1 tbsp Butter (Unsalted)
1 tbsp Oil
1.5 pounds Chicken breast (Cut into small 1 inch cubes)
Salt (To taste)
Pepper (To taste)
1/4 cup Onion (Finely chopped)
1 clove Garlic (Finely minced)
1.5 tsp Ginger powder
2/3 cup Chicken broth (Low sodium)
2 tbsp Honey
2 tbsp Soy sauce
1 tbsp Vinegar
1/4 tsp Red chili flakes (Optional)
1 small Green pepper (Thinly sliced)
1 cup Mango (Cut into small 1 inch pieces)
1 tbsp Cornstarch (Dissolved in 2 tbsp water)

Steps:

  • Heat butter and oil in a large nonstick pot or pan over medium high heat.
  • Add chicken and sprinkle salt and pepper. Saute until golden brown. It does not have to be fully cooked.
  • Add onion, garlic and saute for 1-2 minutes until fragrant.
  • Add broth, honey, soy sauce, vinegar, red chili flakes and mix everything together.
  • Add green peppers and half the mangoes and let it all simmer for 1-2 minutes.
  • Pour the dissolved cornstarch and continue cooking, uncovered, until sauce thickens to your desired consistency.
  • Mix in the remaining mangoes and garnish with thinly sliced green onions, if you like. Enjoy!

4 boneless, skinless chicken breasts (about 2 pounds)
3 tablespoons oil, divided
1 1/2 teaspoons kosher salt, divided
5-6 medium carrots, peeled, halved lengthwise, cut on the bias into 1 1/2" pieces (about 1 pound)
2 medium zucchini (about 1 pound), ends trimmed, cut on the bias into 1" pieces
Option 2: Add a little more flavor
1/2 teaspoon freshly ground black pepper, divded
1/2 cup mild or medium-heat mango chutney
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
Option 3: Take it next level
1/2 cup plain full- or low-fat Greek yogurt
1 1/2 teaspoons fresh orange juice
1/4 teaspoon curry powder
1/8 teaspoon kosher salt
3 tablespoons finely chopped cilantro or parsley leaves
3 tablespoons finely chopped roasted, salted cashews

Steps:

  • Arrange racks in upper and lower thirds of oven; preheat to 400°F.
  • Option 1: "Plain" but seasoned
  • If you'd like your chicken plain, toss breasts with 1 Tbsp. oil and 3/4 tsp. salt on a rimmed baking sheet. For simple roasted vegetables, toss carrots and zucchini with 2 Tbsp. oil and 3/4 tsp. salt on a rimmed baking sheet.
  • Option 2: Add a little more flavor Season chicken with 1/4 tsp. pepper, then spread 2 Tbsp. mango chutney over top of each breast. Roast on top rack until an instant-read thermometer registers 165°F, 23-28 minutes. Toss carrots and zucchini with cumin, cinnamon, and 1/4 tsp. pepper. Roast on bottom rack, tossing once halfway through, until cooked through, tender, and browned in spots, 25-30 minutes.
  • Option 3: Take it next level Make a curried yogurt sauce for the chicken: Mix yogurt, orange juice, curry powder, and salt in a medium bowl. For a fresh and crunchy topping for the vegetables, mix cilantro and cashews in a small bowl.
  • Divide chicken and vegetables among plates. Serve curried yogurt sauce and cilantro-cashew mixture alongside.

For the meatballs:
1 pound 93% lean ground chicken (or lean ground turkey)
1 egg
½ cup panko breadcrumbs (or if GF sub 2-3 tablespoons coconut flour)
1/3 cup finely diced cilantro
1/4 cup finely diced red onion
1 jalapeño, seeded and finely diced
3 cloves garlic, minced
1/2 tablespoon freshly grated ginger (or ½ teaspoon ground ginger)
½ teaspoon ground cumin
½ teaspoon turmeric
¼ teaspoon cayenne pepper
½ teaspoon salt
Freshly ground black pepper
1 tablespoon toasted sesame oil (can also use avocado oil or coconut oil)
For the coconut mango sauce:
1 (15 ounce) can light coconut milk
1 ½ cup diced mango (can use frozen, just make sure you thaw it first)
2 tablespoons gluten free soy sauce (or coconut aminos)
Add-ins:
1 red bell pepper, julienned
3/4 cup frozen peas (or edamame)
To garnish:
Chopped honey roasted peanuts
Diced green onion
Fresh cilantro
Hot sauce, if desired

