3 (6-ounce) cans light tuna in water, drained
1/3 cup light mayonnaise
3 tablespoons seasoned dry bread crumbs
2 tablespoons chopped fresh parsley leaves
1 teaspoon Dijon mustard
1 teaspoon hot sauce
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon olive oil
4 hamburger buns or Kaiser rolls
1 beefsteak tomato, sliced
1/4 cup thinly sliced sweet pickles (such as gherkins)

Steps:

  • In a large bowl, combine the tuna, mayonnaise, bread crumbs, parsley, mustard, hot sauce, salt, and pepper. Mix well and shape the mixture into four equal patties, each about 1-inch thick.
  • If you're stopping here:
  • Wrap the burgers tightly in plastic wrap and refrigerate up to 3 days or freeze up to 3 months. Thaw completely in the refrigerator or microwave for 3 to 4 minutes on LOW before cooking.
  • When you're ready to eat:
  • Heat the oil in a large skillet over medium heat. Unwrap the burgers and cook until golden brown and heated through, 3 to 5 minutes per side. Serve the burgers on buns with sliced tomato and pickles.

1 1/2 pounds ahi or blue fin tuna
2 teaspoons lime zest plus 1/4 cup freshly squeezed lime juice
3 tablespoons chipotle adobo sauce
1 tablespoon chopped chives
1 clove garlic, minced
Kosher salt and freshly ground black pepper
Olive oil, for cooking
6 brioche buns, split
1/2 cup sour cream
1/2 cup mayonnaise
3 tablespoons chipotle adobo sauce
3 tablespoons apple cider vinegar
2 tablespoons agave nectar
2 tablespoons freshly squeezed lime juice
2 teaspoons Dijon mustard
Kosher salt and freshly ground black pepper
3 cups shredded green and red cabbage
1/2 cup shredded carrots
1/4 cup shredded kale

Steps:

  • For the burgers: Mince the tuna in a food processor.
  • In a large bowl, add the lime zest and juice, chipotle adobo, chives, garlic and minced tuna and mix until combined. Season with salt and pepper. Shape the tuna mix into 1/2-inch-thick patties and refrigerate for about an hour. This will help the patties stay intact and not crumble when cooking.
  • For the chipotle slaw: In a medium bowl, add the sour cream, mayonnaise, chipotle adobo, vinegar, agave, lime juice and mustard and mix until combined. Season with salt and pepper. Add the green and red cabbage, carrots and kale and toss together. Refrigerate for later.
  • Heat a heavy nonstick skillet or griddle over medium-high heat. Drizzle the skillet with olive oil. Place 3 patties in the skillet and sear for 2 to 3 minutes on each side. Repeat with the remaining patties.
  • To serve, place each patty on a bottom bun half and top with some chipotle slaw and a bun top.

1 egg
½ cup dry bread crumbs
¾ teaspoon garlic salt
1 teaspoon ground black pepper
½ cup diced tomatoes, drained
¼ cup minced onion

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a baking sheet with cooking spray.
  • Mix tuna, egg, bread crumbs, garlic salt, and black pepper and fold in diced tomatoes and onion. Form the mixture into 4 patties and place onto prepared baking sheet.

1 (6 1/2 ounce) can tuna
1 egg
14 Ritz crackers (or about 1/2 cup breadcrumbs)
1 medium carrot, shredded
1/3 cup shredded cheddar cheese

Steps:

  • If you'd like to, run your carrots through a food processor so they aren't identifiable in the finished patties.
  • Blend all ingredients together in a bowl, and form 3-4 patties. Preheat your ovens broiler.
  • Broil for 4 minutes on one side, flip, and broil for 3 minutes more. Add a slice of cheese if desired, and broil 1 minute more.

2 (6 1/2 ounce) cans tuna in water, drained
2 eggs, beaten
1 carrot, scraped and finely grated
1/4 cup italian-style seasoned dry bread crumb
1 green onion, finely sliced
2 tablespoons chopped flat leaf parsley
1 pinch cayenne pepper
4 teaspoons olive oil
4 hamburger buns

Steps:

  • In a mixing bowl, combine tuna, eggs, carrot, breadcrumbs, onion, parsley and cayenne; shape mixture into four patties.
  • In a large skillet, heat olive oil over medium heat.
  • Saute tuna patties for four to five minutes on each side; turn carefully as they easily fall apart.
  • Serve on hamburger buns (really nice if toasted) with your choice of condiments; I recommend lettuce leaves and mayonnaise.

