MOM'S SWEDISH MEATBALLS

My Mom's Swedish Meatballs is a tried and true family recipe that's easy to make and incredibly flavorful with a delicious gravy!

Provided by Tracy

Categories     Main Course

Time 1h5m

Number Of Ingredients 16

3/4 lbs ground beef
1/2 lb ground lamb or venison (see notes)
1/4 lb ground mild pork
1 1/2 cup soft bread crumbs, cubed
1/3 cup onion, minced
1 egg
1/4 cup fresh parsley, minced
1/4 - 1/3 cup milk (2% or 1%)
1 tablespoon salted butter
1 1/2 teaspoon kosher salt
1/4 teaspoon ground ginger
pinch ground nutmeg
2 cups beef stock
4 tablespoons all purpose flour
2 tablespoons salted butter
1 teaspoon instant coffee

Steps:

  • Pre-heat oven to 325 degrees.
  • Melt 1 tablespoon of butter in a sauté pan. Add onion and cook for 2-3 minutes until onions are soft. Add to a large bowl.
  • Add bread crumbs to a medium sized bowl. Add milk, starting with 1/4 cup - just enough to wet all of the bread.
  • Add meats to large bowl with onions and add the parsley, egg, salt, ginger, and nutmeg. Mix well and then add the milk soaked bread crumbs. If there is any extra milk in the bowl with the bread, do not add.
  • Add meat mixture to fridge for at least 15 minutes, this will help with shaping the meatballs.
  • Shape meat into 2 - 3ish inch meatballs and add to a rimmed baking sheet. Don't worry about crowding.
  • Bake for 30 minutes.
  • Once meatballs are done, remove meatballs with tongs and add to a plate or bowl. Then use a spatula to scrape all of the drippings from the pan into a large pot or dutch oven.
  • Heat pot to medium and add 2 tablespoons of butter to the meatball drippings. Add flour and mix flour and butter to create a roux.
  • Slowly add beef broth, mixing roux with it as it's added until all the broth is incorporated.
  • Add the meatballs back to pan and let simmer on medium low for 15-20 minutes.
  • Serve over noodles, rice, or whatever you'd like!

ALMOST-FAMOUS SWEDISH MEATBALLS

Almost-Famous Swedish Meatballs image

Some people drive for hours to get to an Ikea store, and we know they aren't making the trek just for the $9.99 chairs. They're going for the Swedish meatballs. The dish has been a main attraction at Ikea Restaurants since an in-store chef developed the recipe in Switzerland in 1985. Although Ikea's Real Swedish Food Book, published in 2000, included a meatball recipe, reps confirmed that it is not the one served at their restaurants. Ikea is keeping that baby a secret, so chefs in Food Network Kitchens hit a nearby store for a tasting, then created this spot-on copy.

Time 50m

Yield About 45 meatballs

Number Of Ingredients 20

1 cup breadcrumbs
2 tablespoons unsalted butter
1/3 cup minced white onion
2 cloves garlic, minced
1/4 teaspoon ground allspice
Kosher salt and freshly ground white pepper
1/2 cup milk
1 teaspoon Worcestershire sauce
3/4 pound lean ground beef
1/2 pound lean ground pork
1 large egg plus 1 egg white, beaten
Vegetable oil, for brushing
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups low-sodium beef broth
1 teaspoon Worcestershire sauce
1/4 cup heavy cream
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh parsley (optional)
Lingonberry jam, for serving (optional)

Steps:

  • Make the meatballs: Put the breadcrumbs in a large bowl. Heat the butter in a skillet over medium heat. Add the onion, garlic, allspice, 2 teaspoons salt and 1/4 teaspoon white pepper and cook, stirring, until soft, about 5 minutes. Add the milk and Worcestershire sauce and bring to a simmer. Pour the milk mixture over the breadcrumbs and stir to make a thick paste; let cool. Add the beef, pork, egg and egg white to the bowl and mix until combined.
  • Brush a baking sheet with vegetable oil. Roll the meat into 1-inch balls and arrange on the prepared baking sheet. Cover with plastic wrap and refrigerate at least 1 hour.
  • Preheat the oven to 400 degrees F. Bake the meatballs until cooked through, about 20 minutes.
  • Make the gravy: Melt the butter in a large skillet over medium heat. Add the flour and cook, whisking, until smooth. Whisk in the beef broth and Worcestershire sauce and bring to a simmer. Add the cream and meatballs. Reduce the heat to medium low and simmer until the gravy thickens, about 10 minutes. Season with salt and black pepper. Transfer to a serving dish; sprinkle with the parsley and serve with lingonberry jam, if desired.

