1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
1/2 teaspoon kosher salt
1 pound ground chuck
8 (3-inch) buns or rolls, split in half
2 to 3 tablespoons mayonnaise

Steps:

  • Preheat the oven to 250 degrees F. Preheat a griddle to 350 degrees F.
  • Combine the onion powder, garlic powder, pepper, and salt in a small bowl. Set aside.
  • Line a jellyroll or sheet pan with parchment paper, and place the ground chuck in the middle of the pan. Cover the meat with a large sheet of plastic wrap. Roll meat with a rolling pin until it covers the surface of the pan; it should be very thin. Remove the plastic wrap, and sprinkle the meat with the seasoning mixture. Fold the meat in half, from side to side, using the parchment paper. Use a pizza wheel to cut the meat into 8 even squares.
  • Wrap the buns in foil and place in the oven for 5 to 10 minutes. Meanwhile, place the burgers on the griddle and cook for 2 to 3 minutes per side.
  • Remove the buns from the oven. Spread a small amount of mayonnaise on each bun and top with the burger and any other condiments, as desired. Serve immediately.

1 kg ground beef
1 egg, slightly beaten
1 tablespoon dry onion soup mix
2 tablespoons fresh minced garlic
1/2 cup dry breadcrumbs
1 tablespoon Worcestershire sauce
1 teaspoon fresh ground black pepper
1 teaspoon paprika
1/2 teaspoon coriander
1/2 teaspoon cumin
1 pinch salt
1 pinch cayenne pepper

Steps:

  • In a bowl crumble the ground beef.
  • Add in the rest of the ingredients.
  • Using clean hands mix until combined, add in more breadcrumbs if needed to just hold the mixture together (be careful not overwork the mixture or it will become a hockey puck in the oven).
  • Divide the ground beef into 4 equal patties (or make 8 small patties).
  • Place the patties onto a large plate and cover with plastic wrap and refrigerate for a 30 minutes or up to 24 hours to blend flavors.
  • Grill or pan fry the burgers as desired until cooked through .
  • Serve burgers in toasted buns with choice of condiments(I use sauteed red onions & mushrooms.

1/4-3/8 cup barbecue seasoning (such as KC Masterpiece BBQ seasoning)
8 hamburger buns

Steps:

  • In large bowl, combine ground beef, liquid smoke and barbecue seasoning. Mix well.
  • Divide the mixture into 8 equally sized balls. With your hands, flatten the ball and gradually mold into patties (use your fingers to press and shape, ensuring that the patties do not fall apart). Form into large patties, slightly larger in diameter than the buns (approximately 6-inch diameter). As the hamburgers cook, they will shrink to the right diameter for the buns.
  • Grill until done. Top with cheese slices.

2 1/4 teaspoons kosher salt
2 onions, finely chopped
1 pound ground beef chuck
2 tablespoons yellow mustard, plus more for serving
Eight 3-inch buns or rolls, split in half
8 dill pickle chips, ice cold, finely chopped
8 slices American cheese

Steps:

  • Combine the garlic powder, black pepper and 1/4 teaspoon kosher salt in a small bowl and set aside.
  • Combine the onions and 2 teaspoons kosher salt in a bowl and set aside for 10 minutes. Strain and reserve the juices.
  • Line a half sheet pan with parchment paper and place the ground chuck in the middle of the pan. Cover the meat with a large sheet of plastic wrap and roll out the meat with a small rolling pin into a large rectangle that covers the surface of the pan; it will be very thin. Remove the plastic wrap. Add a thin layer of yellow mustard and season the meat with the spice mixture.
  • Pick up the edge of the parchment and fold the meat in half, widthwise. Roll a couple of times just to seal the two layers. Refrigerate for 10 minutes then cut into 8 even squares with a pizza cutter.
  • Preheat a griddle pan over medium heat.
  • Spread the onions out on the griddle in an even layer in a rectangular shape. Put the patties on top of the onions. Resist the urge to press them with your spatula. Squeezing burger patties is the culinary equivalent of picking at a scab, and you remember what your mom told you about that. Pour over some of the remaining onion juice to create steam. Top each patty with a slice of cheese and the bottom half of a bun. Cover the griddle with foil (but do not seal) and reduce the heat to low. Steam the burgers until cooked, 3 to 5 minutes.
  • Construct burgers thusly: Add pickles and mustard to each bun top. Using a large spatula, pick up a burger-bottom bun stack and place it on the top half of a bun. Repeat with the remaining burger stacks and bun tops until there's nothing left to build.
  • Consume mass quantities.

