This summer, enjoy a vodka Martini with a real twist - lychee. The exotic sweetness of the fruit brightens the citrus flavors in this truly refreshing drink.

Ingredients

1/4 cup sugar
1/4 cup water
1 cup drained canned lychees (15 to 20, from a 16- to 20-oz can)
2 tablespoons fresh lemon juice
6 oz (3/4 cup) vodka (preferably Skyy)
1 1/2 oz (3 tablespoons) Cointreau or other orange-flavored liqueur
Special Equipment
a cocktail shaker

Steps:

Heat sugar and water in a 1-quart saucepan over high heat, stirring, until sugar is dissolved, then pour into a heatproof bowl set in a large bowl of ice and cold water. Let stand, stirring occasionally, until syrup is cold, about 3 minutes.
Purée lychees with sugar syrup and lemon juice in a blender until smooth, then force through a fine-mesh sieve into a bowl, pressing hard on solids and then discarding them. Fill cocktail shaker halfway with ice cubes and add lychee purée, vodka, and Cointreau. Shake 15 seconds and strain into Martini glasses.

125 ml premium vodka (1/2 bottle)
8 ounces canned lychees (around 12)
125 ml lychee juice (1/2 bottle)

Steps:

Put fruit inside an empty vodka (or other type) bottle.
Fill 1/2 the bottle with vodka.
Fill the rest with lychee juice.
Let it sit at room temperature for about 2 weeks, for the infusion. Serve chilled in shot glasses.
Good for 4 - 12 people depending on the size of the shots.

Ingredients

3 x cans lychees in syrup
50g caster sugar
egg white
zest from 2 limes , juice from 1

Steps:

Drain the syrup from two cans of lychees into a small pan. Add the sugar and dissolve over a gentle heat. Bring to the boil for 1 min.
Blitz the drained lychees in a food processor until very finely chopped. Pour in the lime juice and syrup with the blade still whirring - don't worry if the mix isn't perfectly smooth at this point. Tip into a 1-litre container and freeze for at least 6 hrs until solid.
Break up the frozen mix, then return to the bowl of the processor. Tip in the egg white and whizz until thick, pale and smooth. Add zest from 1 lime. Return to the container and freeze again, ideally overnight. Serve in scoops with remaining lychees scattered with a remaining zest.