Steps:

  • First, make your mango coconut sauce. Add coconut milk, diced mango, and soy sauce to a blender and blend until smooth. Set aside.
  • Next, form your meatballs. In a large bowl, add the ground chicken, egg, breadcrumbs, cilantro, red onion, jalapeño, garlic, ginger, cumin, turmeric, cayenne, salt and pepper. Use clean hands to mix and form into 16 golf ball sized meatballs.
  • Place a large deep skillet over medium-high heat and add in sesame oil. Add the meatballs and brown on all sides, about 5-6 minutes total. You may need to do this in batches, depending on how many meatballs you can fit in your skillet without overcrowding them.
  • Reduce the heat to medium-low and add your mango coconut sauce to the pan with the meatballs. Cover the pan, reduce heat to low, and simmer for 20 minutes.
  • After 20 minutes, remove lid and gently stir in the peas and red bell pepper. Simmer for 5 more minutes uncovered.
  • Serve with brown rice, quinoa or with spiralized zucchini or sweet potato. There will be lots of sauce, which makes it delicious! Garnish with chopped honey-roasted peanuts, scallions, cilantro, and top with hot sauce if desired. Serves 4

2 skinless, boneless chicken breast halves
1 (8 ounce) package linguine
2 tablespoons olive oil
¼ cup grated Parmesan cheese
8 cherry tomatoes, quartered
1 tablespoon olive oil
1 large zucchini, quartered lengthwise
1 tablespoon olive oil
3 tablespoons butter
½ cup chopped fresh cilantro
3 cloves garlic, minced
¼ cup white wine
¼ cup chicken broth
2 tablespoons lime juice
½ cup heavy cream
1 bunch green onions, thinly sliced

Steps:

  • Whisk together 1/4 cup lime juice, garlic powder, cumin, salt, and pepper in a large bowl; add the chicken breasts. Cover and refrigerate 1 to 2 hours, turning the chicken occasionally.
  • Preheat an oven to 425 degrees F (220 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink. Transfer linguine to a large mixing bowl; add 2 tablespoons olive oil, the Parmesan cheese, and the quartered cherry tomatoes; toss until the pasta is evenly coated in oil.
  • Heat 1 tablespoon olive oil in a skillet over medium heat. Cook the chicken breasts, turning once, until no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Meanwhile, arrange zucchini pieces on a baking sheet. Coat the zucchini with 1 tablespoon olive oil with a pastry brush. Place zucchini on middle rack in the oven, and bake, turning every 5 minutes, until nicely browned, 15 to 20 minutes.
  • Melt the butter in a saucepan over medium heat. Add the cilantro and garlic, cook and stir 1 minute. Pour in the wine, chicken broth, and 2 tablespoons lime juice, and return to a simmer. Transfer the mixture to a blender and blend until smooth. Return the mixture to the sauce pan and stir in the cream and green onions; bring to a boil and remove from heat.
  • Lay the zucchini pieces side by side on a serving platter and place the chicken breasts on the zucchini. Pour the cilantro cream sauce over the chicken. Serve with the pasta on the side.

Steps:

  • For the marinade: Place 1/4 cup cilantro, 1 clove minced garlic, 1/4 jalapeno, lime zest, 1 1/2 teaspoons salt, onion powder, 1/4 teaspoon black pepper, 1/4 teaspoon chipotle chile powder, and 1 tablespoon olive oil in a small bowl and stir until well combined. Place the chicken breast tenderloins in a large resealable plastic bag. Pour the marinade into the bag with the chicken, seal, and shake the bag to coat. Refrigerate for 1 hour.
  • For the salsa: Combine the tomato, 1 small onion, 2 tablespoons cilantro, 1/2 jalapeno, 1 clove garlic, 1/4 teaspoon black pepper, sea salt, 1/8 teaspoon chipotle pepper, and 1 tablespoon lime juice in a bowl. Cover with plastic wrap and refrigerate.

