1 quart fresh strawberries with stems
1-2/3 cups vanilla or white chips
2 tablespoons shortening, divided
1 cup semisweet chocolate chips

Steps:

  • Wash strawberries and gently pat until completely dry. In a microwave, melt vanilla chips and 1 tablespoon shortening at 70% power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. , Dip each strawberry until two-thirds of the berry is coated, allowing the excess to drip off. Place on a waxed paper-lined baking sheet; refrigerate for 30 minutes or until set. , Melt chocolate chips and remaining shortening; stir until smooth. Dip each strawberry until one-third is coated, allowing the excess to drip off. Return to baking sheet; refrigerate for 30 minutes or until set.

3/4 cup sugar
1/3 cup unsweetened baking cocoa
1/3 cup margarine, softened
1/3 cup matzo cake meal
1/3 cup ground almonds
2 teaspoons instant coffee granules or crystals
1 tablespoon water
2 egg whites
1 1/2 cups sliced strawberries
2 tablespoons currant or apple jelly, melted

Steps:

  • Heat oven to 350°F. Line 9-inch round cake pan with waxed paper or parchment paper; grease paper with shortening or cooking spray.
  • In medium bowl, beat sugar, cocoa and margarine with spoon until well blended. Stir in cake meal, almonds, instant coffee and water until smooth (batter will be thick).
  • In small bowl, beat egg whites with electric mixer on high speed until stiff peaks form. Fold into chocolate mixture until well blended. Spread mixture evenly in pan.
  • Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan to cooling rack. Cool completely, about 2 hours.
  • Just before serving, place torte on serving plate. Top with sliced strawberries; brush with melted jelly. Store covered in refrigerator.

Matcha and sesame seeds take these strawberries to a place chocolate-dipped berries only dream of. You won't stop at just one.

2 oz. white chocolate, chopped
1/4 cup virgin coconut oil, melted
1 tsp. matcha
Pinch of kosher salt
20 chilled large stem-on strawberries, patted dry
Black and white sesame seeds (for serving)

Steps:

  • Stir white chocolate, oil, matcha, and salt in a medium heatproof bowl set over a saucepan of simmering water (don't let bowl touch water) until nearly smooth. Remove from heat; stir until chocolate is melted. Set into a larger bowl of ice water and chill, stirring constantly, until thickened and just starting to lose its sheen, about 2 minutes.
  • Working one at a time, hold berries by stems and dip into matcha mixture to coat; let excess drip back into bowl. Place on a parchment-lined baking sheet and sprinkle with sesame seeds. (Depending on their size, you will be able to coat 15-20 berries.) Reheat matcha mixture if it starts to set before you have dipped all the berries. Chill dipped berries until shell is set, 20-25 minutes.

3 tablespoons sugar
Potato starch (for dusting)
8 medium strawberries, stems removed
1/4 cup koshian (sweet red or white bean paste; optional)
Ingredient info:
Find mochiko and koshian at Japanese markets or online.

Steps:

  • Mix mochiko, sugar, and 1/3 cup plus 2 tablespoons cold water in a small bowl. Cover with foil. Bring 2" of water to a simmer in a large pot. Fit with steamer basket; add bowl to basket. Cover pot with a tight-fitting lid. Steam until mixture is translucent and gummy, 20-22 minutes. Remove bowl and stir mixture until a thick, smooth, slightly sticky dough forms.
  • Meanwhile, schmear strawberries all over with bean paste, if using.
  • Sprinkle a surface lightly with potato starch; turn out mochi on top. Dust with more starch; cut into 8 pieces. Stretch a piece of mochi around a strawberry to encase; pinch together to close. Roll between your palms to smooth; brush off excess starch. Repeat with remaining mochi and strawberries.

  • Strawberries can be wrapped in mochi 4 hours ahead. Store tightly covered at room temperature.

1 cup heavy whipping cream

1 can (14 ounces) sweetened condensed milk
2/3 cup chocolate syrup
1/2 teaspoon vanilla extract
2 tablespoons instant coffee granules
1 tablespoon hot water
1/3 cup chopped almonds, toasted
Chocolate-covered coffee beans, optional

Steps:

  • In a small bowl, combine the cookie crumbs, sugar and butter. Press onto the bottom and 1 in. up the sides of a greased 9-in. springform pan; set aside., In a large bowl, beat cream until stiff peaks form. In another large bowl, beat the cream cheese, milk, chocolate syrup and vanilla until smooth. Dissolve coffee granules in hot water; beat into cream cheese mixture. Fold in whipped cream and almonds. Pour over crust. Cover and freeze for 8 hours or overnight., Remove from the freezer 10-15 minutes before serving. Carefully run a knife around edge of pan to loosen.