Spice Mix, optional, recipe follows
1 tablespoon vegetable oil
4 slices cheese, such as Cheddar, American, Saga blue cheese, and Swiss, optional
4 soft hamburger-style buns, split
4 slices beefsteak tomatoes, optional
Assorted lettuces and greens, such as iceberg, romaine, or watercress
Assorted mustards, such as whole-grained, Dijon, or French's, optional
Mayonnaise, optional
Ketchup, optional
1 tablespoon Worcestershire sauce
2 teaspoons garlic powder
2 teaspoons onion powder
Hot Sauce, to taste

Steps:

  • Preheat the oven to 450 degrees F. Place a roasting rack on a foil-lined baking sheet in the oven.
  • Using your hands, break the meat into small pieces and combine evenly but loosely on a parchment or waxed paper-lined baking sheet. Spread the meat out and season it generously with salt and pepper. If desired, add the spice mix at this time.
  • Divide the meat into 4 portions (about 6 ounces each). Using your hands, form each portion into a ball-shape by gently tossing it from 1 hand to the other. (Don't over work or press too firmly on the meat.) Gently form each portion into a patty about 3 1/2 inches wide and 1-inch-thick.
  • Preheat a large cast iron skillet over medium-low heat for 5 minutes. Raise the heat to high and add the oil. Add the patties and cook, turning once, until well-browned, about 2 minutes each side.
  • Using a spatula, transfer the hamburgers to the roasting rack in the oven and continue cooking to desired doneness, 8 to 9 minutes for medium-rare, 10 to 11 minutes for medium, and 13 to 15 minutes for well-done. If you are using the cheese, top the hamburgers during their last couple of minutes of cooking to melt.
  • Transfer the hamburgers to a plate, let rest for a couple minutes before serving. Meanwhile, toast the hamburger buns. Assemble the hamburgers with the condiments and toppings of your choice. Serve.
  • When cooking on a countertop grill, turn on grill, then place burgers on the heated grill.
  • Timing for a countertop grill:
  • For Medium-Rare: Cook for 3 minutes covered and then unplug the machine and continue to cook covered for 2 to 3 more minutes.
  • For Medium: Cook for 4 minutes covered and then unplug the machine and continue to cook covered for 4 more minutes.
  • For Well: Cook for 5 minutes covered and then unplug the machine and continue to cook covered for 5 more minutes.
  • Combine all ingredients.

Here's a fact: turning the big burger without it breaking is a feat. Here's a more important fact: it's not that big of a deal if it breaks. You can arrange it on the loaf of bread after cooking and it won't matter all that much if it's one piece or in several pieces. It's a showstopper either way. I use two pizza peels (one above the patty, one below) to turn the burger. If you don't have peels, use large spatulas. A quick wipe of olive oil or spritz of nonstick cooking spray on the peels or the spatulas can't hurt. This burger is messy in the best possible way. Eat chunks of it with your fingers, dip the bread into the cherry sauce, and enjoy every bite.

3 1/2 pounds ground beef
1 teaspoon coarse sea salt, preferably gray salt, plus more for sprinkling

6 ounces soft, fresh goat cheese, at room temperature, such as Laura Chenel's
Nonstick spray, for spritzing
One 16-ounce round loaf country bread
Grilled Bing Cherry-White Balsamic Sauce, recipe follows
2 cups whole Bing cherries, stemmed
2 tablespoons unsalted butter
2 tablespoons finely chopped shallots
6 tablespoons white balsamic vinegar
2 tablespoons brown sugar
1/4 teaspoon coarse sea salt, preferably gray salt
Pinch freshly ground black pepper

Steps:

  • Preheat a gas grill to high or ignite the charcoal. When the grill is hot, clean your grill rack. Decrease the temperature to medium-high (for a gas grill only) and brush or wipe a little oil on the grill rack.
  • Divide the ground beef into two equal portions. Line a 9-inch-round cake tin with plastic wrap. Gently push half the beef into the tin. Don't press too hard. Place another sheet of plastic wrap on a work surface and invert the tin so the shaped beef patty pops out onto the plastic wrap. Line the cake tin with plastic wrap again. Gently push the remaining half the beef into the tin and keep it in the tin for the moment.
  • Sprinkle the top of each patty with the salt and pepper. Spoon the cheese onto the patty still in the tin. Spread the cheese to cover the meat, but leave about 1/2-inch margin uncovered around the edge. Use the plastic wrap-lining to remove the patty from the tin and flip it onto the non-cheese patty. You want the seasoned sides of the meat facing together, with the cheese sandwiched between. Lightly press the 2 patties together all around the edge. Sprinkle the top of the burger with salt and pepper.
  • Wipe a pizza peel with a little oil and transfer the burger to the grill using the peel. Close the grill lid and cook until the bottom of the patty shows grill marks, 8 to 9 minutes. Spritz a little nonstick spray on top of the burger, then flip and cook, 8 to 9 minutes. Gently transfer the cooked burger to a large platter and let rest, about 15 minutes.
  • Halve the bread straight across horizontally so it forms a bun. If you like, you can toast both halves lightly on the grill. Transfer the burger onto the bottom half of the bread. Spoon on the Grilled Bing Cherry-White Balsamic Sauce and close the burger with the top half of the bread. Slice the burger into 6 wedges, as if you were cutting a pizza, and serve.
  • A fresh grind is just as important. Choose chuck steaks from your butchers and ask them to grind the meat while you wait, the same day you plan to cook them if possible. Even your local supermarket butcher will be happy to do this for you.
  • Summer fruit, when given a quick turn on the grill, gets a smoky, sultry tang that works well with goat cheese on a burger. This also works well as a topping for a turkey burger, chicken breast or a grilled pork chop or pork loin.
  • Dark red Bing cherries are beautiful in this sauce but you can also use a combination of cherries with apricots, peaches or any stone fruit. I like to grill cherries and then pit them; you lose less juice that way. For stone fruit, cut the fruit in half, remove the pit, give the fruit a light rub of olive oil on both sides and then grill, about 2 minutes each side.
  • Preheat a gas grill or charcoal grill to medium-hot heat. A charcoal grill will glow red under gray ash when at this temperature. (Alternatively, grill the cherries in a hot grill pan over high heat on the stove.) Pour the cherries into a fine-mesh grill basket or all-metal strainer, and place the basket over the grill. Cook until bright and smoky, but not charred, about 4 minutes. Give the basket a good shake every 20 to 30 seconds, so the cherries heat through. After 3 minutes, taste a cherry to see if it's smoky enough. Take the basket off the heat and let the cherries cool, about 5 minutes.
  • Halve the cherries over a bowl, reserving all the cherry juice you can. Discard the pits. Melt the butter over medium-high heat in a large saucepan or skillet, either on the grill or the stove. When the butter is foaming, add the shallots and stir. Cook the shallots until they begin to show some color, about 2 minutes. Stir in the vinegar and brown sugar. Add the cherries to the saucepan with any reserved juice. Cook until just slightly syrupy, about 3 minutes. Add the salt and pepper, taste, and add more seasoning if you like.
  • This can be stored in the fridge, tightly covered, for 3 to 4 days. Yield: about 2 cups.

