- Preheat oven to 325°. In a large bowl, combine oats, pecans and pumpkin seeds. In a small bowl, mix maple syrup, butter, cinnamon, salt and nutmeg. Pour over oat mixture and toss to coat., Transfer to a 15x10x1-in. baking pan coated with cooking spray. Bake 35-40 minutes or until golden brown, stirring occasionally. Cool completely on a wire rack. Stir in dried fruits; serve with yogurt. Store granola in an airtight container.

- Finely grind flaxseeds in coffee/spice grinder, then stir together with oats, almonds, pumpkin seeds, sunflower seeds, salt, oil, and syrup in a large bowl.
- Spread mixture evenly in 2 large shallow baking pans (1 inch deep) and bake in upper and lower thirds of oven, stirring and switching position of pans halfway through baking, until golden brown, about 30 minutes total.
- Cool granola completely in pans on racks, then stir in ginger (if using) and apricots.

- Preheat oven to 350°F.
- Combine syrup, brown sugar and oil in large microwaveable bowl.
- Cook at high power for 3 minutes.
- In another large bowl, combine oats, coconut, peanuts, chocolate chips, raisins and flax seed.
- Pour hot syrup mixture over oat mixture and stir well to combine.
- Spread granola mix out into two jellyroll pans.
- Bake 10 minutes then remove from oven and stir mixture.
- Return to oven and bake another 10 to 15 minutes or until golden brown.
- Cool to room temperature.
- Break apart into chunks and stoe in sealed container.

- In a medium mixing bowl, add the oats, cinnamon, nutmeg, salt, shredded coconut, and pecans. Stir to combine. Pour in the olive oil, maple syrup, and vanilla and stir to combine. Add the almond butter last, and stir to combine. If it clumps in some areas that's fine - clumps in granola are the best!
- Spread the granola out so that it's mostly flat onto your lined baking sheet. Bake for 12 minutes. After the initial 12 minutes, stir the granola on the pan, making sure to move the bits on the edges to the inside of the pan, so they don't burn. Bake for 11-15 more minutes, or until golden brown and crisp.
- Let it cool completely before putting into a storage container. Stirring the granola around when it's done baking but before it cools can ruin any clumps that have formed. Store at room temp in an airtight container for up to 2 weeks.
