Mackerel is a sustainable, velvety, sweet-tasting fish that deserves more attention than it usually gets. Here, the pale fillets are roasted on a bed of fragrant basil leaves with a lemon zest-infused olive oil, chopped olives and juicy cherry tomatoes. If you have a bottle of cold-pressed lemon olive oil on hand, you can use it here in place of making your own. If infusing your own oil, feel free to use either a regular lemon or a Meyer lemon. Leftover lemon oil is great on salads, tossed with vegetables, or drizzled over avocado toast.

1/3 cup extra-virgin olive oil
Finely grated zest of 1 large lemon (save naked lemon for garnish)
6 to 8 large basil leaves, plus more for garnish
1 1/2 pounds Atlantic mackerel fillets, or use cod or black sea bass (tautog) if unavailable
Fine sea salt and black pepper, to taste
1 to 2 tablespoons lemon olive oil, more as needed
3/4 cup olives, preferably a mix of green and black, pitted and halved, or chopped
1 cup halved or quartered cherry tomatoes

Steps:

  • Make the oil: In a small saucepan over medium heat, warm the olive oil and lemon zest until you see the first tiny bubble appear on the side of the pan. Immediately turn off heat. You don't want the mixture to simmer.
  • Let infuse for at least 20 minutes (and preferably an hour) before using; you do not have to strain it. Oil can be made up to a month in advance. Store in a sealed jar at room temperature.
  • When ready to prepare the fish, heat oven to 425 degrees. Place the basil leaves on a rimmed baking dish and arrange fish on top. Sprinkle fish with salt and pepper, then drizzle the lemon oil over the fillets. Top with olives. Scatter tomatoes around the pan.
  • Roast until the fish is just cooked through, 5 to 7 minutes for thin fillets and up to 12 minutes for thick fillets.
  • Cut naked lemon into wedges. Serve fish drizzled with more lemon oil, garnished with lemon wedges and torn basil leaves.

4 tablespoons extra-virgin olive oil
3 cloves garlic, smashed
2 medium fennel bulbs, halved, and thinly sliced
1 small red onion, thinly sliced
1 sprig fresh thyme
1 sprig fresh rosemary
2 strips lemon peel (about 2 1/2 inches long)
2 strips orange peel (about 2 1/2 inches long)
Pinch red pepper flakes
1/3 cup black olives, such as Nicoise
1/3 cup roughly chopped oil packed sun-dried tomatoes
Kosher salt and freshly ground black pepper
4 (6-ounce) mackerel fillets, with skin

Steps:

  • Heat 2 tablespoons of the olive oil over medium heat in a large nonstick skillet with the garlic until fragrant, about 1 minute. Stir in the fennel and onions and cook until brown and tender, about 8 to 10 minutes. Add the thyme, rosemary, lemon and orange peel, pepper flakes, olives, and tomatoes. Season with salt and pepper and cook until herbs and zest are fragrant, about 3 minutes more. Transfer vegetables to a serving platter and cover with foil to keep warm.
  • Wipe out the skillet.
  • Make 1-inch diagonal slashes into the fishes' skin to prevent the mackerel from curling while cooking. Add the remaining olive oil to the skillet over high heat and season the mackerel with salt and pepper. Place fish skin side down in the skillet and cook undisturbed until crisp brown and a spatula can easily be slipped under the fish to flip, about 2 to 3 minutes. Turn the fish over and cook another 2 minutes, until just firm. Set on top of the fennel mixture and serve.

3 tbsp olive oil , plus extra for drizzling
1 bunch spring onion , sliced
1 large garlic clove , crushed
zest 1 lemon and squeeze of juice
2 x 400g can chickpeas , drained and rinsed
150ml vegetable stock
85g SunBlush tomato , halved
4 mackerel fillets, skin on
1 large bunch basil

Steps:

  • Heat 2 tbsp oil in a large, shallow pan. Add the spring onions, garlic and lemon zest, then cook for 2 mins until the onions are tender but still very green. Add the chickpeas, then stir until well coated in the onion mixture. Lightly crush with a potato masher, then add the stock and tomatoes. Simmer for 3-4 mins or until the liquid is absorbed, then set aside to cool slightly.
  • Meanwhile, heat the remaining oil in a large, non-stick frying pan over a medium heat. Season the mackerel fillets on both sides and fry for 3 mins each side, starting on the skin side. You'll probably need to cook these in two batches.
  • Add the basil and a squeeze of lemon juice to the chickpeas, then season to taste. To serve, spoon the warm chickpeas onto serving plates, drizzle with a little extra olive oil and top with the mackerel fillets.

