4 chicken drumsticks
olive oil as needed
1 (1 ounce) package ranch dressing mix
1 pinch cayenne pepper, or to taste
salt and ground black pepper to taste

Steps:

  • Place chicken drumsticks into a resealable bag; add olive oil to coat. Add ranch dressing mix, cayenne pepper, salt, and black pepper. Close the bag and mix until drumsticks are covered. Let marinate in the refrigerator, 30 minutes to 1 hour.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Remove chicken from the bag; discard marinade.
  • Cook on the preheated grill until an instant-read thermometer inserted into a drumstick reads at least 165 degrees F (74 degrees C), 20 to 25 minutes. Remove from the grill and let sit for 5 to 10 minutes before serving.

1/2 cup balsamic vinegar
1/2 cup honey
1/2 cup light brown sugar, packed
1/4 cup low-sodium soy sauce
3 garlic cloves, minced
12 chicken drumsticks
2 Tbsp. sesame seeds
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Combine the balsamic vinegar, honey, brown sugar, soy sauce and garlic cloves in a large resealable bag. Add the chicken to the bag and seal. Marinate in the refrigerator for 2 hours.
  • Preheat the oven to 450 degrees. Line a rimmed baking sheet with aluminum foil. Top with a cooling rack. Remove the chicken from the bag, reserving the marinade, and arrange the drumsticks on the cooling rack. Bake until the skin is caramelized and dark in spots, about 30 minutes.
  • Meanwhile, place the leftover marinade in a small saucepan, uncovered. Bring the marinade to a boil, then reduce the heat to a simmer and cook over low heat until thick, about 15 minutes. Use a pastry brush to brush the cooked marinade on the chicken. Return to the oven for 10 more minutes.
  • Place the chicken on a serving platter and sprinkle with the sesame seeds and the chopped parsley.

Steps:

  • In a large zip top bag, combine the garlic, ginger, oil, soy sauce, honey and ground black pepper. I massage the bottom of the bag to make sure the honey blends well with the rest of the ingredients.
  • Place the chicken drumsticks into the zip top bag, close and shake the bag to make sure all the chicken pieces get coated with the marinade. I like to massage the chicken a bit just to make sure the marinade penetrates every piece of chicken. Marinate for 30 minutes or overnight.
  • Preheat the oven to 375 degrees Fahrenheit.
  • Place the chicken in a single layer on a baking pan or rimmed baking sheet (the marinade leftover in the bag can also be placed on the baking pan).

1/4 cup olive oil ((Use light oil, not extra virgin))
4 garlic cloves (pressed or minced)
4 Tbsp fresh parsley (finely chopped)
3 Tbsp lemon juice from 1 large lemon
2 Tbsp dijon mustard
1 Tbsp salt ((we use fine sea salt))
1/2 tsp black pepper

Steps:

  • In a small bowl, combine all of the marinade ingredients and stir or whisk together until well blended .
  • Transfer chicken legs to a large mixing bowl or a large ziploc bag. Pour the marinade over the chicken and toss with your hands to evenly coat the chicken, pushing some of the marinade under the skin of each chicken leg for richer flavor. Cover with plastic wrap and marinate 6 hours or overnight, tossing chicken once while marinating.
  • Preheat oven to 400˚F and line a rimmed baking sheet with foil or a silpat. Arrange chicken skin-side-down and bring chicken to room temp while oven preheats. 2.5 pounds chicken drumsticks
2/3 cup balsamic vinegar
3 tablespoons avocado oil (or any neutral oil like olive oil)
5 cloves garlic (minced)
1 tablespoon dried oregano
1 teaspoon sea salt
1/2 teaspoon pepper

Steps:

  • Combine the balsamic vinegar, oil, garlic, salt, pepper, and oregano into a gallon sized ziplock bag or a mixing bowl and mix well.
  • Place the uncooked chicken into the marinade. Zip up the bag and carefully shake it around until the marinade coats the chicken evenly. If using a bowl, you can use tongs to mix the chicken into the marinade.
  • Place the marinated chicken drumsticks into to fridge to sit. Mix the chicken around in the marinade every few hours. Allow the chicken to sit in the marinade for 24 hours if possible.
  • Preheat the oven to 425°F.
  • Line a baking sheet with parchment paper (optional for easy clean-up) and place a wire rack on top.
  • Remove each marinated chicken drumstick from the bag, and lay it in a single layer on top of the wire rack, making sure the drumsticks aren't touching each other.

