PEAR GINGER TART



Pear Ginger Tart image

Choose ripe but firm pears for this delightful fruit tart. They are poached in a vanilla-scented syrup until just tender, then drained overnight; so plan accordingly. Note that most of the sugar in the syrup is drained off.

Number Of Ingredients 11

1 9-inch gluten-free dessert pastry shell (or other pastry shell of your choice), fully baked
1 vanilla bean
1 1/4 cups water (295 grams)
Scant 1/2 cup sugar (100 grams)
2 large ripe but firm pears, peeled, cored and diced (about 360 grams/ 3/4 pound / 3 cups peeled and diced pears)
2 tablespoons chopped candied ginger
1 1/2 teaspoons cornstarch (5 grams)
2 tablespoons sugar (30 grams)
2/3 cup whole milk (150 grams)
2 egg yolks
1 teaspoon vanilla extract

Steps:

  • Split the vanilla bean in half and scrape out the seeds with the tip of a paring knife. Place the water and the 1/2 cup (100 grams) of sugar in a saucepan, add the vanilla bean and seeds and bring to a boil over medium heat. When the syrup comes to a boil turn the heat to low, add the pears, and poach on medium heat for 5 minutes, or until the pears soften slightly. Do not over-cook. Set a strainer over a bowl and carefully transfer the pears to the strainer. Refrigerate and let drip overnight. Set aside the syrup for another purpose (it's great with yogurt or ice cream).
  • The next day prebake the pastry [ed: please link], then turn the oven to 350 degrees. Combine the cornstarch and 2 tablespoons (30 grams) sugar together in a mixing bowl. Whisk in the milk, egg yolks and vanilla extract.
  • Toss the poached pears with the diced candied ginger and arrange evenly over the bottom of the prebaked tart shell. Pour in the custard mixture, filling the tart 4/5 of the way so that a rim of crust is exposed. Bake for 40 to 45 minutes, or until beginning to color and the flan has set.

PEAR FRANGIPANE TART

1/2 recipe Pate Brisee for Pear Frangipane Tart
1 tablespoon all-purpose flour, plus more for rolling dough
1/2 cup unsalted butter (1 stick)
1/2 cup granulated sugar
1 large egg
1 cup finely ground blanched almonds
3 tablespoons dark rum
1 teaspoon almond extract
3 White Wine-Poached Pears in 1/2 cup poaching liquid, cooled

Steps:

  • Preheat oven to 425 degrees. Roll out dough into a 12-inch round on a lightly floured surface. Fit into a 10-inch tart pan with a removable bottom and fold over to make a double-thick edge. Roll rolling pin over edge of tart pan to trim dough, and pierce bottom of dough all over with a fork. Freeze until firm, about 15 minutes.
  • Cream butter and sugar in the bowl of an electric mixer until light and fluffy. Add egg, ground almonds, rum, almond extract, and flour; beat until smooth. Spread the thick mixture evenly in chilled tart shell and refrigerate while preparing pears.
  • Remove cooled poached pears from poaching liquid and cut in half lengthwise, removing the core and stem. Reserve poaching liquid. Place each half, cut side down, on a cutting board, and cut crosswise into thin slices. Arrange sliced pear halves on frangipane filling around edge of tart, leaving space between each half, and place one half in center of tart. When arranging pears, try to "pull" slices toward center of tart, which will elongate pears a bit and fill the shell better than if the pears were just placed flat. Bake for 10 minutes, reduce oven temperature to 400 degrees, and bake until tart shell is golden brown and frangipane has puffed and browned, 25 to 35 minutes more.
  • While tart is baking, bring reserved poaching liquid to a boil and reduce by half. Brush this glaze lightly over pears immediately after removing tart from oven. Serve at room temperature.

GINGERED WINTER FRUIT AMBROSIA

1/4 cup fresh lime juice
2 tablespoons mild honey or agave nectar
2 teaspoons finely minced or grated fresh ginger
2 pink grapefruit
2 ripe but firm pears
1/2 pound red grapes, cut in half
6 dates, pitted and halved or quartered
Seeds from 1 small pomegranate
1 tablespoon chia seeds (more to taste)
2 to 3 tablespoons finely grated coconut (to taste)

Steps:

  • Whisk together the lime juice, honey or agave nectar and ginger in a small bowl.
  • Cut away the peel and white pith from the grapefruit. The easiest way to do this is to cut the ends off, then stand on one end and cut away strips of skin and pith at the same time. Hold the grapefruit over your serving bowl and cut the sections away from the membranes that separate them. Place in the bowl.
  • Peel, core and dice the pears. Add to the grapefruit. Add the grapes, dates, pomegranate seeds and chia seeds. Stir the lime-ginger marinade and toss with the fruit. Chill for 30 minutes or longer and toss again.
  • Sprinkle the coconut over the top and serve.