120 g unsalted butter, softened at room temperature
20 g capers, drained
20 g almonds, shelled
15 ml fresh lemon juice
5 g fresh parsley, chopped
60 g eggplants, sliced
60 g zucchini, sliced
60 g red bell peppers, cut into squares
60 g green bell peppers, cut into squares
3 pieces garlic cloves, finely chopped
80 g onions, finely chopped
20 g mushrooms, washed and chopped
30 ml olive oil
100 g tomatoes, peeled
5 g fresh basil, chopped
5 g fresh oregano, chopped
480 g spanish mackerel, filleted
30 ml olive oil
1/4 lemon, juice of
salt

Steps:

  • In a small sauté pan, dry roast the almonds over low heat for about 3-5 minutes until golden, then remove from heat and let cool.
  • Pulse the almonds to a smaller uniform size, almost like coarse sand, in a food processor.
  • Place softened butter in a bowl, and whip until pale.
  • Chop up the capers to a fine mince and add to the bowl with almonds, fresh parsley and lemon juice.
  • Stir with a spatula or spoon to mix thoroughly. Season to taste.
  • Roll out a sheet of cling wrap on a flat surface.
  • Spoon out some of the butter mixture in a long line. Cover with cling wrap and gently roll into a log about an inch and a half in diameter.
  • Secure the ends by tying in a not. Refrigerate for about an hour until firm.
  • In a colander, place eggplant slices and toss with salt, about a tablespoon. Let stand for 30 minutes to draw out all the liquids. Drain.
  • In a sauté pan, drizzle some olive oil and heat over a medium flame.
  • Pan fry the vegetables until evenly toasted on all sides, about 3-5 minutes. let drain over kitchen towels.
  • In a sauce pan, add onions and garlic and toss until tender, about 3-5 minutes.
  • Add peeled tomatoes and bring to a boil. Lower heat and let simmer for 30-45 minutes stirring occassionally. This slowly brings out the fruit sugars.
  • Add the fresh herbs when the tomatoes have reduced by half. Season to taste.
  • Ladle the sauce in a small baking pan. Spread evenly.
  • Now layer the vegetables in rows.
  • Cover with parchment or wax paper and bake in oven 200C for 10-15 minutes.
  • Place fillet in a bowl. Drizzle with olive oil and lemon juice. Then season with salt and pepper.
  • Heat sauté pan over medium heat. Add a little olive oil.
  • Lay fish one side and lower heat. Sear each side for one minute. Fish cooks easily, so keep an eye on how long it is over the fire. A protein food, it tends to get tough the longer it stays over heat.
  • Lay the ratatouille neatly in the center of the plate. Add a bit of the tomato sauce.
  • Place the seared Tanigue on top of the ratatouille.
  • Top with a slice of almond caper butter. You can garnish it with a chive.

Mackerel is a wonderful fish to buy when it is in season. It is inexpensive and intensely flavored, and when it is preserved in oil this way, you can keep it as long as a month; you'll have in your fridge a delicious treasure to draw on for a quick appetizer or lunch dish. The most common size is 11 to 12 inches, and the filleting and boning of these small fish can be quite a job. So, unless you are feeling ambitious, get your fishmonger to do the work.

