Fried lumpia is a delicious appetizer or snack. Golden, crunchy, and loaded with bean sprouts, green beans, carrots, diced pork, and shrimp, these Filipino vegetable spring rolls are seriously addictive!

Number Of Ingredients 12

canola oil
1 onion, peeled and chopped
2 cloves garlic, peeled and minced
1/2 pound pork belly or butt, diced
1 tablespoon fish sauce
1/2 cup water
1/2 pound shrimps, peeled, deveined, and chopped
1 large carrot, peeled and julienned
1 cup green beans, stemmed and cut thinly on a bias
4 cups bean sprouts
salt and pepper to taste
12 pieces spring roll wrappers

Steps:

  • In a skillet over medium heat, heat about 1 tablespoon oil. Add onions and garlic and cook until limp.
  • Add diced pork and cook until lightly browned.
  • Add fish sauce and cook for about 1 minute.
  • Add water and bring to boil. Lower heat, cover, and simmer for about 7 to 10 minutes or until pork is tender and liquid is absorbed.
  • Add shrimps and cook, stirring occasionally, just until color changes to pink.
  • Add carrots and green beans. Cook, stirring regularly, for about 2 to 3 minutes or until vegetables are halfway done.
  • Add beans sprouts and cook, gently tossing to combine, for about 30 to 40 seconds or just until heated through. Season with salt and pepper to taste.
  • Immediately remove the vegetable mixture from heat and drain in a colander. Cover with film and refrigerate for a few minutes to completely cool.
  • Separate wrappers into individual sheets. On a flat working surface, lay wrapper like a diamond.
  • Spoon about 2 tablespoons of the vegetable mixture on the middle of the wrapper.
  • Fold the bottom pointed end of the wrapper over the filling. Fold side ends of the sheet inward and roll tightly into a log. Wet the pointed edge of the wrapper with a dab of water to completely seal. Repeat with the remaining vegetable mixture.
  • In a skillet over medium heat, heat about 2 inches deep of oil to 350 F. Add spring rolls seam side down and fry, turning once or twice, for about 2 to 3 minutes on each side or until golden brown and crispy.
  • Remove from pan and drain on a wire rack. Serve immediately with spiced vinegar dip.

  • Prepare one piece of lumpia wrapper, lay it with one edge pointing to your direction, place three tablespoons of the vegetable mix in the bottom part of the wrapper near the edge. Now start rolling and when it reaches third of the way fold the left and right edges to keep the contents from going outside the sides. Continue to roll until the top edge, dampen the top edge to seal.
  • Deep fry immediately, do not set aside as the liquid content might make the wrapper soggy. Now continue with the remaining ingredients and make sure once you finish wrapping one cook it immediately.

  • Saute garlic and onion over medium heat until translucent. Add the prawns and cook until it turns pink.
  • Add the green beans and carrots and cook for 3-4 minutes then add the mung bean sprouts and season with fish sauce and pepper then cook for another minute.
  • On a clean surface, lay a spring roll wrapper diagonally. Scoop about 2 spoonfuls of the vegetable mix and place it the corner of the wrapper nearest you. Spread the filling sideways (about 3 inches long), leaving some space at both ends. Roll the wrapper from the end nearest you over the filling then fold in the left and right sides of the wrapper towards the center, then keep on rolling towards the other end as neatly and tightly as possible. Moisten the other side of the wrapper with cornstarch mixture to keep it from opening while frying. Repeat with remaining wrappers.

  • In a wok over medium heat, heat oil. Add and then sauté onion and garlic until fragrant. Add carrots, followed shortly by singkamas, green beans, cabbage, and finally togue. Toss in dried alamang. Season with salt and ground black pepper. Mix well. Remove from the heat and set aside to cool completely.
  • Separate lumpia wrappers; keep covered with a damp cloth. Lay one wrapper on a cutting board. Place about 1 heaping tablespoonful of the togue filling in its center. Wet the edges with water or egg wash before rolling. Repeat with the remaining filling and wrappers. Fry immediately or either chill or freeze until ready to cook.
  • Heat enough oil in a deep pan for pan frying. Fry lumpia until browned on all sides. Drain on paper towels. Serve with soy sauce-garlic dipping sauce.
