SHRIMP LINGUINE



Shrimp Linguine image

Tender cooked garlic shrimp served over linguine in a white wine sauce. Make it your next date night in dinner!

40 Shrimp (peeled and de veined)
1 Onion (thinly sliced)
1/3 cup Fresh lemon juice
4 cloves Garlic (peeled and finely chopped)
1 tbsp olive oil
1 cup white wine
1/4 cup fish stock
1/4 cup fresh chopped parsley
8 oz linguine (fresh)
1 tsp salt
1 tsp black pepper

Steps:

  • In a medium sized skillet over high heat, add the olive oil with the onion. Cook for 10-15 minutes or until soft and starting to turn golden. At this point add the garlic and cook for a further few minutes. Add shrimp, lemon juice, stock and wine. Turn heat to low and cover. Turn heat off after about 4-5 minutes as you don't want to over cook your shrimp
  • In a pot of boiling water add pasta and cook for about 4 minutes or according to package. Remove from heat and drain. Rinse with a water
  • Back to the shrimps and add the zest (reserving a small amount for sprinkling at the end), and most of the parsley. Give a good stir. Assemble 4 plates with the linguine and top it off with the shrimp and pan juice. Sprinkle over the top remaining lemon zest and parsley. Serve immediately.

1/4 cup Land O Lakes® Butter with Olive Oil & Sea Salt
2 teaspoons finely chopped fresh garlic
1 teaspoon dried parsley flakes
1/2 cup dry white wine *
16 ounces medium (31 to 35 count) raw shrimp, peeled, deveined
1/2 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. Drain; keep warm. Set aside.
  • Melt Butter with Olive Oil & Sea Salt in 12-inch skillet over medium heat until sizzling. Add garlic and parsley; sauté 30 seconds. Add wine; cook 1 minute. Add shrimp; cook, turning once, 2-3 minutes or until shrimp are pink.
  • Add hot, cooked pasta. Toss lightly until pasta is well coated. Sprinkle with Parmesan cheese.

Coarse salt and ground pepper
2 ounces linguine (about a 1/2-inch-wide handful)
1 tablespoon cold butter, cut into pieces
1 garlic clove, minced
Red-pepper flakes
1/3 cup dry white wine
1/4 pound large shrimp, peeled and deveined
1/2 teaspoon fresh lemon juice
Fresh parsley leaves, for garnish

Steps:

  • In a large saucepan of boiling salted water, cook pasta until al dente.
  • Meanwhile, in a small nonstick skillet, melt half the butter over medium. Add garlic and pinch of red-pepper flakes; cook until fragrant, 1 minute. Raise heat to medium-high; add wine. Cook until reduced by 1/3, about 1 minute. Add shrimp and season with salt and pepper; cook until opaque throughout, 1 to 2 minutes. Remove skillet from heat; swirl in lemon juice and remaining butter. Add pasta and toss to combine. Serve topped with parsley.

Creamy Shrimp Linguine in a Parmesan white wine sauce with fresh spinach and grape tomatoes makes for an impressive yet easy weeknight meal.

2 tablespoons olive oil
1 pound shrimp- peeled, deveined, tails off (thawed if frozen)
4 tablespoons unsalted butter
½ cup chopped onion
4 cloves garlic, minced
1 tablespoon all-purpose flour
1 cup heavy cream
1 cup dry white wine
1 ½ cups chopped fresh spinach
1 ½ cups grape tomatoes, halved
½ cup shredded Parmesan or Pecorino Romano
½ teaspoon dried oregano leaves
½ teaspoon salt, adjust to taste (plus 1 tablespoon for pasta water)
Freshly ground black pepper, to taste
12 ounces linguine noodles

Steps:

  • Bring a large pot of water to a boil.
  • Thaw shrimp in a colander under cool running water. Pat dry with paper towel. Sprinkle shrimp with salt and pepper.
  • Heat oil in a large nonstick skillet set over medium-high heat. Sauté shrimp until just pink on both sides, but not bright white. (Bright white indicates overcooking.) Transfer cooked shrimp to a bowl and set aside.
  • Add butter to skillet and adjust heat to medium. Add onions and garlic, sautéing until onions are translucent. Sprinkle flour over onions and let flour cook for about a minute, stirring and scraping pan as needed.
  • Add 1 tablespoon salt and pasta to the pot of boiling water. Cook pasta according to package instructions.
  • Slowly pour white wine into skillet, stirring constantly to combine. Let wine come to a simmer, then gradually pour in cream.
  • Add spinach and tomatoes, stirring gently to combine. Continue simmering until tomatoes are softened to your liking. (I prefer mine soft but not mushy or falling apart.)
  • Add Parmesan, salt, pepper, and oregano. Continue stirring and simmering as needed until cheese has melted and sauce has thickened a bit. If too thick, use some pasta water to thin it out.
  • Return shrimp to the pan and toss to coat.
  • Drain pasta, reserving ½ cup of pasta water if needed to thin sauce.
  • Add cooked pasta to the pan with the sauce and stir to coat.
  • Serve immediately.

1 cup chicken broth
1 lb shrimp, peeled and deveined
1 cup light cream
1 lb linguine
1/2-1 cup fresh grated parmesan cheese

Steps:

  • Over medium heat, melt butter and add shrimp.
  • Saute for about 2 minutes, then add garlic and cook for 1 more minute, being careful not to brown garlic.
  • Remove ingredients from pan and set aside; increase heat to medium high and then add wine and chicken broth.
  • Cook to reduce liquids.
  • Meanwhile cook linguine according to directions on package and drain well.
  • Add cream to sauce, then add shrimp back to pan.
  • Add linguine to sauce and then add Parmesan cheese.
  • Stir until sauce thickens.
  • Add black pepper to taste.
