CINNAMON MOCHA SHEET CAKE
Moist, rich and chocolatey; flavored with cinnamon and espresso coffee. I first made this when I was 14 and it was gone in no time! It's still a family favorite!

Yield 32 2 1/2 by 2-inch pieces

Steps:
- Melt the butter in saucepan.
- Stir in cocoa, water and coffee. Beat until smooth.
- Combine granulated and brown sugars, flour, cinnamon and baking soda.
- Add the cocoa mixture, vanilla, milk, and eggs. Mix until well blended.
- Pout into a greased 10 by 15-inch jelly roll pan (a cookie sheet with sides).
- Bake at 350 F for 18 minutes or until done.
- Cool in pan.
- Make the icing by melting butter in saucepan. Stir in the cocoa, coffee and cinnamon with the milk.
- Mix until smooth.
- Slowly beat in the powdered sugar and mix until smooth.Ice the cake.
- Cut into 32 pieces.

MOCHA CINNAMON CAKE
Mocha Cinnamon Cake, delicious and easy to make - it's perfect for breakfast, brunch or snacks!

Steps:
- Preheat oven to 350F and oil 9-inch pan.
- In a large bowl add the sugar, butter, eggs, and mix for about 3 minutes or until it's light and fluffy.
- Next add the cinnamon, instant coffee granules, salt, all purpose flour and mix until well combined. Finally add chocolate chips, chopped pecans and mix.
- Transfer the batter into the pan and bake for about 35-40 minutes or use a toothpick to check if it's finished.
- Allow the cake to cool for about an hour, then I took my knife and ran it around the edges of the side so it's easier to release the cake.

- In a small bowl, cream the butter and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, cocoa, baking soda, salt, baking powder and cinnamon; add to creamed mixture alternately with coffee and buttermilk, beating well after each addition. , Fill paper-lined muffin cups half full with batter. Bake at 350° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool completely. , Place the frosting in a bowl. Dissolve coffee granules in hot water; stir into frosting until smooth. Frost cupcakes.

- Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, cocoa, baking soda and salt; add to creamed mixture alternately with coffee and sour cream, beating well after each addition. , Pour into three greased and floured 9-in. round baking pans. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool 10 minutes before removing from pans to wire racks to cool completely., In a large bowl, beat cream cheese and butter until fluffy. Beat in the chocolate, coffee and vanilla until blended. Gradually beat in confectioners' sugar. Spread between layers and over top and sides of cake. Cover and refrigerate until serving.
