MEXICAN HAYSTACKS



Mexican Haystacks image

These Mexican Haystacks are a twist on the classic haystacks but with all the Mexican fixings!

3 cups uncooked rice
1 lb ground beef
1 (1 oz) package Old El Paso taco seasoning
3/4 cup water
1 (8 oz) package cream cheese, softened
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can corn
Toppings: diced avocado, shredded cheese, sour cream, cilantro, salsa, corn chips

Steps:

  • Cook rice according to package instructions.
  • In a large skillet, brown beef until no longer pink. Drain. Add taco seasoning and water. Cook for a couple of minutes or until the sauce thickens.
  • Add the cream cheese and stir until melted. Add a tablespoon of milk or water at a time until desired consistency is reached.
  • To serve, place 1 cup of rice on a plate and top with meat, black beans, corn and whatever toppings you desire.

1.5 lb hamburger (93/7%)
1 15 oz Southwestern Bean Salad (do not drain or a can of kidney beans or black beans)
1 oz. taco seasoning
1 4 oz. can green chiles
8 oz. tomato sauce
lime cilantro rice
lettuce
cheese
pico de gallo
green onions
black olives
avocados
sour cream

Steps:

  • Brown hamburger in a large non stick frying pan over medium heat.
  • Break meat into small pieces and cook until meat is cooked through. Drain off excess grease.
  • Add in taco seasoning, stir to incorporate.
  • Add in tomato sauce, green chiles and beans. Allow to bubble and stir until it thickens up, about 5 minutes.
  • Serve over rice with a selection of toppings.

⅓ cup unsweetened cocoa powder
½ cup milk
½ cup butter
3 ½ cups quick cooking oats
1 cup flaked coconut
½ cup chopped peanuts
1 pinch salt

Steps:

  • In a saucepan bring sugar, cocoa, milk and butter or margarine to a boil. Remove from heat.
  • Stir in oats, coconut, nuts and salt. Drop quickly from teaspoon on wax paper. Let cool.

2 cups kidney beans, cooked
1 teaspoon salt
2 tablespoons chili powder
1 teaspoon ground black pepper
1 (14.5 ounce) package corn tortilla chips
1 head iceberg lettuce - rinsed, dried, and shredded
2 large tomatoes, chopped
1 green bell pepper, chopped
1 onion, chopped
1 (10 ounce) can chopped black olives
1 carrot, shredded
1 cup shredded Cheddar cheese
½ cup sour cream
1 cup salsa

Steps:

  • In a medium saucepan, combine the kidney beans, salt, chili powder and pepper. Cook over medium heat until heated through.
  • To assemble the haystacks put a hand full of corn chips on a plate, follow with a spoonful of heated bean mixture, lettuce, tomato, green pepper, onions, olives, carrot, and cheddar cheese. Top with salsa and sour cream.

2/3 cup sour cream
3 thinly sliced green onions
2 tablespoons oil-packed sun-dried tomatoes, chopped
2 tablespoons minced fresh cilantro
2-1/2 teaspoons Tex-Mex seasoning, divided
1 package (3-1/2 cups) refrigerated shredded hash brown potatoes
1/2 cup panko bread crumbs
1/3 cup shredded Mexican cheese blend
1/4 teaspoon salt
5 tablespoons canola oil, divided
6 large eggs
1/2 cup salsa
4 cooked bacon strips, coarsely chopped
Finely chopped green onions, optional

Steps:

  • Combine sour cream, green onions, sun-dried tomatoes, cilantro, and 1/2 teaspoon Tex-Mex seasoning; set aside., Squeeze hash brown potatoes dry with paper towel to remove excess liquid. In a large bowl, combine potatoes, bread crumbs, cheese, salt and remaining Tex-Mex seasoning., On an electric griddle, heat 3 tablespoons oil over medium-high heat. Drop potato mixture by 2/3 cupfuls into oil; press to flatten slightly. Fry, adding oil as needed, until crisp and golden brown, 5-7 minutes. Drain on paper towels; keep warm., On same griddle, heat remaining oil over medium heat. Break eggs, one at a time, onto griddle. Reduce heat; cook until whites are set and yolks have begun to thicken. Flip eggs if desired; cook to desired doneness., To assemble, top each potato patty with an egg, salsa, bacon and sour cream mixture. If desired, sprinkle with green onions.

My wife used to run a daycare in our home. This is one of the recipes that we were given to use of meals for the kids. It's really easy to jazz up using a packet of taco seasoning for the hamburger, adding more veggies or even using a mexican styled rice instead of plain white. One serving is 1.5oz meat 1/4 cup veggies and a serving of bread for a 3-5yo

2 cups cooked rice
1 cup cheddar cheese, shredded
2 cups tomatoes, chopped

  • Divide equally and layer on 8 plates in the following order Rice, hamburger, tomatoes, lettuce, shredded cheese, sourcrean and tortilla chips.

2 cups uncooked brown rice
1 bunch fresh cilantro
1 1/2 lbs ground turkey
1 onion, chopped
1 tablespoon garlic powder
salt & pepper
2 cups salsa (I used Kirkland organic salsa from Costco)
1 -2 avocado, chopped
1 red pepper, chopped
1 ripe mango, chopped
fresh cilantro (to garnish)

Steps:

  • Start your brown rice in a pot on the stove, or in a rice maker. Next, add ground turkey and chopped onion to a large saute pan. Add garlic powder and salt and pepper. When the turkey is browned, add 4 cups of salsa. Bring the salsa to a boil and then reduce the heat to a simmer. Cover and simmer for about 20 minutes. In the meantime, chop the cilantro, pepper, avocado, and mango. When the rice is done, simply stir in almost all of the fresh cilantro, leaving just enough to garnish each dish.
  • Stack everything up and serve.
