Make your own savory homemade low sodium Italian sausage and enjoy your sausage patty and eggs for breakfast again. Lowered fat too!

1 lb lean ground pork
1 tbsp olive oil
2 tbsp red wine vinegar
1/2 tsp fennel seed (ground)
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp ground black pepper
1/2 tsp red pepper flakes (add more if you like spicy)
1/2 tsp oregano
1/2 tsp ground sage
1/2 tsp dried basil
1/2 tsp dried thyme
1/8 teaspoon mace
1-2 slices dried or toasted no salt added bread (optional)
1 egg beaten (optional)

Steps:

  • Crush the "leafy" basil, sage, oregano, pepper flakes and fennel seed in a spice grinder or mortar and pestle until ground or they are lightly powdered.
  • Mix the ground spice in with all the other spices in a small bowl and whisk well to remove any clumps.
  • Sprinkle the spice mixture and remaining ingredients over the ground meat and knead well until the spices are evenly distributed throughout the meat.
  • Refrigerate overnight to let the spice flavors infuse into the meat. If you try to cook the meat immediately, it will have very little flavor as the spices need time to develop.
  • You can also add an (1) egg and (1) slice dried breadcrumbs to bulk up regular sausage patties.
  • Form into patties, links or crumbles
  • Cook over medium heat to an internal temperature of 160°F or until outside surface is light to medium brown. About 8 to 9 minutes total and there is no pink remaining. Since it is lean do not overcook or the meat will turn out very dry. Usually fat gives it a "moistness" that helps carry the flavor.

1 egg (beaten)
1 tsp dried sage
1 tsp dried thyme
1/2 tsp fennel seed
1 dash red pepper flakes
1/4 tsp black pepper
1/4 tsp salt
2 tsp brown sugar

Steps:

  • Combine all ingredients in a bowl.
  • Using your hands, mash all together until very well mixed.
  • Using a heaping tablespoon, form 12 patties. The mixture will be fairly wet, but will come together with some love!
  • Heat a nonstick skillet over medium high heat. Cook patties 4-5 minutes per side.

1 tablespoon raw sugar
¼ teaspoon sea salt
1 tablespoon garlic powder
1 teaspoon dried oregano
2 teaspoons black pepper
2 teaspoons paprika
1 ½ teaspoons fennel seed
½ teaspoon anise seed
½ teaspoon dried parsley flakes
½ teaspoon red pepper flakes
½ teaspoon cayenne pepper
¼ teaspoon dried minced onion
⅛ teaspoon coriander seed, coarsely cracked
⅛ teaspoon ground mace
2 pounds extra-lean ground turkey breast
1 pound lean ground pork

Steps:

  • Pour the chilled red wine into a large bowl. Whisk in the sugar and salt until dissolved. Sprinkle in the garlic powder, oregano, black pepper, paprika, fennel seed, anise seed, parsley flakes, red pepper flakes, cayenne pepper, minced onion, coriander seed, and mace. Mix in the turkey breast and pork with your hands. Mix thoroughly so the seasonings are evenly distributed in the meat mixture.
  • Line two or three baking sheets with plastic wrap. Roll the meat mixture into 1/4 cup balls, flatten to 1/2 inch thick, and place in a single layer on the baking sheet. Cover with another layer of plastic, and freeze until solid. Once solid, place patties into a resealable plastic bag to store.
