MIXED BERRY ALMOND CREAM AND SPELT STACK

10 ounces firm tofu
1/2 cup lowfat vanilla soy milk
1/2 teaspoon sea salt
3 tablespoons finely crushed almonds
6 tablespoons maple syrup
1 cup sucanat sugar
1 cup lowfat vanilla soy milk
1/2 cup brown rice syrup (see note)
1 teaspoon vanilla extract
1 pinch sea salt
1 tablespoon arrowroot
2 tablespoons soy margarine
4 cups low fat vanilla soy milk
1 cup sucanant sugar
3 tablespoons egg whites
3 ripe bananas
1 cup dried strawberries, blueberries and cranberries
1 pound spelt bread, cubed
2 teaspoons cinnamon
3 tablespoons toasted almonds, chopped
16 strawberries, sliced
Almond-Soy Cream (recipe above)
Caramel Sauce (recipe above)
Vanilla Soy Frozen Dessert (optional)

Steps:

  • Cut the tofu in small pieces and place in a food processor. Add the soy milk, salt, almonds and maple syrup. Process until smooth. Refrigerate for 1 hour before serving. Store in the refrigerator for up to 3 days in an airtight container.
  • In a small, heavy duty saucepan, combine the sucanat, soy milk, rice syrup, vanilla and salt. Bring to a boil, then reduce the heat and simmer for 3 minutes, whisking to prevent burning. In a small bowl, mix together the arrowroot with 1 tablespoon of water and add to the sauce. Simmer for an additional 2 to 3 minutes. Remove from the flame and whisk in the margarine. Store in your refrigerator for up 2 weeks in an airtight container.
  • Preheat oven to 325 degrees. In a saucepan, heat the soy milk over medium heat, but do not boil. Add the sucanat and egg whites, and stir. Add the bananas and dried berries and stir. Remove from the heat. Place the spelt bread in a mixing bowl. Pour the soy milk mixture over the bread. Place the mixture in a nonstick loaf pan. Sprinkle with cinnamon. Bake approximately 50 minutes. Cool on baking rack for approximately 1 hour and then refrigerate for another hour. Cut loaf into 1/2-inch thick slices. Place slices on a nonstick cookie sheet in a preheated oven to broil or at 450 degrees for approximately 3 minutes or until warm. Place 1 slice on plate, top with 2 teaspoons almond-soy cream and 4 sliced strawberries, arrange another slice on top and add 2 teaspoons almond-soy cream and sliced strawberries. Drizzle with caramel sauce and 1 teaspoon chopped nuts. For a real decadent treat, add a scoop soy frozen dessert on top layer.

1 (7 ounce) package almond paste, grated through large holes of grater
10 tablespoons butter, melted
3 eggs, at room temperature
1 ¾ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
1 cup fresh blueberries
1 cup fresh raspberries
3 tablespoons sliced almonds
1 tablespoon confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch springform pan.
  • Combine white sugar, almond paste, and butter in mixing bowl; beat with an electric hand mixer on medium speed until smooth. Add eggs one at a time, beating well after each addition. Beat on high for 3 minutes.
  • Sift flour, baking powder, and salt into a separate bowl. Add flour mixture to almond paste mixture and beat until just combined. Pour 2 1/4 cups of batter into prepared pan, gently smoothing to edges. Arrange blueberries and raspberries atop the batter layer; top with remaining batter. Sprinkle almonds over the batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 55 minutes. Cool in the pan on a wire rack for 15 minutes. Gently slide a knife around the inside edge of the pan and release springform circle.
  • Lightly dust cake with confectioners' sugar.

110 g caster sugar
250 g light sour cream
2 eggs
2 tablespoons all-purpose flour

  • Place berries and sugar in a 6-cup ovenproof dish, toss gently to combine.
  • Place sour cream, eggs and flour in a bowl and whisk to combine, then pour over berries.