Number Of Ingredients 5

8 mackerel fillets (from 3 pounds whole mackerel)
Juice of 2 lemons, or more depending on size (about 1/2 cup)
1 teaspoon black peppercorns
1 1/2 teaspoons salt
1 1/2 to 2 cups extra-virgin olive oil

Steps:

  • Lay the mackerel in a single layer in an 11- or 12-inch skillet, preferably stainless steel. The pan should be just big enough so that the fish fillets, nestled side by side, cover the bottom. Pour 2 cups or more water and the lemon juice over the fillets to cover them, and sprinkle half the peppercorns and 1 teaspoon of the salt over.
  • Set the pan over medium heat, and bring to a slow rolling boil. Turn down the heat, and simmer gently for 15 minutes.
  • Prop up a large wooden or plastic cutting board at a moderate angle, tipping toward the sink. When the fillets are done (to check: the point of a knife should slip through the center easily), remove them carefully from the pan with a slotted spatula and lay them on the board. Let them drain and cool completely.
  • Select a shallow glass or ceramic dish that will just hold the fillets in one layer, or you can use a smaller, slightly deeper dish that will accommodate two layers of fillets. Arrange the mackerel in whichever dish, sprinkle each layer lightly with salt and the remaining peppercorns, and pour in enough of the olive oil to cover the fillets.
  • If you are using the mackerel the same day, let it marinate for 2 to 3 hours at room temperature. Otherwise, cover securely with plastic wrap and store for up to a month in the refrigerator. Bring back to room temperature 2 hours before serving.

GRILLED WHOLE MACKEREL WITH LEMON, OREGANO, AND OLIVES

1 1/2 tablespoons fresh lemon juice
1/3 cup extra-virgin olive oil
1/4 cup pitted Kalamata olives (1 1/4 oz), cut into slivers
3 tablespoons finely chopped fresh oregano plus 6 large sprigs
1 (3 1/4- to 3 1/2-lb) cleaned whole Spanish mackerel or bluefish (with head and tail)
2 tablespoons vegetable oil
6 (1/4-inch-thick) lemon slices
Special Equipment
a 22-inch grill; kitchen string

Steps:

  • Whisk together zest, lemon juice, and salt and pepper to taste, then add olive oil in a stream, whisking until combined well. Whisk in olives and chopped oregano.
  • Make 1-inch-long slits at 2-inch intervals down middle of fish on both sides with a sharp paring knife, then brush fish all over with vegetable oil and season with salt and pepper. Season fish cavity with salt and pepper, then evenly distribute 3 lemon rounds and 3 oregano sprigs in cavity. Close cavity, then evenly arrange remaining 3 lemon rounds and 3 oregano sprigs on top of fish and tie fish closed with string at 2-inch intervals, securing lemon slices and oregano sprigs to fish.
  • Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 3 to 4 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then reduce heat to moderate.
  • Grill fish on lightly oiled grill rack, covered only if using gas grill, 15 minutes. Turn fish over using a metal spatula and tongs, then grill until just cooked through, about 15 minutes more.
  • Transfer fish to a large platter using 2 metal spatulas, then cut and discard string. Serve fish with sauce.

8 boneless mackerel fillets, about 1 1/2 pounds
Salt and freshly ground pepper to taste
4 tablespoons olive oil
3 tablespoons chopped fresh thyme or 1 teaspoon dried
4 ripe plum tomatoes, about 1/2 pound
1/2 cup chopped onion
1 tablespoon finely chopped garlic
1/2 teaspoon turmeric
1/2 cup drained capers
1 tablespoon lemon juice
1/2 teaspoon grated lemon rind
Pinch cayenne pepper
4 tablespoons chopped parsley

Steps:

  • Preheat the broiler to high.
  • Place the mackerel fillets on a flat dish and sprinkle them with salt and pepper. Brush the fillets with 2 tablespoons of the olive oil and sprinkle the thyme evenly over the fillets. Set aside.
  • Place the tomatoes in boiling water for about 10 seconds. Drain and pull away the skin. Cut away the core and discard. Cut the tomatoes crosswise and then cut into small cubes. Set aside.
  • Heat the remaining oil in a saucepan over medium-high heat. Add the onion and cook, stirring, until wilted. Add the garlic, turmeric, capers, lemon juice and rind, tomatoes, cayenne, salt and pepper. Cook, stirring, 3 minutes. Set aside and keep warm.
  • Place the mackerel fillets skin side up under the broiler and cook about 3 minutes. Carefully flip the fillets and cook another 3 to 4 minutes until the fish is cooked through.
  • Transfer the fillets to a warm serving plate and spoon equal portions of the tomato-caper sauce over them. Sprinkle with parsley and serve immediately.
