Steps:
- Preheat oven to 350 degrees F.
- Cream toghether butter and sugar. Add egg and beat.
- Sift together flour, cinnamon, baking powder, baking soda and salt.
- Beat dry ingredients into butter mixture.
- Stir apples into batter, which will be thick and hard to stir.
- Turn into a buttered 9" pie pan and spread smooth.
- Bake for 1 hour, until just brown.
FRENCH APPLE TART (TARTE DE POMMES A LA NORMANDE)
My mother used to cook this for us all, usually to go with Sunday dinner. I was hooked. Haven't had it in ages and I was wanting to bake something special for a special someone so I asked mum for the recipe. Tried it out today, and it's just as I remember. The thing that makes it for me is the frangipane. Hope you like it as much as me.

- In a medium bowl, stir together 1 1/3 cups of flour and salt. Add the butter, 1 egg yolk and water, and stir until the mixture forms large crumbs. If it is too dry to press a handful together, stir in more water. Press the dough into a ball, and wrap in plastic wrap. Flatten slightly, and refrigerate for at least 30 minutes, or until firm. This part can be done up to three days in advance.
- To make the frangipane, cream together the butter and 1/2 cup of sugar in a medium bowl until light and soft. Gradually mix in the egg and the remaining egg yolk one at a time. Stir in the apple brandy. Stir 2 tablespoons of flour into the ground almonds, then mix into the batter. Set aside.
- Roll the pastry dough out to about a 12 inch circle on a lightly floured surface. Fold loosely into quarters, and center the point in a 10 inch tart or pie pan. Unfold dough, and press into the bottom and up the sides. Prick with a fork all over, and flute the edges. Return pastry to the refrigerator to chill until firm.
- Preheat the oven to 400 degrees F (200 degrees C). Place a baking sheet inside the oven while it preheats.
- Spoon the frangipane into the chilled pastry, and spread into an even layer. Arrange the apple slices in an overlapping spiral pattern. Each slice should have one edge pressed into the frangipane until it touches the pastry base, and then overlap the previous slice. Start at the outside edge, and work towards the center.
- Place the pie plate on top of the baking sheet in the preheated oven. Bake for 15 minutes, or until the filling begins to brown. Reduce the oven temperature to 350 degrees F (175 degrees C). Bake for another 10 minutes, then sprinkle sugar over the top of the tart. Return to the oven for 10 more minutes, or until the sugar caramelizes slightly.
- Cool the tart on a wire rack. A short time before serving, warm the apricot jelly. Add some water if necessary to make it a liquid consistency. Brush onto the tart for a nice shine.

- Preheat oven to 450°. In a small bowl, cream butter and 1/4 cup sugar until light and fluffy, 5-7 minutes. Beat in vanilla. Gradually beat in flour. Press onto bottom and 1 in. up sides of a greased 9-in. springform pan., In a small bowl, beat cream cheese and remaining sugar until smooth. Add egg and almond extract; beat on low speed just until blended. Pour into crust., Place apples in a large bowl. Mix cinnamon sugar and nutmeg; add to apples and toss to coat. - Heat oven to 425 degrees F. Beat butter and 1/3 cup of the sugar in small bowl with electric mixer on medium speed until light and fluffy. Add flour; mix well. Spread onto bottom and 1 inch up side of 9-inch springform pan.
- Beat cream cheese and 1/3 cup of the remaining sugar in same bowl with electric mixer on medium speed until well blended. Add egg and vanilla; mix well. Spread evenly over crust. Combine remaining 1/3 cup sugar and the cinnamon. Add to apples in large bowl; toss to coat. Spoon over cream cheese layer; sprinkle with almonds.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix together the butter, 1/2 teaspoon vanilla extract, all-purpose flour, and 1/2 cup of sugar in a bowl. Press the mixture into the bottom of an ungreased 9-inch springform pan.
- Beat together the cream cheese and sugar in a large bowl. Stir in the eggs and 3/4 teaspoons vanilla extract. Pour the egg mixture over the crust.

Quick, easy and elegant. Use fat-free cream cheese to avoid the extra calories. I use an apple slicer to help speed the time up. This recipe has been a hit with everyone including kids (if they like nuts). I love the combination of cream cheese and apples. I have made this dessert so many times, but keep misplacing it, so thought I had better post it. I found this in a Cooking Light magazine.

- Preheat oven to 450 degrees.
- Prepare crust by beating the first 4 ingredients with a mixer at medium speed until well blended.
- Spoon flour into a measuring cup and level with a knife.
- Add flour to sugar mixture, beating at med. to low speed until well blended.
- Press crust into bottom and 3/4 inch up sides of a 9 inch springform pan coated with cooking spray.
- To prepare filling beat 1/4 tsp sugar, 1/2 teaspoon vanilla, cream cheese and egg with a mixer at low speed until smooth.
- Pour cream cheese mixture into prepared crust.
- Combine apple, 1/2 cup sugar, and ground cinnamon in a bowl.
- Spread apple mixture evenly over cream cheese mixture, sprinkle with nuts.
- Bake at 450 degrees for 10 minutes. Reduce over temperature to 400 degrees (do not remove torte from oven)bake an additional 25 minutes or until lightly browned and filling is set.
- Cool on wire rack.
- Garnish with with cinnamon sticks if desired.
- Yield 10 servings.

- Preheat oven to 450 degrees F(230 degrees C).
- Cream together butter, 1/3 cup sugar, vanilla, and flour. Press crust mixture into the flat bottom of a 9-inch springform pan. Set aside.
- In a medium bowl, blend cream cheese and 1/4 cup sugar. Beat in egg and vanilla. Pour cheese mixture over crust.
- Combine 1/3 cup sugar and 1/2 teaspoon cinnamon. Toss the sliced apples with the sugar mixture and spread over the cheese filling.

Mrs. Eddy was the wife of our parish priest back when my mom was a young mother. According to mom, Mrs. Eddy was a great cook. Taught the ladies of the church that the only way to make macaroni or potato salad for a crowd was to "mix it up, mayo and all, with your hands." You know what? She was right on.
