Steps:
- In 12-inch skillet, heat oil over medium-high heat. Cook onions and garlic in oil 3 minutes, stirring occasionally, until tender. Add beef; cook 5 to 7 minutes, stirring occasionally, until thoroughly cooked. Drain.
- Stir in chili powder, cumin and salt. Add cooked rice, beans and tomatoes; cook over medium heat 2 minutes, stirring occasionally, until thoroughly heated.
- Sprinkle with cheese. Cover; remove from heat. Let stand 1 minute or until cheese is melted. Garnish with cilantro.

MEXICAN FUDGE
My sister brought this recipe home from her middle school Spanish class for the Day of the Dead - fudge with the traditional Mexican twist of added cinnamon. I did not include cooling in the cooking time.

- Preheat electric skillet to 280 degrees F.
- Quickly add first five ingredients.
- Stir constantly until mixture comes to a full boil. Continue to stir while it boils for five minutes.
- Unplug the skillet.
- Add marshmallows, chocolate chips, and vanilla.
- Stir until blended and pour into a greased pie pan.
- Cool before cutting.

MEXICAN FUDGE APPETIZER
I have served this appetizer many times to rave reviews! (one time I never made it out of the kitchen at a party--it was eaten by the kitchen "crew"!) Can be served warm or cold.

Steps:
- In a large bowl, mix cheeses together.
- Put 1/2 the cheese mixture in a greased 9X9" pan.
- In a different bowl, mix the eggs and salsa together.
- Pour this mixture on top of the cheese in the pan.
- Sprinkle the remaining cheese on top and bake at 350F for 30 minutes.
- Cool and cut into squares to serve.
- Tastes great cold.

TURTLE FUDGE SKILLET CAKE
This turtle fudge skillet cake is great for a sweet tooth! Serve with vanilla ice cream, if desired.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour the bottom and sides of a 12-inch stainless steel, oven-safe skillet with shortening and flour, tapping out any excess flour.
- Combine cake mix, water, eggs, and oil in a large bowl; beat with an electric mixer on low speed until moistened. Increase speed to medium and beat for 2 minutes, scraping bowl occasionally. Pour batter into the bottom of the prepared skillet.
- Bake, uncovered, in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes.
- Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen and carefully invert onto a large round platter. Let cool, about 30 minutes.
- Meanwhile, combine 1/2 of the caramel topping with the baking chocolate in a microwave-safe bowl. Microwave, uncovered, on high until chocolate is melted, about 30 to 60 seconds. Stir mixture until combined and smooth; carefully spread over the cake.
- Sprinkle cake with pecans and drizzle remaining caramel topping over top. Let stand until topping is set. Cut into wedges to serve.

SKILLET MEXICAN STREET CORN
This fast to prepare side dish takes on the flavors of elote, a popular Mexican favorite!

- Heat a 14-inch skillet over medium-high heat. Add olive oil and swirl to coat the bottom of the skillet. Spread frozen corn evenly across the skillet; do not stir. Cook corn for approximately 8 minutes.
- Meanwhile, combine mayonnaise, sour cream, lime juice, cumin, paprika, chili powder, salt, and coriander in a large bowl. Set aside.
- Check the corn; it should be slightly charred. If not, allow to continue cooking for 4 more minutes (stirring is fine at this point.)
- Once corn is sufficiently browned/charred, transfer to the bowl with dressing and toss to coat. Add cotija cheese, red onion, and cilantro and mix until well combined. Serve immediately.

MEXICAN SKILLET FUDGE
This recipe came from a women's magazine around 1960. It's been a family signature since a friend gave it to momma that many years ago. So far as I know, I'm the only one who still makes it... which is a shame! Friends who don't even like fudge ask me when I'm making it again. At church I'm known as 'the Fudge Lady' and it's just expected that I'll make this whenever there is a need to bring food. Even if the fudge is a little soft (roll it in crushed walnuts, or as my husband suggested, nuke for Hot Fudge Sundae sauce) or a bit hard, it's still smooth and excellent! So says the fans, anyway.

- Prep: butter one or two 7x11 biscut pan(s), or whatever size pan you have available. Obviously, the larger the pan, the thinner the finished product (which could be a good thing!). (update: I like to sprinkle a drop or two of water in the pan, then line it with plastic wrap, instead of the butter. Easier to remove the fudge.
- In an electric skillet, add the sugar, cinnamon and salt. Stir to combine. Add butter and milk, then stir again. Set skillet temp to the mark between 320 and 350. Stir frequently.
- When the syrup begins to bubble around the heat ring set digital timer to 5 minutes. Stir constantly, especially around the heat ring. I use a silicon spatula.
- After 5 minutes, turn temp to warm. Add vanilla. Stir. Add marshmallows and chips. Stir until both are melted. Remember to turn off the skillet!
- Pour (or spoon) into prepared pan. Let cool until almost set, then cut into desired size.
