Steps:
- Preheat oven to 415°F. Rinse and pat dry all the potatoes.
- Cut each potato down the center to create two, equally sized pieces. Generously season the potatoes with coarse salt.
- Drizzle the bottom of a baking sheet with oil. Assemble the potatoes flesh side down on the baking sheet.
- Bake the potatoes for about 25 minutes, or until the bottoms have a nice crisp and the they are easily pierced with a fork.

OVEN ROASTED POTATOES
Steps:
- Clean and cut potatoes in half or quartered, depending on size. You want the potatoes to be close to 1/2 inch cubes as possible.
- Optional: Add potatoes to bowl of cold water and soak for 30 minutes.
- Preheat oven to 425°F and line rimmed baking sheet with foil or parchment paper or lightly spray with nonstick cooking spray.
- Pat potatoes dry with a paper towel and spread evenly on prepared baking sheet.
- Drizzle the potatoes with olive oil and toss to coat using tongs or your hands.
- Combine garlic powder, herbs, salt and pepper in a small bowl and sprinkle over the top of potatoes. Toss with your fingers or tongs to coat evenly. Arrange the potatoes so they are in a single layer and nicely space.
- Bake for 30 to 40 minutes or until potatoes are fork tender, flipping once during roasting. Serve immediately and enjoy!

These are a big favorite in our house. It is a healthy alternative to frying the potatoes. The outside of the potato gets crisp and the inside gets soft. I have used several different types of potatoes and have had great results with all of them although the cooking time will need to be varied with the creamer types.

- Preheat oven to 375 degrees.
- Slice potatoes into 1" cubes and place on a baking sheet (preferrably with sides to avoid losing any).
- Drizzle olive oil over the top of the potatoes.
- Sprinkle salt, pepper, basil, thyme and oregano over the top of the potatoes and oil.
- Using your hands mix the oil, spices and potatoes together until evenly coated.
- Make sure that potatoes are in one layer on the pan.
- Place in the oven and bake for 45 minutes.
- At this point take a spatula and move them around in the pan.
- Bake for an additional 15 to 20 minutes.
- If desired, sprinkle a little more salt on them when they are first out of the oven.

- In a greased 13x9-in. baking dish, layer the potatoes and onion. In a small bowl, combine the butter, salt, pepper and garlic powder; drizzle over potatoes and onion. MOM'S SWEET POTATOES RECIPE
Our family favorite sweet potatoes that make the perfect side dish for your holiday meal.

Steps:
- Heat oven to 350 degrees.
- Boil sweet potatoes for about 20-30 minutes until fork tender. Let cool.
- Spray a 9 x 13 inch pan with non stick cooking spray.
- After the sweet potatoes are cool, slice into 1 inch spears. Lay half of them in the pan.
- Cut up 1 1/2 tablespoons of butter into small pieces and spread all over the sliced sweet potatoes.
- Then drizzle 1/8 cup of karo syrup over all of the sweet potatoes. Then sprinkle 1/4 cup of brown sugar over the top.
- Repeat layers - add more sweet potatoes, then top with the rest of the butter, karo syrup, and brown sugar.
- Cook in oven until heated through and butter is melted. About 30 minutes.
- Remove from oven and cover the top with marshmallows. Return to oven cook until marshmallows are golden brown.
- (This can also be made ahead of time and stored in the fridge. Cook until heated through and then add marshmallows.)
MOM'S OVEN POTATOES
My mother can make some mean potatoes, but this one is a big family favorite! I use russet potatoes in this recipe and bake them until they're pretty crispy. I also make a chipotle-mayo sour cream dip for these to really make my taste buds sing! You won't be disappointed!
