STRAWBERRY SUNDAE SAUCE

1 pound fresh strawberries, stemmed and halved
1/2 cup granulated sugar
Pinch table salt
1 tablespoon cornstarch
1 teaspoon lemon zest plus 2 teaspoons fresh lemon juice
Ice cream, for serving
Crushed salted peanuts, for topping

Steps:

  • Add the strawberries, sugar and salt to a small saucepan. Mix the cornstarch with 1/2 cup water in a small bowl and add it to the saucepan. Slowly heat the mixture over medium heat, stirring constantly, until it comes to a simmer, about 5 minutes. Lower the heat so it's at a very gentle simmer and cook, stirring frequently, until the sauce thickens, about 20 minutes. Remove from the heat, stir in the lemon zest and juice and let cool.
  • Serve over ice cream with salted peanuts on top.

1/2 cup (1 stick) unsalted butter, at room temperature, plus more for buttering the pan
1 cup part-skim ricotta, at room temperature
1 cup sugar
3 large eggs, at room temperature
3 teaspoons lemon zest (from 3 lemons) plus 1/4 cup freshly squeezed lemon juice
1/2 teaspoon pure vanilla extract
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1 quart strawberries, hulled and diced
Pinch kosher salt
4 tablespoons sugar
1/2 cup heavy cream, chilled
1/2 teaspoon pure vanilla extract
1 pint vanilla or strawberry ice cream

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Butter a 9-by-5-inch metal loaf pan and line the bottom and sides with a strip of parchment paper.
  • Add the butter, ricotta and sugar to a large bowl. Beat the mixture with a hand-held mixer on medium speed until light and fluffy, about 3 minutes. Reduce the speed to low and add the eggs, lemon zest, lemon juice and vanilla extract and beat to combine. Add the flour, baking powder and salt. Fold the ingredients together with a rubber spatula until just combined. (Do not overmix.) Pour into the prepared pan and bake until a toothpick inserted in the center comes out clean, 1 hour to 1 hour and 10 minutes. Remove to a rack to cool for 1 hour.
  • For the assembly: Meanwhile, combine the berries, salt and 2 tablespoons sugar in a small bowl. Toss well with a fork to combine, mashing the berries slightly with the back of the fork. Allow to sit at room temperature for 10 minutes. Whisk together the heavy cream, vanilla extract and remaining 2 tablespoons sugar in a separate bowl until soft peaks form.
  • Dice 6 slices of lemon loaf, then divide evenly among 6 bowls or glasses. Top each serving with some of the strawberry sauce, followed by a scoop of ice cream and a dollop of whipped cream.

Homemade oatmeal cookies are the base for this refreshing summer sundae. Ice cream and berries are set on the warm cookies and a tangy lemon cream and crumbled cookies top off the dessert.

½ cup lemon curd
8 oatmeal cookies (recipe follows)
2 cups fresh strawberries, stemmed, sliced, and sweetened to taste with sugar
2 cups strawberry ice cream
1 teaspoon Powdered sugar for garnish
2 cups rolled oats
1 ½ cups unsalted butter at room temperature
1 tablespoon vanilla extract
2 teaspoons baking soda
2 teaspoons kosher salt
¾ cup granulated sugar
¾ cup brown sugar
¾ cup toasted pecans, finely chopped
2 ¼ cups unbleached flour

Steps:

  • Instructions for sundaes: Gently fold together whipped cream and lemon curd.
  • Place one cookie on each serving plate. Place some strawberries on each cookie. Top berries with a scoop of ice cream, then a generous spoon of the lemon cream. Gently crumble remaining cookies over ice cream. Sift powdered sugar over the top.
  • Instructions for cookies: Heat oven to 300 degrees F. Place oats on a cookie sheet and toast in oven 10-15 minutes or until lightly browned.
  • Increase oven temperature to 350 degrees F.
  • In an electric mixer, beat butter with vanilla, baking soda and salt until creamy. Add sugars and mix until light and fluffy. Add nuts and mix briefly. Using a spatula or wooden spoon, fold in oats and flour, making sure ingredients are well combined.
  • Roll dough into 1 1/2-inch balls and gently flatten into 1/2-inch-thick disks. Place on a cookie sheet, leaving enough space in between to allow them to spread during cooking.
  • Bake cookies for 15 -20 minutes or until lightly browned but still slightly soft in the center.

½ medium cantaloupe melon (about 350g/12oz), skinned and cut into chunks
250g strawberry , hulled and sliced
4 ginger biscuits, roughly crushed (try Fox's Crinkle Crunch)
2 pieces of stem ginger in syrup (about 25g/1oz), chopped, plus 2 tsp of syrup from the jar
2 x 150g / 5oz pots Greek yogurt
4 tsp light muscovado sugar

Steps:

  • Gently mix the melon and strawberries together in a large bowl with a spoon or your hands, then pile half into four glass tumblers. Sprinkle with half the biscuit crumbs.
  • Stir the chopped ginger and syrup into the yogurt and spoon into the tumblers. Pile the rest of the fruit on top, then scatter with the remaining crumbs.
  • Sprinkle a teaspoon of muscovado sugar on top of each dessert and chill until ready to serve (up to 2 hours ahead) - the sugar will gradually melt to give a yummy toffee flavour.
  • Take out of the fridge about 15 minutes before serving, so they are not too chilled.

250 g punnet strawberries, washed, hulled
780 g vanilla yogurt
2 teaspoons milo
40 g milo

Steps:

  • Chop strawberries.
  • Divide 260g (1 cup) vanilla yoghurt among four serving glasses. Divide one-third of the strawberries among the glasses.
  • Sprinkle 2 tsp Milo over the strawberries in each glass.
  • Continue layering with 520g (2 cups) vanilla yoghurt, the remaining strawberries and 40g (1/3 cup) Milo. Serve.