MOM'S SWEDISH MEATBALLS

Mom's Swedish Meatballs image

This recipe is such comfort food for me. It reminds me of being little and my mom making this; it's creamy and delicious on the egg noodles!

Provided by Midwest Maven

Categories     Veal

Time 1h

Yield 4 serving(s)

Number Of Ingredients 14

1 lb ground beef
1/2 lb ground pork
1/2 lb ground veal
1 teaspoon instant minced onion
1 egg
2 slices white bread, no crusts
1 dash salt and pepper (for meatballs)
1 1/2 tablespoons oil
1 1/2 tablespoons margarine
3 tablespoons flour
1 quart half-and-half
1 teaspoon Gravy Master or 1 teaspoon Kitchen Bouquet
salt and pepper (for sauce)
12 ounces wide egg noodles

Steps:

  • Mix beef, pork, and veal together in a bowl with the onions, egg, white bread broken up into small pieces, and sprinkling of salt and pepper.
  • Roll into balls about the size of a golf ball or a little smaller.
  • Saute meatballs in melted margarine and the oil until browned.
  • Remove meatballs from the pan and set aside.
  • Add flour to the grease in the pan(to make a roux) and stir constantly for 30-60 seconds.
  • Add 1/2 of the carton of half and half, the gravy master, and salt and pepper to taste.
  • Stir until it starts to thicken, and then add meatballs back to the pan.
  • Simmer on low for 40 minutes.
  • As it thickens more, you can add the rest of the half and half as needed. (I usually end up adding the rest little by little because I like it saucey and because some of the sauce cooks away while simmering.).
  • Re-season with salt and pepper to your taste, before serving on top of cooked egg noodles. Enjoy!

MOM'S CHRISTMAS SWEDISH MEATBALLS

Mom's Christmas Swedish Meatballs image

My mom found this recipe years ago in the newspaper and has perfected it over the years. We all make it every year for Christmas, it just isn't Christmas without these luscious meatballs!

Provided by pammyowl

Categories     Meatballs

Time 2h

Yield 10-12 serving(s)

Number Of Ingredients 13

2 cups chopped onions
3 tablespoons butter
2 cups breadcrumbs
2 quarts half-and-half
2 1/2 lbs ground beef
1 1/2 lbs ground pork
3 -3 1/2 teaspoons salt
3/4 teaspoon white pepper
1/2 teaspoon nutmeg
4 beaten eggs
1 tablespoon dried parsley
1/4 cup butter
1/4 cup flour

Steps:

  • Saute onions in 3 T. butter. Let cool a bit and lightly mix the meat, onions, bread crumbs, eggs, 1 1/2 cups of the cream. salt, pepper, nutmeg and parsley. Form into meatballs, about the size of a small walnut, place on cookie trays, and bake at 375 for 20-25 mn.
  • Put in two casseroles, and make the cream gravy.
  • Melt the 1/4 cup butter in a large, heavy saucepan Add the 1/4 cup flour, a touch more salt and pepper, cook for at least one minute. Do not brown. Gradually add the remaining cream, stirring continuously, until thickened. I like to add some Kitchen Bouquet for more flavor and some color at this point.
  • Pour over the meatballs.
  • Note: At this point, we generally freeze them and then defrost and bake for an hour or so on Christmas, as this recipe makes a lot of meatballs, so it is time consuming and who wants to do all that on the day of, right?.
  • Also, you can freeze the cooked meatballs alone, and make the gravy later and pour it over the meatballs right before you bake them.

MAMA'S SWEDISH MEATBALLS

Mama's Swedish Meatballs image

I know that there are many recipes for Swedish Meatballs out there, but I had to add the one that I grew up with as a kid. And, like everyone else, I think my Mama's were the best! She served them with the gravy over egg noodles along with a green vegetable or salad. You can serve them as a main dish or as an appetizer.

Yield 6 serving(s)

Number Of Ingredients 14

1 1/2 lbs ground beef
1/4 lb ground pork
1 egg, slightly beaten
1 cup milk
1/2 cup fine dry breadcrumb (use plain, not seasoned)

1/2 teaspoon pepper
1/4 teaspoon ground nutmeg
1/8 teaspoon ground allspice
2 tablespoons all-purpose flour
1 cup hot water
3/4 cup half-and-half cream

Steps:

  • Combine the beaten egg, milk, and breadcrumbs; let stand for 5 minutes.
  • In a small frying pan over medium heat, saute the chopped onions in 1 tablespoon of butter until lightly golden in color.
  • In a large bowl, combine the breadcrumb mixture, the sauteed onions, the ground beef and pork, salt, pepper, nutmeg and allspice. Mix well with hands until smooth. Shape into about 36 meatballs, each about 1-inch in diameter.
