Melons and watercress make great summer dessert salads. If you cannot find any watercress, try some fresh mint instead.

- In a large bowl, whisk together lime juice, sugar, and ginger. Gradually add oil and season with salt and pepper to taste.
- Add watercress, watermelon, and cantaloupe to dressing and toss to coat. Transfer salad to plates, sprinkle with sliced almonds and serve immediately.

ENDIVE AND WATERCRESS SALAD WITH QUICK PICKLED RED ONIONS
Steps:
- In a small bowl, combine the onion, lemon juice, and a pinch of salt and pepper and set aside.
- Meanwhile, chop the endives in a cross-hatched fashion, beginning at the base and working to the point. Place the endive and watercress in a large bowl. With a slotted spoon, transfer the onion to the bowl of greens. Whisk the oil in a steady stream into the lemon juice, pour over the greens, and toss, until coated well.
- Divide the salad among 4 plates and crumble the goat cheese on top.
WATERCRESS SALAD WITH PORT-BRAISED FIGS AND PICKLED ONIONS
The peppery watercress and tangy onion are balanced by the sweet richness of the braised figs. It takes eight hours to pickle the onion, so be sure to plan ahead.

- Heat oil in large nonstick skillet over medium heat. Add onion and stir 1 minute to coat with oil. Add vinegar and sugar and stir until onion begins to soften slightly, about 3 minutes. Transfer onion to baking sheet or platter; spread in single layer. Sprinkle with salt. Cover and chill at least 8 hours or overnight (onion will turn pink). DO AHEAD: Can be made 2 days ahead. Keep chilled.
- Whisk red wine vinegar, 1/4 teaspoon salt, 1/8 teaspoon freshly ground black pepper, and sugar in small bowl. Gradually whisk in both oils. DO AHEAD: Vinaigrette can be made 1 day ahead. Cover and refrigerate. Bring to room temperature and rewhisk before using.
- Combine Port and figs in large saucepan. Bring to boil. Reduce heat to medium-low and simmer until figs are plump and tender, about 30 minutes. Using slotted spoon, transfer figs to small bowl. Increase heat to medium-high and boil Port syrup until thickened and reduced to 6 tablespoons, about 8 minutes. Transfer syrup to another small bowl. DO AHEAD: Can be made 2 days ahead. Cover figs and Port syrup separately and chill.
- Combine endive, and pickled onion Toss salad with vinaigrette Port syrup over each salad among plates. Sprinkle salads and serve.
MAHI MAHI WITH WATERCRESS AND ARUGULA SALAD WITH MELON AND PICKLED ONIONS

- Preheat oven to 450 degrees F.
- In a small bowl whisk together lime, vinegar and sugar. Pour 1/2 of the dressing in a small container and set aside. Place onions in a shallow dish, add remaining dressing, and let stand 30 minutes or overnight.
- Season fish with salt and pepper and drizzle with 1 teaspoon of the olive oil. Place the fish, skin side down, in a non-stick pan with an oven proof handle. Bake until fish is cooked through, about 12 to 15 minutes. Cut fish into 4 pieces and place 1 piece on each serving dish.
- Place watercress, arugula and melon in a large salad bowl. Toss with the remaining 1 teaspoon extra-virgin olive oil and sprinkle with salt. Add reserved dressing. Toss to combine. Divide dressed greens and melon among plates. Garnish with pickled onion rings.

MELON AND HEIRLOOM TOMATO SALAD WITH PICKLED WATERMELON AND MELON SHOT
Refreshing, light, and vegetarian, this dish by Luce Chef Dominique Crenn incorporates two of summer's best ingredients -- melons and tomatoes. The pickled watermelon must be salted overnight, so plan accordingly. This makes for a great first-course or light lunch.

- To prepare pickled watermelon rind: Trim off skin, and cut rind into 1-inch cubes. Sprinkle pickling salt over rinds and refrigerate overnight.
- The next day, rinse the rind, and drain well. Cover rind with cold water in a large saucepan. Cook on medium heat just until tender.
- In another pan, heat sugar and vinegar to a boil. Tie mustard seeds, cinnamon and clove in a cheesecloth. Place in the sugar-vinegar mixture to infuse it. Add watermelon rinds, and simmer about 35 to 50 minutes until rind is transparent. Remove spice bag, and let rinds cool in the mixture.
- To prepare melon shots: Peel and slice Galia melons. Place melon in a blender with mint leaves and lime juice. Blend until smooth. Pour mixture through a coffee filter or sieve. Refrigerate until serving.
- To prepare the salad: Using a small melon ball scoop, make melon balls from the Charentais melons. With a small cylindrical cookie cutter, cut small cylinders from the watermelon. Alternatively, you can use a melon ball scoop to make small balls instead.
- In a bowl, mix melon balls and cylinders with orange juice, as well as orange and lime zests, to taste.
- In another bowl, toss tomatoes with basil, mint, olive oil, balsamic syrup, sea salt, and pepper.
- To serve: Mix together melon balls and tomato salad. Place in the center of a serving plate. Arrange pickled watermelon rinds around the melon-salad mixture. Pour chilled melon juice into shot glasses or martini glasses. Serve.
MELON BOWLS WITH PROSCIUTTO AND WATERCRESS SALAD

- Preheat oven to 325 degrees. Arrange prosciutto in one layer on a wire rack set over a rimmed baking sheet. Bake until crisp, about 20 minutes. Let cool. Coarsely chop half the prosciutto; set aside.
- Halve melons, and discard seeds. Drizzle 3 tablespoons vinaigrette over watercress, onion, tomatoes, chopped prosciutto, and basil in a bowl. Season with salt and pepper, and toss well. Divide salad among melon halves, and serve with remaining prosciutto slices.

- In a large bowl combine melon pieces and radish slices; set aside. In a mini food processor combine the 1/4 cup watercress and honey. Cover and process until almost smooth. Or finely chop watercress and stir in honey.
