1 long seedless cucumber, ends trimmed
1 carrot, shredded
1 (4 ounce) package cream cheese, softened
¼ cup raisins
24 long fresh chives for tying

Steps:

With a peeler, slice cucumber into 8 1/8-inch thick slices lengthwise. Cut each slice into 3 pieces crosswise.
Place about 1 teaspoon shredded carrot onto the bottom edge of a cucumber slice; place about 1 teaspoon cream cheese onto the carrot, and press 2 or 3 raisins into the cream cheese. Roll the cucumber slice into a little sushi roll, starting at the filled end. Tie roll with a chive to secure. Repeat with remaining ingredients.

Rice: Cook rice by instructions on package. When finished, do not stir rice and allow it to cool. This will make for a stickier to hold everything together.
Deseed: Cut each cucumber in half and remove seeds with either a small spoon or knife to create a long, hollow tube (see pictures).
Stuff: Spoon in a small amount of rice, then compress towards one side of the tube. Gently insert a slice of avocado and a few slices of pepper, then add more rice to fill gaps, compressing and adding more rice until packed full.
Slice: With a sharp knife, slice cucumber into 1/2 inch thick pieces. If you start to notice the filling is loose as you cut, stuff in more rice and peppers where needed.

Trim the ends off the cucumbers, then use a vegetable peeler to slice the cucumber into thin flat strips. Continue until you reach the center of the cucumbers. Then flip it over and repeat.. You can discard the first skin peel and should have about 8-12 strips per cucumber
In a small bowl, mix the cream cheese with the sriracha and ginger powder and stir until well combined and smooth.
To assemble the rolls, lay the cucumber slices down, spread the cream cheeses mixture on top. Then place the smoked salmon, carrot sticks, red pepper sticks and avocado slices on the top half of the cucumber slice. Starting from the top half, carefully roll the cucumber slices tightly.
Place them upright on a plate and sprinkle toasted sesame seeds on top, if desired. Makes about 20-24 rolls.
