3 Minute Skinny Caesar Dressing image

A fast and fresh Caesar Dressing made with greek yogurt.

Number Of Ingredients 10

2 tablespoons olive oil
1 cup plain greek yogurt (I use fat free)
1/3 cup fresh lemon juice (about 2 lemons)
2 tablespoons dijon mustard
1 clove garlic
2 tablespoons anchovy paste
1 teaspoon worcestershire sauce
1/3 cup grated parmesan cheese
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper

Steps:

  • Add all ingredients to blender or food processor.
  • Blend for about 10 seconds until smooth. Taste for seasoning. More salt, pepper, anchovy paste?
  • Store in glass or plastic container.
  • Chill for 30 minutes before serving.

Adapted from Jamie Oliver, this is more like a green goddess dressing and is utterly delicious.

Number Of Ingredients 10

110ml yoghurt
1 Tbsp red wine vinegar
6 anchovy fillets
1Tbsp Worcestershire sauce
2 Tbsp basil pesto (if you don't have fresh basil)
1t Dijon Mustard
1Tbsp lemon juice
40g Parmesan cheese(or pecorino)
3 Tbsp olive oil
salt and pepper to taste

Steps:

  • Place all the above ingredients into a food processor or liquidizer and whiz it up until it is well combined.
  • Store in a sealed container in the fridge and as use as required.

3 cloves garlic, minced
1/3 cup plain fat-free yogurt
1/4 cup low-fat mayonnaise
1 teaspoon Dijon mustard
1 teaspoon anchovy paste (or a tad more)
1 tablespoon red wine vinegar
1/2 teaspoon Worcestershire sauce
2 tablespoons parmesan cheese, grated
1/2 teaspoon fresh grated black pepper

Steps:

  • Put all the ingredient in your food processor and blend until well mixed (do it by hand with a whisk if you wish).
  • Chill before serving and use wiithin one day.

3 -5 garlic cloves
1 cup fat-free mayonnaise or 1 cup light mayonnaise
1 tablespoon fresh lemon juice
ground pepper
1/4 cup parmesan cheese
1/8 cup milk
anchovy paste
1/8 cup salad dressing, we use ranch, gives it a nice taste (optional)

Steps:

  • Mix all ingredients.
  • Make it the night before if possible, minimum 1 hour to get it nice and tasty.
