MICROWAVE CHOCOLATE CAKE
Edwina Hanslo's delicious and super quick chocolate cake with a creamy ganache is the perfect choice for busy mums

- Grease a 22cm silicone microwaveable cake pan with a little oil and place a circle of baking parchment in the bottom.
- Mix the sugar, flour, cocoa and baking powder in a bowl. In a jug, whisk the oil, eggs, vanilla and 100ml hot water until combined.
- Add the liquid ingredients to the dry ingredients and mix thoroughly until you have a lump-free batter. Pour the mixture into the cake pan and gently tap to pop any air bubbles. Cover with cling film.
- Microwave on Full power (800 watts) for 7 mins. Remove and check if the cake is cooked by poking a skewer into the middle: if it comes out clean, the cake is ready. Allow the cake to stand for 5 mins, then remove the cling film and turn out onto a cooling rack.
- For the ganache, melt the chocolate on Half power (600 watts) for approximately 2 mins, stirring every 30 secs until melted. Add the cream and mix thoroughly until smooth and glossy.
- Once the cake is cool, spread over the ganache and scatter with the sprinkles. The cake will keep for up to 3 days in an airtight container.

EASY MICROWAVE CHOCOLATE CAKE
This is a quick and easy chocolate cake you can cook in the microwave in 2 minutes. And it tastes great. Really! The consistency is dense and cakey. It would go well with chocolate (or your favorite) chips, nuts, or served warm with hot fudge. This cake, 'born' out of a pregnancy craving, worked out amazingly!

- Spray a medium microwave-safe bowl with non-stick spray and set aside. In a mixing bowl, combine the butter, sugar, egg, vanilla extract, and milk; blend together. Combine the flour, cocoa powder, baking powder and salt; blend into the mixture until smooth. Pour into greased bowl.
- Cover and cook in the microwave on high for 2 to 2 1/2 minutes, or until cake springs back when touched. Since all microwaves cook differently, adjust the cooking time to accommodate your machine. To serve, let the cake cool five minutes, then cover the bowl with a plate and turn both bowl and plate upside down so the cake falls onto the plate.

SUPER FAST AND EASY MICROWAVE CHOCOLATE PUDDING
I'm mostly posting this so I don't have to go hunting for it every time I want to make it. My mom gave it to me ages ago, and while it isn't the most life changing pudding in the universe it's rediculously fast to make, can be easily varried a number of ways to suit your mood and is plenty tasty for those nights when you want pudding NOW! I like to use a shallow glass container so that it cooks faster. You can leave out the chocolate for vanilla pudding. I like to make it with Silk Nog Soymilk around the hollidays.

- In a 4 cup microwave safe glass container combine dry stuff, then stir in the wet stuff.
- Cook on high for 2 minutes, then whisk the mixture.
- Cook on high one more minute at a time, whisking after each minute, until thickened.
- Once it's almost thick, you should go for 15- 30 seconds at a time.
- Allow to cool if you can wait!

- Butter four 8-ounce ramekins. In food processor, finely grind chocolate. Add butter and sugar and process until thoroughly combined. Add flour, 1/4 cup of heavy cream, eggs, vanilla, cinnamon, baking powder, salt, and cloves, and process until smooth.
- Divide mixture evenly among ramekins and cover tightly with plastic wrap. (Batter can be made ahead and regfrigerated in ramekins, covered with plastic wrap, up to 6 hours.)
- Leaving plastic wrap in place, microwave ramekins on high for 1 minute 20 seconds. Remove from microwave and pierce plastic wrap with tip of sharp knife. Cover each ramekin with heavy plate and let stand, steaming, 7 minutes.
- While cakes are steaming, beat remaining 1/2 cup cream in large bowl until foamy and slightly opaque. Add confectioner's sugar and beat until soft peaks form.
- Remove plate and plastic wrap from each ramekin. Invert each cake onto individual serving plate and unmold. Top each with dollop of whipped cream, sprinkle with additional cinnamon, and serve.

QUICK LOW CARB CHOCOLATE PUDDING CAKE IN A MICROWAVE MUG
Blend ingredients and then microwave it for 45 seconds. So fast it is too easy to overcook, so watch for that. Great taste for chocolate or dessert cravings when I'm low carb dieting. I want to try this with almond flour in place of cocoa.

Steps:
- Mix together milk, salt and cornstarch in microwave safe bowl.
- Stir in chocolate chips.
- Put in microwave uncovered for 40 seconds on HIGH.
- Stir until chips are well melted& blended.
- Heat another 30 seconds.
- Keep a close eye on it so it doesn't bubble over.
- At this point if it has not thickened, (will depend on wattage of microwave) keep going for 20 seconds intervals, stirring between each one until thickened.
- Do keep an eye on it at all times.
- Eat it right away (which is the way I like it) or let it cool.
