MAIDA HEATTER'S CUBAN BLACK BEANS AND RICE

Steps:
- Pick over the beans carefully to remove any foreign particles. Rinse well in several changes of cold water.
- Put the beans in a bowl with the six cups of cold water. Cover and let stand overnight.
- Drain the beans, reserving the water in which they soaked. Measure the water and add enough additional water to make eight cups.
- Place the beans, water and ham hocks in a small kettle or large saucepan and bring to the boil. Cook slowly, uncovered, skimming the surface as necessary to remove any foam. The beans should cook until tender, four to six hours.
- Meanwhile, heat the oil in a skillet and add the onions and green peppers. Cook, stirring, until the mixture is wilted. Add the garlic and cook briefly, stirring. After the beans have cooked about two hours, add the mixture to the beans. Add the bay leaves, pepper flakes, vinegar, salt and pepper.
- When the beans are almost tender, uncover and continue cooking 30 minutes.
- Remove the ham hocks. When they are cool enough to handle, remove and discard the skin, fat, bones and gristle. Shred the meat and return it to the beans. Remove the bay leaves. Add the cayenne pepper and Tabasco.
- This dish improves if cooked one day in advance. When ready to serve, heat the bean mixture thoroughly. Just before serving, stir in the rum. Serve with rice on the side or spoon a portion of the bean mixture over individual servings of rice. Add the onions according to taste.

- Heat a large skillet over medium-high heat and stir in the ground beef and onion. Cook and stir until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the ketchup, brown sugar, vinegar, Worcestershire sauce, mustard, and salt. Bring to a simmer, then reduce heat to medium-low, cover, and simmer 20 minutes longer. Serve on warmed buns.

- In a small bowl, combine mayonnaise and parsley. Season with salt and pepper. Spread 1 tablespoon mayonnaise mixture on each of the halved rolls. Place Gouda on four halves, and top with sliced onion and arugula. Top with remaining halves.

- Cut the sausages apart into individual links if necessary, place the sausage links into a large skillet over medium heat, and brown them on all sides. Set the sausages aside, reserving the pan drippings.
- Pour the whole tomatoes, crushed tomatoes, and tomato sauce into a large saucepan with a lid; stir in the grated Parmesan cheese, garlic powder, Italian seasoning, sugar, and onion powder. Bring the mixture to a boil; add the cooked sausages, pan drippings, green peppers, and onions. These are delicious little "hors d'oeuvre" sandwiches. Not only do they taste good, but they look beautiful too! These are perfect to serve at a party, luncheon, etc.

Steps:
- Take your bread slices and butter each of them on one side, and then put a thin layer of onions over the butter on 8 of the slices.
- Sprinkle a small amount of sea salt over the onions just to lightly season them, and then put the sandwiches together by topping with the remaining bread slices.
- Using a 1 3/4 inch round cookie cutter, cut out 2 small rounds from each sandwich, making 16 small sandwiches in all (discard trimmings, or use for whatever you wish).
- Spread some of the mayonnaise around the outside rim of each sandwich, and then roll the rims in your finely chopped parsley to coat completely.
- Serve these immediately, or cover and refrigerate (no more than) a few hours before serving.
