This is the best dessert for summer BBQs when berries are in season, or anytime of year if you use frozen berries!

1 1/4 cup quick oats
1 1/2 cup flour
1 cup light brown sugar
1 teaspoon kosher salt
1 cup cold butter, diced
2 cups strawberries, cut in half, or quarters if large
2 cups blueberries
1 cup raspberries
1 cup blackberries
1/4 cup granulated sugar
2 tablespoons orange juice
2 teaspoons vanilla
1/4 cup flour

Steps:

  • Preheat oven to 350°F. Coat a 9×13 baking dish with nonstick spray, set aside.
  • In a large bowl mix together the oats, flour, sugar, and salt. Mix in the butter with your hands or a pastry cutter until mixture form crumbs when squeezed together.
  • Place berries in another large bowl. Stir in the sugar, juice, and vanilla into the berries. Sprinkle the flour on top of the berries and toss to coat.
  • Place the berry mixture into the prepared pan, and sprinkle with the oat mixture evenly.
  • Bake for 45 minutes, until the top is golden and the berries are bubbly.

2 pounds (32 ounces, about 5 cups) mixed berries, fresh or frozen*
1/3 cup honey or maple syrup
2 tablespoons arrowroot starch or 3 tablespoons cornstarch
1/2 teaspoon orange or lemon zest (if you don't love strong citrus flavor, scale back to 1/4 teaspoon, or omit)
2 tablespoons orange or lemon juice
1 cup old-fashioned oats**
1/2 cup packed almond flour or almond meal
1/2 cup sliced almonds or chopped pistachios or pecans (optional)
1/3 cup packed coconut sugar or brown sugar
1/4 teaspoon fine grain sea salt
4 tablespoons unsalted butter, melted
3 tablespoons plain yogurt (Greek or regular), or additional melted butter

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Rinse and drain the berries and pick through to remove any stems still attached. If you're using strawberries, slice them into 1/4-inch thick pieces. If you're using particularly large blackberries, slice them in half.
  • In a 9 by 9-inch baking dish, mix together the berries, honey, starch, citrus zest and juice. Set aside.
  • In a medium mixing bowl, stir together the oats, almond meal/flour, sliced almonds (if using), sugar and salt. Mix in the butter and yogurt. Stir until all of the flour is incorporated and the mixture is moistened throughout.
  • Dollop spoonfuls of the oat mixture over the filling and use your fingers to break up the mixture until it is evenly distributed (no need to pack it down).
  • Bake for 40 to 50 minutes, or until the filling is actively bubbling around the edges and the top is lightly golden. Let the crisp rest for 5 to 10 minutes before serving. Serve with vanilla ice cream (I insist!).

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a 9x13-inch baking dish.

2-1/2 cups all-purpose flour
1/4 teaspoon salt
1 cup cold butter, cubed
6 to 8 tablespoons ice water
FILLING:
1 cup sugar
1/4 cup cornstarch
Dash salt
1/3 cup water
1/2 teaspoon ground cinnamon, optional
1 cup fresh blueberries
1 cup fresh raspberries
1 cup halved fresh strawberries
3/4 cup fresh blackberries
1 tablespoon lemon juice
2 tablespoons butter

Steps:

  • In a large bowl, mix flour and salt; cut in butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Divide dough into 2 portions so that 1 is slightly larger than the other. Shape each into a disk. Cover and refrigerate 1 hour or overnight., For filling, in a large saucepan, whisk sugar, cornstarch, salt, water and, if desired, cinnamon until smooth; add blueberries. Bring to a boil; cook and stir 2 minutes or until thickened. Cool slightly., Preheat oven to 400°. Gently fold raspberries, strawberries, blackberries and lemon juice into blueberry mixture. On a lightly floured surface, roll out larger portion of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate. Add filling; dot with butter., Roll remaining dough to a 1/8-in.-thick circle; cut into 1/2-in.-wide strips. Arrange over filling in a lattice pattern. 1 ½ cups fresh raspberries

1 ½ cups butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

6 tablespoon(s) butter, melted

1 package(s) pie pastry, cut into 1" strips

Steps:

  • In a large mixing bowl combine all the berries with the sugar , and flour ; set aside.
  • In another bowl mix the brown sugar , cinnamon , butter and the granola .
  • Spray a 2-1/2 Qt. baking dish with the cooking spray.
  • Press 3/4 of the granola mixture in the bottom of the baking dish.
  • Top with the berry mixture.
  • Sprinkle the remaining granola mixture on top of the berries.
  • Arrange the dough strips in a lattice pattern over top of the berries ; Fold the edges of the dough slightly under the lip of the baking dish , Pinch closed.
  • Brush the lattice with the beaten egg.
  • Bake @ 375° for 30-35 minutes.
  • Serve warm with ice cream or whipped cream.

2 teaspoons granulated sugar
2 tablespoons cornstarch (use only 1 Tablespoon if using fresh berries)
2 cups mixed berries (defrost if frozen)
1 cup old fashioned oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
2 tablespoons granulated sugar
1/4 teaspoon ground ginger
1/4 teaspoon salt
6 tablespoons cold butter

Steps:

  • Preheat oven to 375.
  • For filling, combine sugar and cornstarch in a small bowl. Add berries and toss to coat evenly.
  • For topping and bottom layer, combine oats, brown sugar, flour, cinammon, sugar, ginger, and salt in a bowl. Cut in cold butter using two knives -- then mix with fork until mixture resembles coarse crumbs.
  • Pat half of the oat mixture on bottom of a 2-quart glass pan. Top with berry concoction. Finish off by crumbling the remainder of the oats on top of the berries.
  • Bake 20-25 minutes until oats are golden brown and berries are bubbling around edges.

1/2 cup pecans, toasted
2 1/4 cups all purpose flour
1/2 cup sugar
1 tablespoon grated orange peel
3/4 teaspoon salt
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into 1/2-inch pieces
5 tablespoons (about) ice water
1 1/3 cups plus 1 tablespoon sugar
1/4 cup orange marmalade
1/4 cup cornstarch
1 tablespoon grated orange peel
1/4 teaspoon ground allspice
1 3/4 cups frozen unsweetened raspberries, thawed, drained
1 1/2 cups frozen unsweetened blueberries, thawed, drained
1 1/4 cups fresh cranberries or frozen, thawed
1 egg, beaten to blend (for glaze)

Steps:

  • Finely grind pecans in processor. Add 2 1/4 cups flour, 1/2 cup sugar, grated orange peel and salt and process until well blended. Add butter and process until mixture resembles coarse meal. Using on/off turns, blend in enough water by tablespoonfuls to form moist clumps. Gather dough together and divide into 2 pieces, 1 slightly larger than the other. Flatten into disks; wrap each disk in plastic and chill 1 hour. (Dough can be prepared 2 days ahead. Keep refrigerated. Let dough soften slightly at room temperature before rolling out.)
  • Position rack in bottom third of oven and preheat to 375°F. Combine 1 1/3 cups sugar, orange marmalade, cornstarch, orange peel and allspice in large bowl. Add all berries and toss gently.
  • Roll out larger dough disk on floured surface to 13-inch round. Transfer dough to 9-inch-diameter glass pie dish. Trim overhang to 1 1/2 inches.
  • Roll out remaining dough disk on floured surface to 12-inch round. Cut dough into fourteen 1/2-inch-wide strips.
  • Mound filling in crust. Arrange 7 dough strips atop filling, spacing evenly. Form lattice by placing remaining dough strips atop and at right angle to first 7 strips. Trim ends of dough strips even with overhang of bottom crust. Fold strip ends and overhang under, pressing to seal and forming high-standing rim. Brush lattice with egg glaze. Sprinkle with remaining 1 tablespoon sugar.
  • Line baking sheet with foil; place on bottom of oven under rack to catch any drippings. Place pie on rack and bake until crust is golden brown and filling bubbles thickly, covering crust edge with aluminum foil if browning too quickly, about 1 hour 15 minutes. Transfer pie to rack to cool. Serve pie slightly warm or at room temperature.
