cooking spray
1 small head of cabbage, cored and cut into wedges (about 2 1/2 lbs)
1 medium onion, halved and thinly sliced
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 cup chicken broth
1 tablespoon brown mustard
1 lb kielbasa, cut into 3-inch pieces

Steps:

  • Coat the slow cooker crock with cooking spray. Add all the ingredients except the kielbasa to the crock, tossing so that the cabbage is well-coated with the broth and seasonings. Top mixture with kielbasa.
  • Cover and cook on LOW for 7 hours; give mixture a good stir, then cook 1 hour more.

1kg red cabbage
2 white onions , chopped
4 Granny Smiths apples , peeled, cored and chopped
zest 1 orange or 2 clementines
2 tsp ground mixed spice
100g light brown soft sugar
3 tbsp cider vinegar
200ml dry cider
25g butter

Steps:

  • Heat your slow cooker to Low. Peel the outer leaves from the cabbage and discard. Quarter the cabbage, removing the tough stem, then thinly slice. Arrange a layer of the cabbage on the bottom of your slow cooker, then top with some of the onions, apples, zest, mixed spice, sugar and some seasoning. Continue to create layers until you have used up these ingredients. Season.
  • Pour over the vinegar and cider and dot the butter on top. Cover with a lid and cook for 4-5 hrs until tender. Will keep in the fridge, covered, for up to three days or in the freezer for up to two months. Reheat in a pan or in the microwave.

1 tablespoon sugar
1/2 teaspoon salt
1/8 teaspoon white pepper
2 tablespoons water

Steps:

  • Spray a 3- to 4-quart slow cooker with nonstick cooking spray.
  • Combine cabbage, red onion, and garlic in the prepared slow cooker.
  • In a small bowl, combine vinegar, sugar, salt, white pepper, and water. Stir well to dissolve the sugar and salt.
  • Pour over the cabbage in the slow cooker.
  • Cover and cook on low, stirring twice during cooking time, for 6 to 8 hours until cabbage is tender. Serve immediately.

I love red cabbage hot, and I like it even better cold. As a low carb lifer, I'm always looking for ways to revise recipes and reduce the refined carbs in foods. Thanks to many of you who have posted recipes, my repertoire has increased. This is a variation of some of the recipes I've seen on this site. And as a part-time nurse and grad student, I need things that can cook while I'm at school or work. This is easy and for flavoring, the pickling spice does the trick.

1 head red cabbage
2 apples
1 large bermuda onion
4 garlic cloves
1/2 cup Splenda granular, sugar substitute
1/4 cup balsamic vinegar
1/3 cup red wine vinegar
salt and pepper
1 teaspoon pickling spices
1 tablespoon bacon drippings

Steps:

  • Slice the cabbage in thin strips.
  • Slice the onion in this strips.
  • Chop the apples.
  • Chop the garlic.
  • Whirl the pickling spice in the spice grinder or with a mortar and pestle.
  • Put all the ingredients in the crock pot, cover and cook on high for -6 hours, low for 7-8.
  • If I'm home, I do give this a stir. Probably has something to do with poor impulse control.

In addition to adapting the recipe for the crockpot, I added an apple and a bay leaf, used lemon juice instead of vinegar, and added 1 1/2 cups chicken stock.

1 medium red cabbage, halved and cored
1 apple, peeled, cored, and chopped
2 tablespoons butter
1 onion, sliced
1 tablespoon granulated sugar
1 tablespoon fresh lemon juice
1/2 cup red wine
1 1/2 cups chicken broth
1 bay leaf
salt, to taste
black pepper, to taste

Steps:

  • Shred the cabbage and slice the onion.
  • Heat the butter in a large saute pan and saute the onions until soft. Add the sugar and continue to cook the onions until they are nicely brown and carmelized.
  • Place the cabbage and chopped apple in a crockpot. Add the carmelized onion, fresh lemon juice, red wine, chicken broth, bay leaf, salt and pepper to taste.
  • Cover the crockpot and cook on high for 4 - 5 hours until the cabbage is tender.

1/4 teaspoon cinnamon
1/4 teaspoon thyme
1/4 teaspoon caraway seed
salt and pepper
2 tablespoons brown sugar
2 cups wine, plus a little more
2 tablespoons wine vinegar

Steps:

  • Cook cabbage in the butter, while covered, for 5 minutes.
  • Place into a crock pot.
  • Add sliced onions and apples.
  • Add everything else.