2 tablespoons all-purpose flour, plus more for work surface
1 disk Pate Brisee for Woven Dried-Fruit Tart
1 cup blanched almonds
3/4 cup confectioners' sugar
1/2 cup (1 stick) unsalted butter, cold, cut up
1 large egg
1 teaspoon salt
1/2 teaspoon pure almond extract
1/2 cup apricot jam
8 large canned pear halves, well drained, patted dry, and thinly sliced lengthwise

Steps:

  • Preheat the oven to 375 degrees. On a lightly floured surface, roll dough to a 12-inch round. Fit dough into a 9-inch removable bottom tart pan lifting into and pressing up sides. Refrigerate while you prepare almond cream (frangipane).
  • In a food processor, pulse almonds and sugar until finely ground. Add butter, egg, flour, salt, and extract and process until well combined.
  • Spread 1/4 cup jam over bottom of tart shell. Spread almond filling over; chill 15 minutes. Arrange pear slices on top, fanning them out. Place on a rimmed baking sheet. Bake 40 to 45 minutes or until crust is golden brown and almond cream is puffed and set. Transfer to a wire rack and cool in the pan. Remove from pan. Melt remaining jam and brush over tart. Cool before serving.

2 1/4 cups unbleached all-purpose flour, plus more for dusting
1 teaspoon kosher salt
2 sticks (1 cup) cold unsalted butter, cut into 1/4-inch pieces
6 ounces cold cream cheese, cut into small pieces
3 to 4 tablespoons ice water
2 large eggs
2/3 cup plus 1 tablespoon granulated sugar
1/2 cup unbleached all-purpose flour
2 tablespoons fresh lemon juice
1/2 teaspoon kosher salt
1 stick (1/2 cup) plus 1 tablespoon unsalted butter
1 vanilla bean, split and seeds scraped
3 tablespoons finely grated fresh ginger
2 firm but ripe pears, such as Bosc, peeled and cut into 1/4-inch dice
Confectioners' sugar, for dusting

Steps:

  • Crust:Combine flour, salt, butter, and cream cheese in a food processor; pulse until pea-size clumps form.
  • With machine running, add water, 1 tablespoon at a time, until mixture just comes together when pressed in your hand. Divide in half; shape each half into a disk and wrap in plastic. Refrigerate until firm, about 45 minutes.
  • Filling:Whisk together eggs and 2/3 cup granulated sugar in a medium bowl until thick and pale yellow. Whisk in flour, lemon juice, and 1/4 teaspoon salt.
  • In a shallow saucepan, heat 1 stick butter, vanilla seeds, and ginger over medium-high until butter foams and browns, about 5 minutes. Strain through a fine sieve into bowl with egg mixture, discarding solids. Whisk until well combined.
  • Melt remaining 1 tablespoon butter in a medium skillet over medium-high heat. Add pears and remaining 1 tablespoon granulated sugar and 1/4 teaspoon salt; cook, stirring, until pears are soft, about 5 minutes. Let cool about 10 minutes. Fold pear mixture into egg mixture.
  • On a lightly floured surface, roll out one disk of dough to a scant 1/8 inch thick. Using a 5-inch round cutter or a paring knife, cut out 5 rounds. Repeat with remaining disk. Gently press rounds into 10 cups of a standard 12-cup muffin tin, making pleats around edges and gently pressing to seal. Fill each with 1/4 cup filling. Refrigerate until chilled, about 30 minutes.
  • Meanwhile, preheat oven to 375 degrees. Bake until crust and filling are golden brown, 35 to 40 minutes. Transfer tin to a wire rack; let cool about 20 minutes. Unmold; let pies cool completely on rack. Dust with confectioners' sugar before serving.

