A fabulous sweet and salty glaze is basted on salmon as it grills on cedar planks. The quick and easy glaze can be used on chicken and pork as well. Good quality, grade B, pure maple syrup makes all the difference.

1 untreated cedar plank
2 ½ pounds boneless salmon fillet
1 teaspoon coarse salt
½ teaspoon black pepper
¼ cup maple syrup
2 tablespoons soy sauce
2 tablespoons melted butter
2 tablespoons fresh lime juice
½ teaspoon lime zest
2 tablespoons chopped fresh chives
6 lemon wedges

Steps:

  • Soak the cedar plank in water for 2 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil grate. Place the cedar plank across the grate of the grill as it preheats.
  • Season the salmon fillet with salt and pepper, and place onto the hot cedar plank skin-side down. Close the lid on the grill, and whisk together the maple syrup, soy sauce, butter, lime juice, and lime zest. Baste the salmon with the glaze, and continue cooking until the salmon flakes easily with a fork, about 10 minutes total. Serve the salmon garnished with chopped fresh chives and lemon wedges.

1 tablespoon vegetable oil
¼ cup maple syrup
2 tablespoons orange juice
2 tablespoons soy sauce
1 teaspoon ground ginger
1 clove garlic, minced
pepper, to taste
salt, to taste
4 oz salmon fillet, 2 fillets
fresh parsley, for garnish
1 lb broccoli floret
salt, to taste
2 tablespoons butter
1 tablespoon soy sauce
1 clove garlic, minced
1 teaspoon lemon zest
1 teaspoon red pepper flakes

Steps:

  • For the salmon, heat vegetable oil on medium-high in a cast-iron skillet.
  • For the broccoli, fill a medium pot halfway with water. Add a dash of salt and start boiling water.
  • In the meantime, whisk together maple syrup, orange juice, soy sauce, garlic, salt, and pepper in a medium bowl.
  • Set aside 2 tablespoons for topping later.
  • Place salmon fillets inside the bowl and make sure each side is covered with sauce.
  • Sear the salmon 2-3 minutes on each side.
  • Brush the tops with the sauce set aside.
  • With the pot of water boiling, add the broccoli and cover lid. Blanch for 2 minutes.
  • Drain under cold water to stop the cooking.
  • In the drained pot of broccoli, stir in butter, soy sauce, red pepper flakes, some lemon zest, and garlic on low heat. Mix until broccoli is well-coated.
  • On each plate, serve a filet of salmon and scoop of broccoli.
  • Top with reserved marinade and sprinkle parsley for garnish.
  • Enjoy!

  • Combine maple syrup, soy sauce, sriracha and garlic in a small bowl, pour into a gallon sized resealable bag and add the salmon. Marinate 20 to 60 minutes, turning once in a while.
  • Preheat oven to 425°F. Lightly grease a baking sheet with nonstick spray. Remove the fish from the marinade and pat dry with paper towels. Pour the marinade in a small saucepan.

1/3 cup real maple syrup*
3 Tbsp soy sauce ((not low-sodium))
2 cloves garlic (, minced)

  • In a mixing bowl whisk together maple syrup, soy sauce and garlic. Place salmon into a baking dish then pour maple syrup mixture evenly over salmon.
  • Cover and refrigerate 30 minutes, carefully rotating salmon once halfway through. Preheat oven to 400 degrees during last 10 minutes of marinating salmon.
  • Spray a 13 by 9 inch baking dish with cooking spray then transfer marinated salmon into greased dish (don't discard marinade). Bake in preheated oven until salmon is cooked through, about 15 minutes.

⅓ cup pure maple syrup
1 tablespoon lime juice
1 tablespoon reduced-sodium soy sauce
½ teaspoon cayenne pepper

Steps:

  • Position rack in upper third of oven; preheat to 425°F. Whisk maple syrup, lime juice, soy sauce, cayenne and garlic powder together in a small bowl.
  • Place a large sheet of foil on a large rimmed baking sheet. Place salmon fillets, skin-side down, in the middle of the foil. Pat the salmon dry with paper towels. Brush or spoon half of the maple mixture (about 1/4 cup) evenly over the salmon; set aside the remaining maple mixture. Bring the edges of the foil together over the salmon and crimp tightly to contain the maple mixture in the foil. Bake until the salmon just starts to turn opaque, 12 to 15 minutes.   • Remove the pan from the oven. Spoon some of the maple mixture in the foil over the salmon. Let rest for 5 minutes (the maple mixture should thicken slightly). Transfer the salmon to 4 plates and spoon or pour the maple mixture over the top. Sprinkle evenly with chives and salt. Serve with lime wedges, if desired.

  • SOAK THE PLANK: Soak a plank in water for 10 minutes for a 1/4 inch plank (or 30-60 minutes for 1/2 inch plank). I use a thin plank and just toss it out when I'm done. Cedar planks are great for salmon as they provide a gentle smoky taste.
  • MAKE THE GLAZE: Place all glaze ingredients in a microwaveable bowl or measuring cup. Stir. Microwave for 1 minute on high. Glaze will be slightly thickened. Let cool for 5 minutes if using part as a marinade (note 1).
  • GRILL PLANKED SALMON: Pat plank dry. Spray with oil. Place salmon on plank, skin side down. Brush salmon with 1/3 of glaze. Place plank on grill, close the lid and grill for 3 minutes for thinner plank (a little longer if using a thicker plank) until plank starts charring and smoking. Brush 1/3 more glaze on top of salmon. Turn off burner/heat under the salmon (salmon should now be on indirect heat) and close the lid. The other burner(s) should still be left on high with the temperature of the BBQ at about 425F-450F. Cook for another 7 minutes or until salmon just begins to turn opaque. Instant read thermometer will be at 130-135F (temp will rise while resting). Salmon should be a warm pink in the middle. Drizzle with remaining glaze. Rest salmon for 5 minutes loosely covered with a foil.

  • In a large, shallow dish, whisk the soy sauce with the maple syrup and sesame oil. Add the salmon steaks and turn to coat. Press the ginger and garlic onto both sides of the steaks. Cover and refrigerate for 2 hours, turning the salmon a few times.
  • Light a charcoal grill. Remove the salmon from the marinade. Pour the marinade into a small saucepan and boil over high heat until syrupy, about 3 minutes. Strain the glaze into a small bowl.
  • Oil the grate and grill the salmon over moderately high heat for 6 minutes, rotating the steaks slightly after 2 minutes to make crosshatches, if desired. Turn the steaks and grill for 6 minutes longer. Transfer to plates and spoon the glaze on top. Sprinkle with the scallions and serve.
