MOM'S THANKSGIVING DRESSING

This is my mother's recipe for dressing. It's been my all-time favorite since I was a kid. We love it baked in the oven (not stuffed in the bird) until golden and crunch on top and moist in the middle! So good!

½ pan corn bread (about 2 cups, save the rest for eating)
5 slices bread (dried out, or toast3ed)
8 oz stuffing (packaged, seasoned is best)
½ cup yellow onion (chopped)
½ cup celery (chopped)
4 eggs (lightly beaten)
4 tbsp sage (or 2 tbsp dried)
salt and pepper (to taste)
3 to 4 cups broth (turkey or chicken, see note)

Steps:

  • Preheat oven to 350°F.
  • Combine all ingredients, except the broth, in a large bowl or pot, cover, and set overnight in the refrigerator, of for at least several hours.
  • Transfer the mixture into your serving dish and pat down gently with your hands.
  • Pour enough broth into the prepared dressing until it's just juicy to the touch. Shouldn't be swimming in it, but still juicy when pressed.
  • Bake for 50 minutes. If starting to brown too much, cover with foil in the final 15 minutes of baking.

Southern Cornbread Dressing - My Mom's recipe for THE BEST dressing! SO easy. Homemade cornbread, white bread, celery, onion, cream of chicken, cream of mushroom, chicken stock, salt, pepper and sage. Bake along with bone-in turkey. I could just eat this for Thanksgiving and be happy!

3 (9-inch) pans cornbread
3 pieces wheat bread
1 onion
3 stalks celery
1 (10.75-oz) can cream of chicken
1 (10.75-oz) can cream of mushroom
2 (15-oz) cans chicken stock
1 cup water
2 eggs
salt and pepper (to taste)
1 to 2 tsp sage (to taste)
1 ( 5-6 lb) bone-in turkey breast or turkey

Steps:

  • Preheat oven to 350ºF.
  • Chop onion and celery in food processor. Crumble cornbread and bread. Add remaining ingredients (except turkey). Stir well. Place dressing in turkey roasting pan, top with turkey breast.
  • Cover dressing with foil (leaving turkey breast uncovered) and bake until turkey breast reaches an internal temperature of 165ºF - about 2 hours.

MAMA'S HOLIDAY DRESSING

Preheat oven to 425
Makes 10-12 large dressing mounds
4 cups bread, day old or somewhat stale, cubed into bite size pieces
2 ½ cups Pepperidge Farms Herb Seasoning mixture, can use similar brand product
3 ½ cups Pepperidge Farms Herb Seasoned CUBE Seasoning mixture, divided, can use similar brand product
¼ cup oil, bacon drippings excellent
1 cup sweet onions, small dice
1 cup celery with leaves, small dice/chop
1 Tbl. garlic paste
3 ½ cups turkey stock, preferably made from boiling the neck, gizzard, livers of the bird, can use prepacked chicken or vegetable stock or some of the liquid from the oven cooked bird
6 oz. butter, chilled, cut into medium dice

Steps:

  • In a very large bowl, combine the bread, herb seasoning and 3 cups of the cube seasoning mixture. Mix and blend. Add salt and pepper to taste. In a medium size skillet over medium high heat, put the oil. When hot add the onions, celery and garlic paste. Sauté (stirring and blending often) until soft and tender, about five minutes. Pour directly into the dry bread mixture. Deglaze and clean skillet with about ½ cup of the stock mixture. Add another two cups of liquid and blend well. Add the remaining liquid, as needed, to achieve a thick pliable and 'stick' to mixture. Make individual dressing mounds and place on a parchment paper lined cookie sheet. Make sure there's adequate space, about two inches, all around each dressing mound. Place a few of the remaining seasoning cubes and diced butter on top each of the dressings. Bake in a preheated 425 oven for about 30 to 35 minutes. Remove and serve.

1 large yellow onion, coarsely chopped
6 garlic cloves, coarsely chopped
1 cup yellow mustard
1/2 cup Worcestershire sauce
1 (16 to 18-pound) turkey, innards discarded
2 (12-ounce) bottles dark malt beverage, such as Malta
Homemade Three Meat Stuffing, for serving, recipe follows
Cranberry Passion Fruit Sauce, for serving, recipe follows

Steps:

  • To make the marinade for the turkey: Place the onion, garlic, mustard, and Worcestershire sauce in a food processor and puree until completely blended. Put the turkey in a roasting pan fitted with a rack. Rub the outside of the turkey all over with the mustard mixture. Cover the turkey with plastic wrap to keep in the moisture. Refrigerate the turkey overnight or up to 24 hours.
  • Preheat the oven to 400 degrees F.
  • Remove the turkey from the refrigerator and discard the plastic wrap and place in a roasting pan. Tuck the turkey wings beneath the breast and tie the base of the legs together with butcher's twine. Using a pastry brush or bulb baster, baste the turkey with some of the malt. Transfer the turkey to the oven and roast, uncovered, for 3 hours, basting every 30 minutes with the malt. If the turkey breast starts to look like it's getting too dark, cover it with aluminum foil.
  • Cook until the juices run clear and the turkey's internal temperature is 160 degrees F in the breast and the leg registers 175 degrees F on an instant-read thermometer.
  • Remove the turkey from the oven and cover it loosely with foil. Let the turkey rest for 30 minutes before carving and serving with the stuffing and cranberry passion fruit sauce on the side.

