My grandma's recipe for Easy Zucchini Cookies is one of my most treasured recipes. These cookies have the perfect texture!

2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 tsp salt
1/2 cup butter (softened)
1 cup granulated sugar
1 egg beaten
1 cup zucchini (grated)
1 cup golden raisins
1 cup pecans (chopped)
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Grease baking sheets or line with parchment paper
  • Combine flour, baking soda, cinnamon and salt in a medium bowl.
  • In a large bowl, beat butter and sugar with a mixer on medium speed until light and fluffy. Add egg and beat well.
  • Gradually add flour mixer and beat until smooth. The dough will be stiff.
  • Stir in zucchini and remaining ingredients.
  • Drop by heaping teaspoonfuls, 2 inches apart onto baking sheets.
  • Bake 13-15 minutes or until lightly browned. Be careful not to over-bake.
  • Cool for 2 minutes then remove to cooling racks.

½ cup margarine, softened
1 cup white sugar
1 egg
1 cup grated zucchini
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 cup raisins

Steps:

  • In a medium bowl, cream together the margarine and sugar until smooth. Beat in the egg then stir in the zucchini. Combine the flour, baking soda, salt and cinnamon; stir into the zucchini mixture. Mix in raisins. Cover dough and chill for at least 1 hour or overnight.
  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets. Drop dough by teaspoonfuls onto the prepared cookie sheet. Cookies should be about 2 inches apart.
  • Bake for 8 to 10 minutes in the preheated oven until set. Allow cookies to cool slightly on the cookie sheets before removing to wire racks to cool completely.

3/4 cup white whole wheat flour
1 cup old fashioned oats
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup mashed ripe banana
1 cup shredded zucchini ((squeezed of excess moisture with a paper towel))
2 Tablespoons honey
1/4 cup coconut oil ((melted and cooled))
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F.
  • Line a baking sheet with parchment paper or silicone liner.
  • In a large bowl whisk together flour, oats, baking soda, cinnamon and salt; set aside.
  • In a separate large bowl, mix together mashed banana, shredded zucchini, honey, coconut oil and vanilla extract until well combined.
  • Add wet ingredients to dry ingredients and mix until just combined.
  • Fold in chocolate chips. The dough will be a little sticky.
  • Drop large spoonfuls on prepared baking sheet and slightly flatten each cookie with the palm of your hand or back of a spoon.
  • Bake for 13-16 minutes or until cookies start to turn golden brown on the edges.
  • Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