1 and 1/2 pounds boneless skinless chicken breasts (can also use thighs)
3/4 cup + 1 tablespoon freshly squeezed orange juice, separated
1/2 cup + 1 teaspoon olive oil, separated
1/3 cup + 2 tablespoons freshly squeezed lime juice, separated
1 and 1/2 teaspoons lime zest, separated
1 tablespoon honey
1 teaspoon + 1/4 teaspoon cumin, separated
2 and 1/2 tablespoons soy sauce
2 teaspoons minced garlic
1/2 cup coarsely chopped cilantro, separated
1 ripe mango
1 ripe avocado
1/4 cup finely diced red onion
1/4 cup finely chopped red pepper
1 tablespoon finely chopped jalapeno, optional
Fine sea salt and freshly cracked pepper

Steps:

  • MARINADE: Whisk together all of the marinade ingredients: 3/4 cup orange juice, 1/2 cup olive oil, 1/3 cup lime juice, 1 teaspoon lime zest, honey, 1 teaspoon cumin, soy sauce, garlic, and 1/4 cup cilantro in a medium-sized bowl. Add salt and pepper to taste (I use about 1 teaspoon salt and 1/4 teaspoon pepper). Remove about 1/2 cup of marinade, and pour the rest into a large resealable bag.
  • Trim the chicken of fat. Pound the breasts to even thickness or slice in half to get evenly sized breasts and place in the bag with the rest of the marinade. Place in the fridge for at least 30 minutes making sure to flip the bag halfway through the time it is in the fridge. I recommend marinating for 2-8 hours.
  • COOK CHICKEN: The instructions below are to grill the chicken. To see other methods of cooking chicken, read right above this recipe card. Lightly oil the grill grate or grill ridges on a grill pan or add 1 tablespoon oil to a skillet and then place the marinated chicken on the grill. Discard leftover marinade.
  • Grill for 10-12 minutes or until chicken juices run clear and internal temperature is at 165 degrees F. Flip the chicken halfway and brush it generously with the reserved 1/2 cup marinade.
  • MANGO SALSA: Take the remaining 1 tablespoon orange juice, remaining 1 teaspoon olive oil, 2 tablespoons lime juice, remaining lime zest, and remaining 1/4 cup cilantro and toss together.
  • (OPTIONAL: When grilling the chicken, also grill the mango. Brush with oil and grill on one side for about 4-5 minutes at medium-high heat.)
  • Chop the mango and avocado into small bite-sized pieces. Add to the salsa along with the finely chopped red onion, red pepper, and jalapeno. Season the salsa to taste with pepper, salt, and remaining 1/4 teaspoon cumin. Toss together.
  • ASSEMBLY: Serve grilled chicken over a bed of cilantro lime rice or quinoa (if desired -- see recipe notes) and add spoonfuls of the salsa to top. Enjoy immediately!

2 teaspoons olive oil

2 large garlic cloves, minced

Steps:

  • Preheat broiler. Lightly oil broiler pan. Using mallet or rolling pin, pound chicken lightly between sheets of waxed paper to even 1/2-inch thickness. Season chicken with salt and pepper. Place chicken, skin side up, on prepared pan. Broil until skin is golden brown, about 4 minutes. Turn chicken over and broil until cooked through but still juicy, about 3 minutes longer.

Turn heat down to medium and cook for about 20 minutes, basting chicken constantly with remaining marinade. Discard marinade that was in contact with raw chicken; for the last 10 minutes of cooking, use only the stove sauce to baste the chicken. Cook chicken to an internal temperature of 165 degrees F.

  • Prep time includes prep for the marinade as well as marinade time. While the chicken is marinating the rice can be cooked and zucchini prepped.
  • Combine all the marinade ingredients in a food processor and pulse until combined but not completely smooth. Reserve a cup of the marinade and keep chilled.
  • Pour a little of the marinade in a pan and layer half the chicken on top, pour marinade over the top and layer with the rest of the chicken and marinade. You could also marinade in a bowl or a bag if you like. I like using a shallow glass dish. Marinate chicken for an hour to two hours. No longer.
  • You can marinate for half the time in the refrigerator and the rest of the time out of the fridge to bring the chicken to room temperature.
