SOBA NOODLES WITH GRILLED SHRIMP AND CILANTRO

Soba Noodles With Grilled Shrimp and Cilantro image

Recipe by Su-Mei Yu. "Garlicky, spicy and bright with lime, this noodle dish is both warming and energizing, according to Thai tradition. Just don't skimp on the lime wedges or cilantro: "The sour juice protects the respiratory system in the early spring," Su-Mei Yu says, "and cilantro helps when you're congested." From Healthy Thai Recipes Published March 2010. Food & Wine Magazine :) Wine Pairing: Tangy dishes like these lime-inflected noodles pair better with tangy wines; softer wines tend to lose their flavor. Try a dry Australian Riesling-they're crisp, vivid and great with Asian cuisines. Two good choices are the citrusy 2008 Fireblock Watervale and the more peachy 2009 St. Hallett Barossa.

SHRIMP WITH CILANTRO-MINT PESTO

Shrimp With Cilantro-Mint Pesto image

Adapted by those food mavens at The Tmes-Picayune from "Al Roker's Big Bad Book of Barbecue," this recipe makes 2 cups of pesto, enough for up to 4 pounds of seafood or chicken, and it's great on vegetables, too.

Provided by Busters friend

Categories     < 4 Hours

Time 1h15m

Yield 8-12 serving(s)

Number Of Ingredients 9

1 1/3 cups cilantro leaves, packed
3/4 cup mint leaf, packed
1/2 cup virgin olive oil
1/4 cup parmesan cheese, freshly grated
1/4 cup lime juice, fresh (from 2 limes, lemons OK too)
4 garlic cloves, peeled
1 jalapeno pepper, stemmed and seeded
1 teaspoon coarse salt
4 lbs shrimp, fresh (frozen OK)

Steps:

  • For the pesto: Combine all pesto ingredients in the work bowl of a food processor blender, and process until pureed. Use immediately, or cover and store in the refrigerator for up to two days.
  • For the shrimp: Toss the shelled shrimp with the pesto in a shallow, nonreactive pan. Each shrimp should be well coated. Cover with plastic wrap and refrigerate for 1 to 2 hours.
  • Prepare a charcoal grill or preheat a gas grill for direct grilling over high heat.
  • Remove shrimp from pan and discard the marinade. Grill shrimp for 2 to 3 minutes per side.

MINT-MARINATED SHRIMP WITH GLASS NOODLES

Mint-Marinated Shrimp with Glass Noodles image

Unlike the Vietnamese dish that inspired it, this recipe relies on a quick mint marinade to infuse the shrimp with flavor before they're sauteed, tossed with noodles, and dressed with chile and lime.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes     Shrimp Recipes

Number Of Ingredients 15

3/4 pound (about 16) large shrimp, shelled and deveined
1/2 cup fresh mint, coarsely chopped
1 garlic clove, minced
1 tablespoon plus 1 teaspoon fresh lemon juice
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 tablespoons fresh lime juice
2 tablespoons fish sauce
1 tablespoon Asian chili sauce
1 tablespoon vegetable oil
1 teaspoon sugar
1 package cellophane noodles (3 3/4 ounces)
Coarse salt and cayenne pepper, to taste
1 cucumber, julienned
1 fresh Thai chile, thinly sliced
1 lime, quartered

Steps:

  • Combine shrimp, mint, garlic, lemon juice, and 1/4 cup olive oil in a medium bowl. Cover, and refrigerate for 1 hour.
  • Meanwhile, whisk together lime juice, fish sauce, chili sauce, vegetable oil, and sugar. Let stand until ready to use.
  • Place noodles in a large bowl. Bring a pot of water to a boil; pour over noodles. Let stand until softened, 6 to 8 minutes. Drain, and rinse under cold water.
  • Remove shrimp from marinade, and season with salt and cayenne. Heat remaining 2 tablespoons olive oil in a large skillet over medium-high heat. Add shrimp in a single layer. Cook until golden and cooked through, about 1 minute per side.
  • Divide noodles among 4 serving bowls. Top with shrimp, cucumber, and chile. Drizzle lime juice mixture over the top, and serve with lime wedges.