My mom makes the very best cornbread dressing I've ever had. It makes a huge roaster pan and there is always plenty of leftover for us to take home. She loves to tell the same story every Christmas and Thanksgiving that she had the measurement for the Sage down perfect when spices still came in the little tins, like McCormicks. She used the whole small tin, and it was perfect. Now that most spices comes in bottles she had to experiment some to get it perfect. Just a note do not make the mistake of using Jiffy cornbread it is too sweet, regular yellow cornbread is best. I love old traditional recipes and had my Mom write this down for me to have for a family cookbook. And yes you can tell we are from the South since we make Dressing, not stuffing.

7 (6 ounce) yellow cornbread mix
1 -2 bunch celery, chopped
2 medium onions, finely chopped
6 hard-boiled eggs, chopped
half a loaf French bread or some white bread
3 eggs, raw
1/2 ounce rubbed sage
2 teaspoons salt (or to taste)
2 tablespoons black pepper
1/2 cup margarine
1.5 (48 ounce) chicken broth, low sodium
pan dripping, juice from your turkey

Steps:

  • You will need a large roaster pan for this dressing.
  • Cook cornbread according to pkg. directions. I use Martha White, not a sweet cornmix like Jiffy.
  • Chop onion and celery finely, saute in one stick butter.I like to saute' my onions, but I add a small amount of water, enough to cover the onions and celery to finish cooking them.
  • After cornbread has cooled crumble in pan. Add celery, onion and chopped eggs to the cornbread, along with any water that is left. Crumble a few slices of white bread, biscuits or I like to use about a half a loaf of day old French bread.
  • Add sage, salt and pepper to cornbread. We use a lot of sage, so use what you need. Adjust salt and pepper to taste.
  • All of this can be done the day before and then keep in the refrigerator until the turkey is cooked.
  • We cook our turkey in a cooking bag. (This is where you can be as creative as you want with the turkey, JUST SAVE THE JUICES WHEN IT IS DONE.).
  • Add chicken broth also, at least 1 and half or 2 of the broth, I use low sodium and then add as much of the turkey drippings as you need to make the mixture loose. I add a couple of raw eggs now. My mom never did.
  • If the mixture is too dry and does not jiggle when you shake it add enough turkey juice from the pan or more broth.
  • That is very important step my mom always emphasied, the dressing needs to be "loose" when you shake it. (my mom's words).
  • At this time we taste it to see if we need more sage, pepper or salt, before we cook. .
  • Cover with foil and bake at 350°F for 1 to 1-1/2 hours until it is brown on top. The last half hour uncover it so it will brown. We always have someone sample it to see if done.

BASTING SAUCE:
2-1/4 cups chicken broth
1/2 cup butter, cubed
1/2 teaspoon salt
1 teaspoon dried thyme
1/4 teaspoon each dried marjoram, rubbed sage and dried rosemary, crushed
1/4 cup minced fresh parsley
2 tablespoons minced chives
DRESSING:
1 loaf (1 pound) sliced bread
1 pound bulk pork sausage
1/2 cup butter, cubed
4 cups thinly sliced celery
3 cups thinly sliced carrots
1/2 pound fresh mushrooms, chopped
1/2 pound cubed fully cooked ham
2 cups green onions
2 cups chopped pecans
1 large tart apple, chopped
1 cup chopped dried apricots
1 tablespoon rubbed sage
2 teaspoons dried marjoram
1 teaspoon dried rosemary, crushed
1 teaspoon salt
1/8 teaspoon ground nutmeg
1 cup egg substitute
1 turkey (16 to 18 pounds)
1 cup chicken broth

Steps:

  • In a small saucepan, combine the broth, butter and salt; bring to a boil. Add herbs; set aside. , Toast bread; cut into 1/2-in. cubes. Place in a bowl. In a skillet, cook sausage over medium heat until no longer pink; remove with slotted spoon and add to bread. Add butter to drippings; saute the celery, carrots, mushrooms, ham and onions for 15 minutes. , Add to bread mixture; stir in the nuts, fruit and seasonings. Add egg substitute and 3/4 cup basting sauce; mix lightly. , Stuff turkey with about 8 cups dressing. Skewer openings; tie drumsticks together. Place on rack in roasting pan. Baste with some of remaining basting sauce. , Bake, uncovered, at 325° for 5 to 5-1/2 hours or until a thermometer reads 180° for the turkey and 165° for the stuffing, basting every 30 minutes. When turkey begins to brown, cover lightly with foil. , Add broth to remaining dressing; toss to coat. Place in a greased 2-1/2-qt. baking dish; refrigerate. Remove from the refrigerator 30 minutes before baking. Cover and bake at 325° for 1 hour; uncover and bake 10 minutes.

1 tablespoon minced fresh rosemary
1 tablespoon minced fresh thyme
1 teaspoon poultry seasoning
1 teaspoon kosher salt
½ teaspoon ground black pepper
4 cups low-sodium chicken broth, divided
1 medium orange, zested and juiced, divided
3 large eggs
¼ cup minced fresh Italian parsley
1 (10 ounce) package dry bread stuffing mix
¼ cup dried cranberries, or more to taste

Steps:

  • Preheat the oven to 275 degrees F (135 degrees C).
  • Dice bread into 3/4-inch cubes; spread into an even layer on a rimmed baking sheet.
  • Bake in the preheated oven, stirring several times, until toasted, about 45 minutes. Keep oven on.
  • Meanwhile, melt butter in a large Dutch oven over medium-high heat until foaming, about 2 minutes; do not allow butter to burn. Add Italian and andouille sausages. Cook, breaking sausages up into fine pieces, until just a few bits of pink remain, about 8 minutes.