1 cup ripe pear, peeled, cored and thinly sliced (4-5 pears)
1/4 cup granulated sugar
2 tablespoons candied ginger, diced
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 lemon, juice and zest of
1 1/2 tablespoons cornstarch
1 refrigerated pie crust
1 cup whipping cream
2 tablespoons confectioners' sugar
1 teaspoon vanilla
Reynolds Wrap Foil
1 tablespoon butter, softened
2 tablespoons brown sugar
1 tablespoon honey
1/4 cup quick-cooking oatmeal
1/4 cup almonds, chopped
1 tablespoon honey
1/4 teaspoon very hot water

Steps:

  • Remove the piecrust from the refrigerator 20 minutes prior to beginning.
  • Preheat oven to 425 degrees F.
  • In a medium size bowl toss together the pears, sugar, ginger, cinnamon, nutmeg, lemon juice, lemon zest and corn starch. Set aside.
  • In a small mixing bowl mix together the topping ingredients and set aside.
  • Line a baking sheet with Reynolds Wrap Non-Stick foil.
  • Unroll the piecrust on the Non-Stick foil.
  • Stir the pear mixture, then, using a slotted spoon pile the mixture in the center of the piecrust, leaving approximately 2 inches around the edge. Leave the juice in the bowl for now.
  • Carefully fold the edges of the piecrust onto the pears, pinching the seams to ensure that they are sealed. The crust will not completely cover the pears, the center will be open.
  • Carefully pour the reserved pear juice onto the exposed pears, make sure there is no juice on the outside of the crust.
  • Distribute the topping on the exposed pears.
  • Bake at 425 degrees until crust is golden brown, 25 to 30 minutes.
  • While the tart is bakes, pour the cream into a large mixing bowl and whip until peaks start to form. Add vanilla and confections sugar and beat until stiff peaks form. Do not over beat, otherwise you'll have sweet butter ;=).
  • Once done, remove tart from the oven and brush the pastry with the honey and water mixture.
  • Cool at least 20 minutes.
  • Slice and top each dish with whipped cream before serving. ENJOY!

18 ounces frozen all-butter puff pastry, thawed in the refrigerator
All-purpose flour, for dusting
5 to 6 Bosc pears, peeled, halved, and cored
1 tablespoon fresh lemon juice
1 large egg
1/4 cup apricot jam
1 teaspoon Cognac

Steps:

  • Preheat oven to 425 degrees, with rack in the lower third. Unfold (if necessary) puff pastry on a lightly floured surface. Working quickly, roll out dough to a 17-by-13-inch rectangle, slightly less than 1/8 inch thick. Cut off a 1-inch wide strip from each side; set aside
  • Transfer puff pastry to a parchment paper-lined cookie sheet. Lightly brush a 1-inch border of water around the edges of the pastry. Score strips firmly, without cutting all the way through, in a zigzag pattern with a paring knife. Lay pastry strips on edges to create a border. Trim strips to fit, overlapping at corners. Press gently to adhere. Transfer to freezer for 10 minutes.
  • Thinly slice pears crosswise, and brush with lemon juice to prevent browning.
  • Within the borders of the pastry, use the tines of a fork to poke pastry all over, to prevent it from rising. Whisk together egg and 1 tablespoon water in a small bowl. Brush borders with egg glaze. Sprinkle 3 tablespoons sugar evenly within the borders of the pastry. Top with pear slices arranging in rows, filling in any holes with chopped pears. Press gently to flatten slightly. Sprinkle pears with remaining 2 tablespoons sugar. Freeze again for 10 minutes.
  • Bake tart for 10 minutes. Reduce oven to 375 degrees, and continue to bake until crust is puffed and deep golden brown and pears are tender, about 1 hour. If dough under pears begins to rise, use the tip of a paring knife to allow any air to escape. Transfer tart to a wire rack, and let cool completely.
  • Heat jelly with Cognac in a small saucepan until melted, stirring until smooth. Brush over pears. Serve the tart at room temperature.

3/4 cup whole blanched almonds (about 4 ounces)
1/2 cup (1 stick) unsalted butter, room temperature
1/2 cup sugar, plus more for sprinkling
1 large egg
2 tablespoons heavy cream
1/4 teaspoon pure almond extract
Almond Tart Shell
1 ripe but firm red Bartlett or Comice pear, cored and cut into 1/4-inch-thick slices
Vanilla-Bean Creme Anglaise for Pear Tart

Steps:

  • Preheat oven to 350 degrees. Spread almonds in a single layer on a rimmed baking sheet; toast in oven until light golden and fragrant, 7 to 10 minutes. Let cool completely, then finely grind in a food processor. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until light and fluffy, about 1 minute. Add almonds, egg, cream, and extract; beat until well combined, about 2 minutes.
  • Using a small offset spatula, spread filling in cooled tart shell. Arrange pear slices, overlapping them slightly, on top of filling. Generously sprinkle with sugar; place tart on a baking sheet. Bake until filling is slightly puffed and golden brown, about 35 minutes. Transfer to a wire rack to cool. Serve warm or at room temperature with creme anglaise on the side.