8 cups mixed berries, such as raspberries, blueberries, strawberries (halved or quartered) and blackberries
2 to 4 tablespoons granulated sugar, depending upon sweetness of berries
1 teaspoon finely grated lemon zest
1 tablespoon quick-cooking tapioca (optional)
1 2/3 cups/208 grams all-purpose flour
1/3 cup/70 grams dark brown sugar
1/3 cup/67 grams granulated sugar
1/3 cup/38 grams sliced almonds, finely chopped
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon allspice
1/8 teaspoon salt
1/2 cup/8 tablespoons/113 grams melted butter (1 stick)
Vanilla ice cream, for serving (optional)

Steps:

  • Heat oven to 350 degrees. To prepare filling, toss berries with sugar, lemon zest and tapioca (if using). Set aside.
  • To make topping, in a large bowl, whisk together flour, sugars, almonds, cinnamon, ginger, allspice and salt. Stir in butter. Coarse crumbs will form.
  • Pour filling into a 2-quart gratin dish or 10-inch round cake pan (do not grease first). Using your fingers, form topping mixture into 3/4-inch to 1-inch crumbs and spread over cake.
  • Bake until filling bubbles and topping is light golden, about 55 minutes. Let cool slightly. Serve warm or at room temperature with ice cream if you like. Crisp can be made up to 8 hours ahead and kept at room temperature, or warmed up briefly in a 350 degree oven.

½ cup butter
1 cup vanilla baking chips
2 eggs
½ cup white sugar
1 teaspoon almond extract
1 cup all-purpose flour
½ teaspoon salt
½ cup any flavor of berry jam
1 cup vanilla baking chips
¼ cup sliced almonds

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x9 inch square baking pan. In a saucepan over medium heat, melt butter. Remove from heat and add 1 cup vanilla chips, but do not stir.
  • In a large bowl, beat eggs until foamy. Gradually mix in the sugar. Stir together the softened chips and butter, and blend into the egg mixture along with the almond extract. Combine the flour and salt; stir into the batter until just mixed. Spread half of the batter into the prepared pan.
  • Bake for 15 to 20 minutes in the preheated oven, or until golden brown. In a small saucepan, over low heat, warm the jam to make it more liquid. Spread the jam over the warm crust. Stir the remaining cup of vanilla chips into the batter, then drop the rest of the batter by teaspoonfuls over the jam. Sprinkle with almonds.
  • Bake for an additional 30 to 35 minutes in the preheated oven, or until a toothpick inserted into the center, comes out clean. Cool in pan on a wire rack before cutting into bars.

1 cup packed brown sugar
1/2 teaspoon almond extract
2 eggs
1 package (8 ounces) almond paste (not marzipan), cut into 1/4-inch pieces
2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup fresh raspberries
1 cup fresh blueberries
Powdered sugar, if desired

Steps:

  • Heat oven to 325°. Grease bottom and sides of rectangular pan, 13x9x2 inches, with shortening. Beat butter and brown sugar in large bowl with electric mixer on medium speed until creamy, or mix with spoon. Stir in almond extract, eggs and almond paste. Stir in flour, baking powder and salt. Spread in pan. Sprinkle with raspberries and blueberries.
  • Bake 50 to 55 minutes or until golden brown and bars slightly pull away from edges of pan. Cool completely, about 1 hour. Sprinkle with powdered sugar. For bars, cut into 6 rows by 6 rows. Store covered in refrigerator.

For the filling:
600 grams fresh berries (about 4 1/4 cups)
2 Medjool dates, pitted and very finely chopped
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
For the crumble:
180 grams quick oats (about 2 1/4 cups)
80 grams ground almonds (about 3/4 cup)
7 Medjool dates, pitted and very finely chopped
4 tablespoons butter
3 teaspoons ground ginger
Seeds of 1/2 a vanilla pod

Steps:

  • Preheat the oven to 190°C/ 375°F/ Gas Mark 5.
  • Put the filling ingredients into a pan over low heat and cook for about 4 minutes or until the fruit just begins to soften. Tip the fruit into an ovenproof dish and set this aside.
  • Put the oats, ground almonds, dates, butter, 2 teaspoons of the ground ginger and the vanilla seeds into a bowl and, using your fingertips, rub this gently together to just combine so everything is evenly mixed in. Tip the crumble topping over the fruit and then sprinkle over the remaining 1 teaspoon of ground ginger.
  • Pop into the oven and cook for about 25 minutes or until the crumble is just going golden brown. Once cooked, remove from the oven and leave to cool for a few minutes before serving.

  • Cool cake in pan on wire rack for 15 minutes. Gently slide a knife around the inside edge of pan and release springform circle. Lightly dust with powdered sugar. finish cooling on rack or serve slightly warm. This cake is equally delicious served cold.