1 onion, finely chopped
1 tablespoon olive oil
2 garlic cloves, crushed
1 small piece ginger, peeled and grated (about1 inch piece)
salt
black pepper, freshly ground
675 g ground lamb (1.5 lbs ground lamb mince)
1/4 cup fresh mint leaves, finely chopped (one handful of leaves)
extra vegetable oil (for frying)

Steps:

  • Heat the olive oil over low heat.
  • Add the onion and cook for 5 minutes until soft.
  • Add the garlic, ginger some salt and pepper. No need to cook these off,but you can cook for a further one minute if wished.
  • Remove from the heat and allow to cool.
  • Add the lamb mince to a large bowl along with the cooled onions and the mint. Season again and mix until thoroughly combined.
  • Roll large balls of the mixtureand flatten to make burger/patties.
  • Sit the patties on a plate and chill in the fridge until firm, if time permits.
  • Shallow fry the burger patties in a little vegetable oil. Fry 6-7 minutes each side, or until cooked through. You can also cook on a grill/griddle pan or barbeque.
  • Serve hot on a roll or with veges or salad on the side.

Remoulade sauce
1/2 cup mayonnaise
1 tablespoon fresh lemon juice
1 garlic clove, pressed
1 teaspoon (packed) minced fresh Italian parsley
1 teaspoon grated onion
1 teaspoon anchovy paste
2 hard-boiled large egg yolks
1/4 cup extra-virgin olive oil
2 tablespoons drained capers
Burgers
1/4 cup olive oil
2 tablespoons tarragon vinegar
2 small bay leaves, broken
4 6-ounce ahi tuna steaks (each about 1 inch thick)
Nonstick vegetable oil spray
4 4-inch square crusty artisanal rolls or squares of focaccia, split horizontally

Steps:

  • For sauce:
  • Whisk first 6 ingredients in bowl to blend. Using fine grater, grate in egg yolks. Whisk in oil, then capers. Season with salt and pepper.
  • Do ahead: Can be made 1 day ahead. Cover and chill.
  • For burgers:
  • Combine oil, vinegar, and bay leaves in large heavy-duty resealable plastic bag. Shake to blend. Add tuna. Seal bag; turn to coat. Chill at least 1 hour and up to 2 hours, turning bag occasionally.
  • Spray grill rack with nonstick spray and prepare barbecue (medium-high heat). Brush cut sides of rolls with some of tuna marinade. Grill rolls, cut side down, until golden, about 2 minutes. Transfer rolls to work surface. Grill tuna, with some marinade still clinging, until slightly charred but still pink in center, about 2 1/2 minutes per side.
  • Place tuna on roll bottoms. Top with dollop of sauce, then roll tops. Serve, passing remaining sauce separately.

750 g salmon fillets, skin removed
1 onion, finely chopped
2 stalks celery
3 tablespoons corn
3 1/2 tablespoons mayonnaise
1 tablespoon lemon juice
1 1/2 tablespoons Worcestershire sauce
1 1/2 teaspoons paprika
5 dashes Tabasco sauce
1 tablespoon fresh dill, chopped
1 tablespoon fresh parsley, chopped
1 egg
1 1/2 cups panko breadcrumbs, flakes (Japanese breadcrumbs, can use regular crumbs, I love panko as it makes things more crispy than regul)
300 ml plain yogurt
1 1/2 tablespoons of fresh mint, chopped
1 teaspoon parsley, chopped
1 teaspoon fresh tarragon, chopped
1 tablespoon lemon juice
1 teaspoon lemon zest

Steps:

  • In a large pan bring salted water to boil (enough to submerge salmon in). Turn heat down to medium and boil for about 8-10 Min's, don't worry if it's not totally cooked as you will be frying patties later.
  • In a large bowl flake salmon, add all the other ingredients except egg and panko. Mix to combine try not to over mix. Add egg and if using panko flakes add 1 cup and reserve 1/2 cup for coating the outside of the patties. If using regular breadcrumbs you can add the whole 11/2 cups now.
  • Shape into patties makes about 8 smaller patties (2 per person) if serving by themselves with sauce and salad and 6 large burgers if doing in burger buns. If making with panko just lightly coat the outside of each Pattie with some of the reserved panko flakes.
  • Heat some oil in a fry pan and cook each side until golden brown and crisp about 4-5 Min's a side.
  • Yogurt sauce.
  • Combine all the ingredients. I like to make this an hour or two ahead of time to allow the herbs to infuse the yogurt.
  • Serve patties atop salad greens and drizzle yogurt sauce.