PEAR-GINGER PARFAIT

2 Bosc pears, peeled, cored, and cut into 1/3-inch pieces
Juice of 1 lemon
1 cinnamon stick
2 cloves
3 tablespoons candied ginger, minced, plus more for garnish
1/4 cup apple juice
1 tablespoon unsalted butter
1 cup heavy cream
4 ounces mascarpone
1/2 teaspoon vanilla extract
3 tablespoons maple syrup
Ginger cookie thins, for garnish

Steps:

  • In a small saucepan, combine pears, lemon juice, cinnamon stick, cloves, ginger, and apple juice. Bring to a boil, reduce heat to low, and simmer for about 4 minutes until pears are crisp-tender. Transfer to a bowl and let cool to room temperature.
  • Remove cinnamon stick and cloves before assembling the parfait.
  • In a large bowl, whip cream to soft peaks. In a separate bowl, mix mascarpone with vanilla and maple syrup and fold into cream.
  • Divide half the pears between 4 glasses and top with half the mascarpone mixture. Repeat layers with remaining pears and cream, and garnish with candied ginger and ginger cookies.

PEAR AND CHOCOLATE TART

4 cups water, approximately
Juice of 1 lemon
4 ripe pears
3/4 cup sugar
4 ounces bittersweet chocolate
3 tablespoons soft unsalted butter
2 large eggs
1/2 cup ground hazelnuts or almonds
3 tablespoons flour
1 9-inch tart shell, baked
1 cup heavy cream, whipped

Steps:

  • Place the water and lemon juice in a saucepan. Peel the pears, cut them in half and core them. As each is peeled and cored, place it in the saucepan, just covered with water.
  • Add one-half cup of the sugar, bring to a simmer and cook gently about 10 minutes, until the pears are just tender. Drain the pears and place them on several thicknesses of paper towel to continue draining.
  • Melt the chocolate over hot water or in a microwave oven. Beat in the butter a tablespoon at a time, then beat in the eggs.
  • Mix one-third cup of the hazelnuts or almonds with the flour and the remaining sugar and stir into the chocolate mixture.
  • Preheat oven to 350 degrees.
  • Sprinkle the remaining hazelnuts or almonds over the bottom of the baked tart shell. Cut each pear half into four thick slices and arrange the slices close together in the tart shell. Spread the chocolate mixture over the pears.
  • Bake 30 minutes. Serve warm or cooled to room temperature with whipped cream on the side.

This is a quick and easy dessert. It is the bomb. I love the combination of pears, almonds and candied ginger. I got this recipe from my aunt...it is too die for. Hope that you enjoy it as much as we have. We use a shortbread pie crust for this recipe, feel free to use your favorite.

4 pears, large, bartlett, peeled and quartered, cut 1 1/2 - 2-inch thick slices
3 tablespoons butter
1/2 cup sugar, brown

1 pie crust, unbaked
2 eggs, large
2/3 cup cream, hard (whipping cream)
6 tablespoons almonds, ground
4 teaspoons pear brandy (optional... may use pear nectar)
1 cup cream, whipped cream, garnish
1 teaspoon ginger, candied, shredded, garnish (optional)

Steps:

  • Preheat oven to 400 degrees.
  • Peel and slice pears,
  • Caramelize the pears in butter and 3 tbsps sugar. Cook until a nice golden brown and set aside to cool.
  • Arrange the cooled, caramelized pears nicely in the unbaked pie crust.
  • Blend together the eggs, remaining sugar, minced candied ginger, cream, ground almonds and pear brandy or nectar.
  • Pour the custard mixture over the pears and place in a preheated oven and bake for 25 - 30 minutes. (or until done)
  • Let rest for 10 minutes before serving -- this is equally as good cold as it is warm.
  • When ready garnish with a large dollop of whipped cream and sprinkle remaining shredded candied ginger overtop.
