MACAROON APPLE PIE
I found this recipe in a rural newspaper years ago. It's become one of my favorite recipes. I like to serve it warm with vanilla ice cream.

- In a large bowl, combine flour and salt; cut in shortening until crumbly. Gradually add cold water, tossing with a fork until a ball forms. , Roll out pastry to fit a 9-in. pie plate; flute edges. Toss apples with sugar and cinnamon; pour into crust. Bake at 375° for 20 minutes. , Meanwhile, in a small bowl, combine the first four topping ingredients. Stir in the egg, butter and vanilla until smooth. Add coconut. Spoon over hot apples, carefully spreading to cover. Bake 30 minutes longer or until apples are tender.

- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl mix together flour, salt, and cinnamon. Add apples and lemon juice. Toss until apples are thoroughly coated. Allow to sit for 10 minutes.
- Pour apples into pastry-lined pie plate. Dot with butter or margarine. Cover with top pastry. Seal edges and cut steam vents in top pastry.
- Bake in preheated oven for 35 to 45 minutes, until crust is golden brown.

- Preheat oven to 425 degrees F (220 degrees C).
- In a bowl combine apples, sugar, flour, cinnamon, nutmeg and salt. Place mixture in a pastry-lined 9 inch pie plate. Dot with butter and adjust top crust that has been vented.
- Place in oven and bake at 425 degrees F (220 degrees C) for 10 minutes. Turn oven temperature down to 275-300 degrees F (135-150 degrees C) and bake 40-50 minutes or until crust is golden brown and apples are tender. Let cool and serve.

Steps:
- In a medium-sized bowl, add the flour and salt. Mix with fork until combined.
- Add in cubed butter and break up into flour with a fork. Mixture will still have lumps about the size of small peas.
- Gradually add the ice water and continue to mix until the dough starts to come together. You may not need all of the water, but if the dough is too dry then add more. The dough should not be very tacky or sticky.
- Work the dough together with your hands and turn out onto a surface. Work into a ball and cover with cling wrap. Refrigerate.
- Peel the apples, then core and slice.
- In a bowl, add the sliced apples, sugar, flour, salt, cinnamon, nutmeg, and juice from the lemon.
- Mix until combined and all apples are coated. Refrigerate.
- Preheat the oven to 375°F (200°C).
- On a floured surface, cut the pie dough in half and roll out both halves until round and about ⅛-inch (3 mm) thick.
- Roll the dough around the rolling pin and unroll onto a pie dish making sure the dough reaches all edges. Trim extra if necessary.
- Pour in apple filling mixture and pat down.
- Roll the other half of the dough on top.
- Trim the extra dough from the edges and pinch the edges to create a crimp. Make sure edges are sealed together.
- Brush the pie with the beaten egg and sprinkle with the sugar.
- Cut four slits in the top of the pie to create a vent.
- Bake pie for 50-60 minutes or until the crust is golden brown and no greyish or undercooked pastry remains.
- Allow to cool completely before slicing.
- Top with ice cream and serve.

- Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. cast-iron skillet or deep-dish pie plate. MACAROON TOP APPLE PIE RECIPE

- Add 1-1/2 cups all-purpose flour and ½ tsp salt to a large mixing bowl, and stir the contents of the bowl until the ingredients are thoroughly mixed.
- Slowly cut in ½ cup shortening until mixture in the bowl becomes crumbly. Add 2 to 3 tbsp cold water gradually and simultaneously toss the mixture with a fork until it assumes the shape of a ball.
- Preheat an oven at 375 degrees Fahrenheit.
- As the oven preheats, transfer the contents of the mixing bowl onto a flat surface and roll with a rolling pin until the pastry formed is big enough to fit a 9-in. pie plate; flute edges.
- Mix 4 cups tart apples (sliced and peeled) and ¼ tsp ground cinnamon and pour the mixture into the crust. Bake in the preheated oven for about 20 minutes.
- Add ¼ tsp salt to a small mixing bowl. Mix the ingredients and then add 1 egg, 2 tbsp melted butter and ½ teaspoon vanilla extract; simultaneously stirring contents of the small mixing bowl.
- Add in the last ingredient i.e. ¼ cup flaked coconut and carefully spoon mixture in the small mixing bowl over hot apples.
- Your aim should be to cover the entire surface properly.
- To complete the recipe, bake for another 30 minutes and check if the apples are tender. Keep on baking till that happens.
- After the pie is made, let it cool on the rack for 15 minutes.
- After then allow it to reach room temperature. Do not eat it hot, as the fillings can burn your mouth.

MY GRANDMOTHER'S APPLE MACAROON
A apple cinnamon & pecan filling covered by a crispy crust. This is a farovite of mine that I found in my grandmothers recipe book. When I say recipe book I don't mean a store bought one. This was written in her own hand. I do hope you enjoy as much as I do.

- Peel, core & thinly slice the apples. Place in a pie pan or baking pan. (I spray my pan with oil spray before filling however it may not be necessary.)

APPLE MACAROON PIE

- Preheat oven to 400. Rub a little egg white or milk on bottom of crust to prevent it from being soggy.
- Place apple slices in bottom of pie shell. Combine the flour, sugar & salt then sprinkle over apples. Dot with the tablespoon of butter and bake on 400 for 20 minutes.
- TOPPING: While pie is baking, prepare topping by combining the sugar, melted butter, coconut, egg and milk. Remove pie from oven and reduce temperature to 350.
- Spread topping on hot pie and return to oven. Bake @ 350 an additional 30 minutes or until pie is done.
