2 tablespoons baking cocoa
1 tablespoon instant coffee granules
1 large egg white
2 cups unblanched almonds

Steps:

  • Place the sugar, cocoa and coffee granules in a small food processor; cover and pulse until finely ground; set aside., In a small bowl, whisk egg white until foamy. Add almonds; toss to coat. Sprinkle with sugar mixture and toss to coat evenly. Spread in a single layer in a greased 15x10x1-in. baking pan., Bake at 325° for 30 minutes, stirring every 10 minutes. Spread on waxed paper to cool completely. Store in an airtight container.

This was the first biscotti recipe I ever made and I was amazed at how easy it was to get great results! The chocolate drizzle makes these fancy enough for gift giving too. From Gold Medal's Holiday Cookies and Cakes (#33).

Number Of Ingredients 13

2 tablespoons instant espresso or 2 tablespoons instant coffee crystals
2 teaspoons hot water
1 cup granulated sugar
1/2 cup butter or 1/2 cup margarine, softened
1 teaspoon vanilla
2 eggs
3 1/2 cups all-purpose flour
1 1/2 ounces semisweet baking chocolate, grated (about 1/2 cup)
1/4 cup slivered almonds, toasted and chopped
1 teaspoon baking powder
1 teaspoon salt
3 ounces semisweet baking chocolate
1/2 teaspoon shortening

Steps:

  • Heat oven to 350°F.
  • Dissolve coffee crystals in the hot water.
  • Beat butter, sugar, vanilla, eggs and coffee in a large bowl with electric mixer on medium speed, or mix with a spoon.
  • Stir in remaining ingredients.
  • On an ungreased cookie sheet or parchment paper, shape the dough into two 10x3 rectangles (each should be about 3/4 to 1 inch thick).
  • Bake about 30 minutes or until center is firm to the touch.
  • Cool 15 minutes on the cookie sheet.
  • Cut crosswise into 1/2 inch thick slices.
  • Place slices cut side down, in rows on a cookie sheet. (can be touching to fit them all on the sheet).
  • Bake 7-8 minutes, then flip them over and bake another 7-8 minutes. The edges should be light brown and the biscotti should be crisp when done.
  • Immediately remove from cookie sheet to a wire rack.
  • When completely cool, melt the chocolate and shortening together (either in the microwave (but be careful not to over heat it or it will scorch) or in a heat-safe bowl over a pot of boiling water (for a quasi double-boiler)).
  • Drizzle the chocolate over the biscotti using a spoon.
  • When cool, enjoy with a cup of coffee.

4 (1 g) packets stevia plus (I like Pyure Organic)
2 teaspoons unsweetened cocoa powder
1 pinch sea salt
1 cup brewed coffee
1 cup unsweetened vanilla almond milk
2 tablespoons boiling water
2 drops liquid stevia (use your favourite)

Steps:

  • If serving cold: Stir together the coffee, almond milk and liquid stevia. Chill thoroughly.
  • If serving hot: Combine the coffee and almond milk in a microwave safe pitcher and heat about 3-4 minutes, until hot, but drinkable.
  • For both:.
  • Mix the stevia, cocoa and salt in a large cup (or a jug if serving two).

1/3 cup heavy cream, chilled
2 teaspoons almond flavored syrup or 2 teaspoons hazelnut flavored syrup
4 tablespoons almond flavored syrup or 4 tablespoons hazelnut flavored syrup
1 cup milk
2 tablespoons chocolate syrup
1/2 cup hot fresh strong brewed coffee
sliced almonds or chopped nuts, for garnish
maraschino cherry, for garnish

Steps:

  • Whip heavy cream and 2 t of almond syrup in a small bowl with an electric mixer on low speed. After cream begins to thicken beat on high speed til its as thick as you like it. Refrigerate until you are ready to use it.
  • Pour milk in a medium microwave safe bowl. Heat on high heat for 1 to 1/2 minutes or until hot but not boiling. Whisk until foamy. Set aside.
  • Pour 2 tablespoons of almond syrup and 1 tablespoon of chocolate syrup into the bottom of each of 2 coffee cups. Microwave just long enough to warm syrups (about 20 seconds on high). Stir 1/4 cup hot coffee into each cup. Add steamed milk up to the top and the then garnish with almond whipped cream, nuts and cherries.

1/2 cup chopped almonds
1 1/4 cups strong coffee
1/2 cup margarine or 1/2 cup butter
1 (12 ounce) package semi-sweet chocolate chips (2 cups)
1 cup sugar
1/4 cup Amaretto or 2 teaspoons almond extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla
2 eggs
powdered sugar

Steps:

  • Heat oben to 325*F.
  • Generously grease 12-cup bundt or 10-inch tube pan.
  • Gently press almonds in bottom and half way up sides of greased pan.
  • In medium sauve pand over low heat, warm coffe.
  • Add margarine and chocolate chips; cook until mixture is smooth, stirring constantly.
  • Remove from heat; stir in sugar and amaretto.
  • Place in large bowl; cool 5 minutes.
  • At low speed, gradually blend flour and baking soda into chocolate mixture until moistened.
  • Add vanilla and eggs; beat at meduim speed about 30 seconds or just until well blended.
  • Pour into greased and nut-lined pan.
  • Bake at 3258F for 60 to 75 minutes or until toothpick inserted in center comes out clean.
  • Cool upright in pan 25 minutes; invert onto seving plate.
  • Cool completely; sprinkle with powered sugar.