Steps:

  • Clean them drumsticks. Sometimes they have small pieces of bones and fat which you need to remove.
  • Put all the drumsticks in a large plastic bag.
  • Make a batch of BBQ marinade. We have made a very easy recipe for BBQ marinade which only requires a few and simple ingredients. Find it on our blog.
  • Pour most of the barbecue marinade into the bag with the chicken. Save some of the marinade for later. Close the bag and shake it so that all the chicken is covered by marinade.
  • Put the bag, with the chicken, in the fridge and leave it for a couple of hours - we normally prepare the chicken the day in advance so that it marinate for about 24 hours. If you are busy you can skip this step.
  • Fire up the grill and grill the drumsticks for about 15-20 minutes. Pour the last of the barbecue marinade over the chicken. Alternatively, you can cook them in the oven at 200 C (400 F) for about 30 minutes.

  • If baking drumsticks immediately, massage them in the bag with the marinade for about 5 minutes. This will be sufficient to get a good amount of marinade and flavor inside the meat.

A simple greek style marinade with yogurt, red wine vinegar, and spices turns chicken drumsticks into a delicious family meal to make on the grill!

3 pounds chicken drumsticks
3 tablespoons olive oil
2 tablespoons plain yogurt
2 tablespoon red wine vinegar
2 teaspoons minced garlic
2 teaspoons dried oregano
1 teaspoon kosher salt

Steps:

  • To make marinade in a small bowl add olive oil, plain yogurt, red wine vinegar, minced garlic, dried oregano, and kosher salt. Mix together to combine.
  • Add chicken to large bowl/bag. Pour the marinade over the chicken and toss the chicken in the marinade so it is fully coated. Transfer the chicken to the fridge to rest at least 30 minutes or as long as overnight.
  • When ready to cook preheat the grill to medium-high heat. Remove the chicken from the marinade and place on the hot grill. Cook for 5 minutes. Rotate the chicken and cook 5 minutes. Rotate one more time and cook another 5 minutes until the chicken is fully cooked, juices should run clear and the chicken should reach an internal temperature of 170º-180º F. Exact timing will depend on the size of the pieces of chicken you are using.
  • Once done remove from the heat and cover, rest for 5 minutes before serving.

1/2 cup brown sugar
1/2 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon tomato paste
1/2 teaspoon garlic powder
1 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes
optional: sesame seeds and green onions for garnish

Steps:

  • Add chicken drumsticks into a large freezer bag.
  • Whisk together all remaining ingredients. Pour this over your chicken. Marinate overnight for best results or cook immediately.
  • Preheat oven to 425 degrees. Prepare a dish with aluminum foil. Pour chicken into the dish and bake for 30-40 minutes or until fully cooked. You will want to flip your drumsticks half way through the baking process.

3 Tbsp olive oil
3 tsp paprika
2 cloves garlic crushed
rind of 1 lemon

Steps:

  • Preheat the oven to 200 degrees celsius approx 400 Fahrenheit
  • Line a roasting pan with baking paper (you don't have to but it does make clean up easier)
  • Place the drums in the roasting pan, keep them single layer with just a little space between each
  • In a small bowl whisk together the marinade, oil, paprika, garlic, lemon rind and salt (you can use a whisk or fork, you just want it well combined
  • Pour the marinade over the drums, I use a brush to spread it evenly
  • Bake in the hot oven for 45 mins, if you like a crispier skin, at the 40 min mark baste the drums with the pan juices and pop your oven on grill for the final 5 mins of cooking
  • Serve
