- If you have a mortar and pestle, use it to mash the garlic and the oregano. Combine the vinegar to the garlic and oregano.Note: If you do not have a mortar and pestle, add the garlic, oregano and vinegar to a blender and blend until smooth.
- Using a mallet, pound the meat to about an 1/8 of an inch.
- Add the cube steaks to a bowl and season on both sides with adobo.
- Add the garlic, oregano and vinegar blend. Add the oil.Stir and cover steaks well with marinade on all sides.Marinate for at least 30 minutes to 2 hrs.
- In a skillet over medium high heat, add the cube steak and the marinade.Cover the pan and cook for a few minutes stirring occasionally, about 15 minutes.
- While steak is cooking, slice the onions.Add onions midway into cooking and cook until onions are translucent.
- Steak is done.Serve with white or yellow rice.Drizzle steaks with sauce from pan.

- Preheat the oven to 350 degrees F. Heat the butter and oil in a skillet over medium-high heat. Add the cube steaks and cook until browned on both sides. Place the browned cube steaks in a baking dish. Top the cube steaks with the green chiles and taco sauce. Cover the baking dish and place in the oven. Bake at 350 degrees F for 40 minutes. Remove the cover and sprinkle the cube steaks with the cheese. Return the baking dish to the oven and bake for 5 more minutes or until the cheese is melted. Serve hot.

- Heat Olive Oil in skillet and brown pork cubes in oil, liberally spice with garlic powder.
- DO NOT DRAIN.
- Add all vegetables, spice with garlic, salt, pepper, chile powder and hot sauce to your preference of"hotness".
- Cover and cook about 15-20 minutes , don't over cook the vegies!
- Serve over rice or just by itself.
- Be creative, add other vegies that you like.

- In a large bowl, combine the orange juice, vinegar, garlic and seasonings; add the beef. Turn to coat; set aside. In a skillet, saute onion and peppers in 1 tablespoon oil until crisp-tender; remove and set aside., Drain and discard marinade. My boyfriend is from Mexico and he whipped this up one night and it turned out great. Beef, onions, garlic and peppers cooked in a delicious salsa verde sauce. Serve with rice, beans and tortillas. You may also add some sour cream to the sauce to make it creamier or add it after as a garnish.

- Heat olive oil in a large skillet over medium-high heat. Add the onion, and cook for a few minutes, then stir in the beef, and garlic. Cook, stirring frequently until meat is evenly browned.

CUBE STEAKS PARMIGIANA
This recipe was adapted from one that came from Sarah Befort in Hays, Kansas, and was published in Taste of Home.

Steps:
- Preheat oven to 375 degrees F; pan spray a 13x9x2-inch baking dish.
- In a large shallow dish, combine the flour, salt, and pepper.
- Crack the eggs into a small bowl, add the water, and beat well; pour into shallow dish.
- In another bowl, combine the crushed crackers, 1/3 cup grated Parmesan, and 1/2 teaspoon basil; stir well, then pour into shallow dish.
- Dredge each steak in the flour mixture, coating well, then in the eggs, then in the cracker mixture, gently patting the coating onto the meat.
- Heat a large skillet over medium high heat, add the oil, and saute the coated steaks until browned, about 3 minutes per side.
- Place the browned steaks in the sprayed baking dish and bake uncovered at 375 degrees F for 25 minutes (leave the oven on when done).
- In a bowl combine the tomato sauce, brown sugar, onion, half of the oregano, remaining basil, and garlic.
- Spoon tomato mixture over the steaks and return them to the oven to bake for an additional 10 minutes.
- Top each steak with a generous slice of mozzarella, sprinkle with the freshly grated (shredded is good, too) Parmesan, and sprinkle with the remaining oregano.
- Bake for about 3 minuntes until cheese are melted to your preference.
- Serve with lightly buttered fettuccini or fettuccini Alfredo, a nice green salad, and garlic bread.
