- Preheat oven to 400 degrees F.
- Cook bacon in a medium nonstick skillet over medium-low heat, until crispy and fat renders, about 10 minutes. Remove bacon with a slotted spoon to a paper towel-lined plate, reserving renderings in the skillet. Cook the onions and garlic in the pan drippings until brown, about 15 minutes. Let cool.
- Meanwhile, in a large bowl whisk the eggs, mustard, hot sauce, Worcestershire, cream, salt, and pepper. Add the meat, cheese, parsley, and cooked onion. Chop and add the bacon. Mix with a fork until evenly blended. Whisk the glaze ingredients together in a bowl.
- Dampen hands with water and on a foil-lined cookie sheet, pat mixture into a loaf shape. Bake until an instant-read thermometer inserted into the center of the loaf registers 155 degrees F, about 1 hour. Spread the glaze onto the meatloaf after about 50 minutes. Let loaf rest for at least 10 minutes before serving.

DAD'S MEATLOAF WITH TOMATO RELISH

- Preheat the oven to 350 degrees F.
- Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
- Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
- This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
- Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
- Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!

- Heat the oil in a fry pan, add the bacon, onion and garlic and cook over a moderate heat until the onion is softened.
- Remove from the heat.
- Mix the remaining ingredients and the onion, bacon mix together in a large bowl-I find this best done by hand.
- Place in a 9inch long by 3 inch wide and deep loaf dish, patting down very firmly and shaping the top nicely.
- Bake in a moderate oven for 1 1/2 hours, draining any accumulated fat about half way through.
- Mix the topping ingredients together, spread over the meatloaf and return to the oven for the final 30 minutes of cooking.
- Allow the meatloaf to stand about 10 minutes before slicing.

- Preheat an oven to 375 degrees F (190 degrees C).
- Combine ground beef, eggs and 2 tablespoons of ketchup in a large bowl. Mix well, then add bread crumbs, Parmesan cheese, garlic powder, salt, oregano, basil, pepper, and onion. Set mixture aside. Line the bottom of a 9x13 inch pan with bacon, widthwise. Place half of the meat mixture across the top of the bacon. Lay 3 of the 4 pieces of Cheddar cheese across the center of the meat, lengthwise. Cover the cheese with the second half of the meat mixture and mold the meat into a loaf shape. Pull the ends of the bacon up and around the loaf. Spread 1 tablespoon of ketchup thinly over the loaf.
- Bake in the preheated oven until no longer pink in the center, about 60 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from the oven.
- Cut the final piece of Cheddar cheese into slices and place on top of the meat loaf. Return the meat loaf to the oven and continue baking until the cheese is melted, about 5 minutes. Remove from the oven and allow the meat loaf to rest for 5 minutes before serving.

- Heat oven to 350°F. Line 9x5-inch loaf pan with foil; spray foil with cooking spray.
- In large bowl, mix bread and milk. Let stand 5 minutes to absorb milk. Add beef, all but 2 tablespoons of the bacon, the shredded cheese, relish, onion, garlic and egg. Mix until well combined. Shape mixture into 8x4-inch loaf. Place in pan.
- In small bowl, stir together Topping ingredients. Spread on top and sides of loaf. Top with reserved 2 tablespoons crumbled bacon.
- Bake uncovered 1 hour to 1 hour 15 minutes or until meat thermometer inserted in center of loaf reads 160°F. Cool 10 minutes.

- Combine ground beef, ground sausage, crushed crackers, ketchup, onion, eggs, onion powder, and garlic powder in a large bowl until mixed thoroughly, using your hands for best results. Form mixture into a loaf shape.

