ITALIAN MEATBALL SOUP WITH ORZO



Italian Meatball Soup with Orzo image

With pre-made meatballs, orzo pasta and a savoury fire roasted tomato broth, this Italian meatball soup is full of flavour.

2 Tbsp Olive oil
1 Cup diced yellow onion (1 medium onion)
1 Cup diced carrots (2 medium carrots)
3 cloves garlic (minced)
6 Cups chicken broth
1 15-oz can fire roasted tomatoes
2 tsp dried oregano
1 tsp dried basil
2 bay leaves
1 Pound fresh or frozen meatballs (about 1 inch diameter)
1 2-inch square parmesan rind (or ¼ cup shredded parmesan, plus more for garnish)
1 Cup orzo pasta (dry)
¼ Cup chopped italian parsley (plus more for garnish)
¼ Cup chopped basil (plus more for garnish)

Steps:

  • Add the olive oil, onions, carrots and garlic to a large pot and heat over medium heat until vegetables are beginning to soften, 5-7 minutes.
  • Add the chicken broth, tomatoes, oregano, basil, bay leaves, meatballs and parmesan rind. Increase heat to medium high and bring to a boil.
  • Once the liquid is boiling add the pasta and reduce heat to medium low. Cover and simmer for about 12 minutes, until pasta is el dente.
  • Remove the bay leaves and parmesan rind, add the chopped herbs and stir to combine. Season with salt and pepper to taste.
  • Serve immediately topped with additional chopped herbs and shredded parmesan.

1 large egg
2 tablespoons water
1/4 cup plain dried breadcrumbs
12 ounces lean ground turkey
1/4 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh Italian parsley
2 garlic cloves, minced
3/4 teaspoon salt
1/4 teaspoon ground black pepper
8 cups (or more) low-salt chicken broth
1 cup chopped peeled carrots
3/4 cup orzo (rice-shaped pasta)
4 cups coarsely chopped escarole (about 1/2 medium head)

Steps:

  • Whisk egg and 2 tablespoons water in medium bowl to blend. Mix in breadcrumbs; let stand 5 minutes. Add turkey, Parmesan cheese, parsley, garlic, salt, and pepper; gently stir to blend. Using wet hands, shape turkey mixture into 1 1/4-inch-diameter meatballs. Place on baking sheet; cover and chill 30 minutes.
  • Bring 8 cups chicken broth to boil in large pot. Add carrots and orzo; reduce heat to medium and simmer uncovered 8 minutes. Add turkey meatballs and simmer 10 minutes. Stir in chopped escarole and simmer until turkey meatballs, orzo, and escarole are tender, about 5 minutes longer. Season soup to taste with salt and pepper. (Can be made 2 hours ahead. Rewarm over medium heat, thinning with more broth if desired.)
  • Ladle soup into bowls and serve.

1 large egg, lightly beaten
1/4 cup dry breadcrumbs (fine)
1 teaspoon kosher salt
4 teaspoons lemon zest, divided (loosely packed)
1 teaspoon dried rosemary, divided (crushed)
3 tablespoons olive oil, divided
1 medium onion, chopped
3 carrots, thinly sliced
2 garlic cloves, minced
64 ounces chicken broth
5 -6 tablespoons lemon juice
3/4 cup orzo pasta
1/4 cup parmesan cheese, freshly grated
1/2 cup fresh flat leaf parsley

Steps:

  • Combine first 4 ingredients, 2 teaspoons lemon zest, and 1/2 teaspoons rosemary in a medium bowl. Shape into 30 (1-inch) meatballs (about 1 level tablespoons each).
  • Saute meatballs, in two batches, in 1 tablespoons hot oil per batch in a dutch oven over medium heat 3-4 minutes or until browned. Remove with a slotted spoon.
  • Saute onion and next 2 ingredients in remaining 1 tablespoons hot oil in dutch oven over medium-high heat 3-5 minutes or until tender. Stir in broth, lemon juice,and remaining 2 teaspoons zest and 1/2 teaspoons rosemary. Bring to a boil, stirring occasionally. Add orzo. Reduce heat to medium; simmer, stirring occasionally, 7 - 9 minutes or until pasta is almost tender.
  • Stir in meatballs; simmer, stirring occasionally, 5-7 minutes or until meatballs are thoroughly cooked. Add salt and pepper to taste. Top with cheese and parsley.

1 small onion
12 ounces ground pork
1 large egg, beaten
1 1/2 teaspoons fennel seeds, crushed
1/3 cup grated Parmigiano-Reggiano, plus more for serving
Kosher salt and freshly ground pepper
4 cups low-sodium chicken broth
2/3 cup orzo
2 tablespoons fresh lemon juice, plus wedges for serving
Extra-virgin olive oil and fresh dill sprigs, for serving

Steps:

  • Grate onion; squeeze out excess liquid. Transfer to a bowl (you should have 1/2 cup onion). Add pork, egg, fennel seeds, cheese, and 1/2 teaspoon salt; stir until just combined (do not overmix). With dampened hands, roll mixture into 24 balls, each about 1 1/2 inches in diameter.
  • In a medium pot, bring broth and 1 cup water to a boil. Add orzo; cook 5 minutes. Add meatballs, reduce heat to low, cover, and cook, stirring once, until cooked through, 6 to 7 minutes more. Stir in lemon juice; season to taste. Serve with a drizzle of oil, more cheese, pepper, dill, and lemon wedges.

This is one of the very first dishes I made when I first got married and it is one of our top favorite dishes. It is a comfort food for me. It's not a soup dish, it's thicker than soup.

1 lb frozen meatballs
1 onion, chopped
1 (14 ounce) can beef broth
1 cup uncooked orzo pasta
1 (14 ounce) can Italian-style diced tomatoes
grated parmesan cheese (optional)

Steps:

  • In a large skillet, saute onions in olive oil until tender.
  • Add beef broth, bring to a boil.
  • Stir in orzo, meatballs and tomatoes, return to a boil.
  • Cover & reduce to medium heat. Simmer for about 8 minutes.
  • Serve in bowls, sprinkle grated parmesan cheese ontop if desired.
