Brazilian Manioc/Cassava Cake Recipe - (4.6/5) image

3 1/2 cups sugar
3/4 cup water
700 g/1 pound (~2cups) of peeled, shredded cassava
1 1/2 cups butter/margarine
1 1/4 cups shredded fresh coconut
3/4 cup coconut milk
8 egg yolks
Pinch of salt

Steps:

  • Preheat your oven to 390ºF/200ºC Mix the sugar and water in a pan and place over medium heat until it forms a thick syrup, don't mix! When its done, add the butter/margarine and let it cool down for a while. Pass the egg yolks through a sieve (to get that thin casing out) and mix the cassava, coconut milk, shredded fresh coconut and the pinch of salt. When your syrup reaches room temperature, mix it with the egg yolk mixture. To bake, smear some butter all over the inside of your cake mold and completely cover with some sugar. Pour in the cake batter in the mold and place it inside of a half filled baking tray with water. Bake 1 hour and 30 minutes.

"Cassava" is a dessert from Guam. Traditionally served at barbecues these chewy tapioca and coconut bars are sure to be a hit anytime. Cassava is what the root of the yucca plant is called and tapioca is derived from it. It is also the main ingredient in "cassava," the dessert. This is a recipe given to me by Michelle Camacho during my stay on the island.

2 (1 lb) packages of grated cassava, thawed (avail.at Asian markets in freezer)
1 (13 ounce) can coconut milk
1 (12 ounce) jar of gelatinous mutant coconut, rinsed (AKA MACAPUNO)
2 eggs
0.5 (14 ounce) can sweetened condensed milk
1/2 cup sugar (optional)

Steps:

  • Preheat oven to 350°F.
  • Combine all ingredients in a mixing bowl and place in a 9X13 casserole dish.
  • Bake at 350°F for 20-30 minutes until toothpick comes out "clean" or golden around edges.
  • Cool or chill.
  • Cut into bars and eat.
  • Cassava is typically served chilled or room temperature but I start eating it as soon as it has cooled down enough. Delicious with coffee in the morning.

  • Cut the cassava roots into 2 to 3 pieces across. Make a slit in the skin all the way to the pink layer that is underneath the outer layer. Slide the knife under the pink layer and pull as you continue to slide the knife. The skin should come off fairly easily. Make sure both the outer layer and pink layer are completely removed.
  • Once peeled, cut the cassava pieces in half lengthwise and place them into a pan filled with water so that the water reaches the cassava up to ¾ of the way. Cover and turn the heat on to medium and allow the cassava to boil.
  • The cassava usually takes about 15 to 20 minutes to cook. Test if they are soft with a fork then remove them from the pan. Keep the water that they have been boiling in as we will use this later. Remove the fibrous stem in the middle of the cassava and leave the cassava aside for now.
  • While the cassava is cooking, you can prepare the other ingredients like dicing the tomatoes, chopping the parsley, chillies and spinach.