- ON PREP DAY Combine all of the ingredients and knead by hand (mix first in a large bowl, then turn out and knead) or in a stand mizer fitted with the dough hook, until the dough is elastic. It will be lumpy, of course, but the dough itself should be stretchy. Cover the bowl with plastic wrap and let the dough rise until it has doubled in size, about 1 hour in a warm room. Meanwhile, spray a 9 x 5-inch loaf pan with baking spray. Turn the dough out onto a lightly floured surface and pat it into a rough 8-inch square. Fold the top half to about the middle of the dough and press the edge down to secure it. Fold the top over again, this time to within about an inch or so of the bottom. Press the edge to seal. Now grab the bottom of the dough and pull it up to meet the dough roll you've created and seal the seam. Pinch the ends closed and place the dough, seam side down, in the prepared loaf pan. Cover the pan with plastic wrap and refrigerate the dough overnight or up to 24 hours before baking. The dough should be fully risen after about 6 hours, but a longer rest is good for it. ON BAKING DAY Take the pan out of the refrigerator and heat the oven to 350 degrees Fahrenheit. Put a rack in the center of the oven. Remove the plastic and bake the bread until it is richly browned and the internal temperature reaches 195 degrees Fahrenheit on an instant-read thermometer, about 55 minutes. - Heat oven to 200C/180C fan/gas 6. Heat the oil in a large saucepan and fry the onion and lardons until the onion is soft and the lardons are cooked through and golden at the edges. Remove from the heat and add the smoked paprika, breadcrumbs, mince, egg and half of the crushed garlic. Season and stir really well. Grease a 450g loaf tin with a little oil, then fill with the meat mixture. Spread 1 tbsp of the onion marmalade evenly over the top and place on a tray in the oven for 35-40 mins.
- Meanwhile, pour the passata into a saucepan over a low heat, add the remaining garlic, the rest of the onion marmalade and half of the basil. Season, stir and heat gently until ready to serve.

- Preheat the oven to 350°
- In a medium saute pan, heat the extra olive oil on med-high. Add garlic, onion, and carrot in oil and cook for 8-10 min or until soft.
- Add the Italian seasoning, salt, pepper, and tomato paste,
- Now goes in the Worcestershire sauce, Dijon mustard, and beef broth. Mix well and set aside to cool.
- In a large bowl mix the grass-fed beef, onion mixture, bread crumbs and egg.
- Lay out the bacon strips, barely overlapping each other
- Form the meat into a rectangle loaf to fit the bacon. Now wrap one side with the bacon then the other. You want them to slightly overlap each other.
- Move to a cooking sheet with a rack. Place seam-side down.
- Bake for 30 minutes. While the loaf is cooking, whisk all the glaze ingredients in a bowl.
- After 30 minutes up, turn the oven temp to 450°. Cook for 10 minutes.
- After 10 minutes, brush on ¾ of the glaze around the whole meatloaf.
- Bake for 10 - 15 minutes more or until the internal temp is 160°.
- Let the loaf rest for 10 minutes.
- Slice, and brush the remaining glaze on top if desired.

MEATLOAF WITH CHEDDAR, BACON, AND TOMATO RELISH

- Preheat the oven to 350°F.

- Fire up a lidded barbecue ready for indirect cooking (with the coals heaped to one side) so you can cook the fatty away from the high heat of the fire. Add a chunk of smoking wood to the fire for extra smokiness if you like.
- Begin by making the woven bacon blanket to enclose the fatty. Vertically line up 8 of the bacon slices next to each other on a flat baking sheet. Working left to right, fold every other slice in half upwards. Lay a slice horizontally across the centre of the vertical slices. Unfold the vertical slices back over the horizontal one then fold up the other set of vertical slices. Lay over another horizontal slice and unfold the folded ones. Repeat to form a neat interwoven blanket.
- Arrange the beef mince over the bacon in an even layer. Sprinkle over the barbecue spices and some seasoning. Sprinkle the cheese in a line down the centre, then dollop over the relish.
- Roll up the fatty as tightly as you can into a neat, fat, sausage shape. Take the fatty to the barbecue and rest on the grill bars, seam-side down, away from the fire. Lower the lid and cook gently for 35-40 minutes, using tongs to turn it a few times so it browns evenly. Use a digital probe thermometer to check the internal temperature. It is cooked when it reads 65-70°C. Let the fatty rest for a few minutes before carving into thick slices; stuff them into buns and eat like a burger, or have it on its own as a meatloaf.