Line a jellyroll or sheet pan (or any large work area) with parchment paper, and place the ground chuck in the middle of the pan. Cover the meat with a large sheet of plastic wrap. Roll meat with a rolling pin until it covers the surface of the pan; it should be very thin. Remove the plastic wrap, and sprinkle the meat with the seasoning mixture. Use a pizza wheel, bench scraper or long knife, to cut the meat into 8 even squares. If you don't have/use parchment paper, no worries. Spread a small amount of mayonnaise on each bun and top with the burger and any other condiments, as desired. Serve immediately. Notes: I loved the idea of rolling the ground beef thin. My future idea is to layer thin cooked mushrooms and Swiss cheese. These are easy and fun to make. You can kick up the sauce by adding some diced chipotle, but go easy...these are smoked jalapenos, which is very hot!

It's so easy that kids can make it, although they'll need adult help with the broiling. Men love it too, so it would be great for a poker game or Superbowl party. Get "moosh-ing" and enjoy!

  • Make the pates thicker at the edges and thinner in the centre, since burgers tend to get rounder and thicker at the centre when you cook them. This way they come out flat once cooked.
  • If you are going to grill the burgers it helps if they are frozen first so they don't crumble.
  • Place the pates on a baking sheet lined with foil (to help with cleaning).
  • Place the baking sheet under the broiler for 16 minutes turning half way threw.
  • In a skillet add a little oil (which ever kind you like cooking with).
  • Once the oil is hot add the mushrooms.
  • Add the minced garlic, salt and Italian seasoning to the mushrooms.
  • Stir the mushrooms often, so they are cooked evenly.
  • Once the mushrooms are cooked and browned remove them from the skillet.
  • One the bottom buns of the burgers spread some mayo.
  • Once the burger is cooked add the burger to the bottom bun.
  • Then add a zigzag of ketchup to each burger.
  • Layer the mushrooms on top of that then the top bun.
  • Serve with a side of coleslaw, pickle and backed potato or fries.

25 saltine crackers, crushed
1 cup milk
½ teaspoon black pepper
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon Italian seasoning
3 (10.75 ounce) cans condensed cream of mushroom soup
1 (8 ounce) can mushrooms, drained

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together the ground beef, crackers, milk, pepper, salt, garlic powder, and Italian seasoning. Form 6 or 8 large beef patties, and place in a 9x13 inch baking dish, or other shallow casserole dish. Pour the condensed soup evenly over the top of the patties, and sprinkle canned mushrooms over the top. Cover the pan with a lid or aluminum foil.
  • Bake for about 45 minutes in the preheated oven, or until beef patties are well done.

1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 pound lean ground beef (90% lean)
1/2 cup sliced fresh mushrooms
1/4 cup sliced sweet onion
2 kaiser rolls, split
2 ounces fat-free cream cheese
1 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the onion, garlic powder, salt and pepper. Crumble beef over mixture and mix well. Shape into two patties., On a greased grill rack, grill the patties, covered, over medium heat or broil 4-6 in. from heat for 4 minutes on each side or until a thermometer reads 160°., Meanwhile, in a small skillet coated with cooking spray, cook and stir mushrooms and onion over medium heat until onion is golden brown. Grill rolls for 1-2 minutes or until lightly toasted., Spread rolls with cream cheese; top with burgers and mushroom mixture. Sprinkle with bacon.
