until cheeses have completely melted.
  • Add the cauliflower florets into the pot, and using a large wooden spoon, gently mix around until everything is covered in cheese sauce.
  • Transfer cauliflower mixture to previously prepared baking dish or ramekins; sprinkle with the remaining ½ cup of cheddar, along with the Parmesan and melted butter if desired. (added in nutrition).
  • Bake, uncovered, for 18 to 20 minutes, or until hot and bubbly and slightly golden.
  • Remove Cauliflower casserole from oven. Garnish with prepared bacon and additional fresh parsley if desired. Serve

6 cups cauliflower florets
1/2 cup heavy cream
1 cup gouda cheese, shredded
2 oz cheddar cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 tablespoons Anthony's cheddar cheese powder

Steps:

  • Preheat oven to 400°F.
  • Place cauliflower florets in a microwave safe dish and cook in the microwave for 5 minutes.
  • While the cauliflower is cooking, make your cheese sauce by combining the 1/2 of the gouda and cheddar cheese, all of the powdered cheese, cream and spices in a small sauces pan. Whisk until the cheeses are melted.
  • Take the cauliflower out of the microwave and place in a baking dish. Cover with the cheese sauce and mix well to coat. Top with remain cheddar and gouda cheeses and bake for 40 minutes in a 400°F oven.
  • Note you can substitute parmesan cheese for the powdered cheddar cheese.

1 large head cauliflower, chopped
1 ½ cups shredded reduced-fat Cheddar cheese
½ cup bacon bits (such as Hormel®)
½ (8 ounce) package low-fat cream cheese
½ cup low-fat sour cream
¼ cup minced green onions
3 tablespoons butter
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a saucepan of water to a boil. Add cauliflower and cook until tender, but not overly soft, 3 to 5 minutes. Drain well and transfer cauliflower to a large bowl. Mash, using a potato masher, leaving some chunks.
  • Reserve 1/2 cup Cheddar cheese and 1 tablespoon bacon bits. Mix remaining Cheddar cheese, remaining bacon bits, cream cheese, sour cream, green onions, butter, salt, and pepper into the mashed cauliflower in the bowl. 1 head cauliflower, cut into florets
4 tablespoons unsalted butter, cut into cubes
1/2 cup all-purpose flour
2 cups half-and-half, heated
Kosher salt
1/2 teaspoon ground white pepper
1/4 cup grated Parmesan
1 cup grated Gruyere cheese
2 tablespoons chopped flat-leaf parsley

Steps:

  • Preheat the oven to 375 degrees F.
  • Bring a large pot of water to a boil and cook the cauliflower for about 5 minutes. Drain and set aside.
  • In a medium saucepan, melt 2 tablespoons of the butter over low heat. Whisk in the flour until well combined with the butter and it forms a brown paste. Pour in the hot half-and-half and keep whisking until it starts to thicken. Remove from the heat and season with salt and white pepper. Add in the Parmesan and 3/4 cup of the Gruyere. Keep whisking.
  • Spread about 1/2 cup of the mixture on the bottom of an 8-by-8-inch baking dish. Place the cauliflower on top and spoon the rest of the sauce on top. Melt the remaining 2 tablespoons butter in a small saucepan over low heat and stir in the parsley. Drizzle the parsley butter over the cauliflower and sprinkle with the remaining 1/4 cup Gruyere.
  • Bake until the top of the gratin is browned, about 30 minutes. (My advice would be to check halfway through, as ovens vary.) Serve.

  • Cut broccoli into florets and place in a pot. Add water until covered and bring to a boil. Cook until the broccoli is fork tender.
  • When done, strain and discard the water. Add cream cheese, heavy whipping cream, salt, pepper and garlic powder.
  • Puree with an immersion blender until smooth.
  • Grease a 9" baking dish with butter and place what's left on the bottom of the dish.
  • Cut the cauliflower into small florets and add to the baking dish.
