1 1/3 cups all-purpose flour
1/2 teaspoon baking powder
1 pinch salt
1/2 cup dark brown sugar, packed
1/2 cup unsalted butter, slightly softened and cut into small pieces
10 ounces semisweet chocolate pieces, finely chopped
3/4 cup heavy cream
1/4 cup unsalted butter, softened
1/2 cup granulated sugar
2 teaspoons vanilla extract
1/4 teaspoon coconut extract (optional)
2 large eggs
3 1/2 ounces flaked coconut (about 1 1/2 cups)
1 1/2 cups chopped pecans

Steps:

  • Preheat oven to 350°F.
  • Lightly butter a 9x13-inch baking pan.
  • To make the bottom layer, stir together 1 1/3 cups flour, 1/2 tsp baking powder, pinch salt and the brown sugar.
  • Use a pastry blender to add the 1/2 cup of butter (in small pieces), until the mixture is crumbly and coarse.
  • Press into the bottom of the baking pan.
  • Bake at 350°F for 10 minutes, then place pan on rack to cool.
  • Leave oven on.
  • Next prepare the chocolate ganache.
  • After the chopped chocolate is placed in a medium bowl, bring the cream to a simmer in a small saucepan.
  • Pour the cream over the ganache, and wait 5 minutes before stirring.
  • The ganache will be smooth when ready to refrigerate and set (15 minutes in the refrigerator).
  • To prepare the topping, cream the remaining butter in a bowl.
  • Add the granulated sugar, and extracts.
  • Beat until blended, then beat in the eggs; then stir in coconut and nuts.
  • Drop the topping by spoonfuls evenly over the ganache and spread with a spatula or a knife.
  • Bake at 350°F for 25-30 minutes, until golden brown.
  • Set pan on rack to cool before cutting into bars.

Given to me my a friend, who knows a friend, etc........way back in 1987. The grinding of the oatmeal is critical. Bake these cookies on the second level from the bottom of the oven.

1 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 tablespoon vanilla extract
2 ½ cups rolled oats
2 cups all-purpose flour
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
12 ounces semisweet chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Grease cookie sheets or line with parchment paper.
  • Cream butter, sugars, eggs and vanilla until very smooth and fluffy.
  • In a separate bowl, mix together flour, salt, baking powder, and baking soda. In a food processor, blend oatmeal until fine. Add to flour mixture.
  • Stir butter mixture into flour/oatmeal mixture. Blend well.
  • Add chocolate chips and walnuts. Stir until blended. Roll into golf balls size and bake for 8-10 minutes. You do not want to over bake these.

1 1/3 c all purpose flour
1 pinch salt
1/2 c unsalted butter
1/2 tsp baking powder
1/2 c dark brown sugar
GANACHE
10 oz semi-sweet chocolate chips
3/4 c heavy cream
TOPPING
4 Tbsp butter, unsalted
2 tsp vanilla extract
1 1/2 c chopped pecans
1/2 c sugar
1/4 tsp coconut extract
1 1/2 c coconut, shredded
2 eggs

Steps:

  • 1. For the Crust: Combine flour, baking powder, salt, & brown sugar. Cut in butter. Press in bottom of greased 9x13 pan. Bake 10 minutes at 350*. cool
  • 2. Place chocolate in Medium bowl. Bring cream to simmer. pour over chocolate. Let set 5 minutes. Stir until smooth. pour over crust. Refrigerate 15 minutes to set Ganache.
  • 3. Cream butter, sugar, vanilla & coconut extract. Beat in eggs. Stir in coconut and pecansDrop toppings evenly over ganache. Spread gently. Bake, 25-30 minutes. cool. Cut into bars ans enjoy.

1/2 tsp. baking soda
1 cup dark brown sugar, firmly packed
1 cup salted butter, softened
1 large egg
2 tsps. pure vanilla extract
1 cup (4 oz.) chopped pecans
1 1/2 cups (9 ozs.) semisweet chocolate chips

Steps:

  • Preheat oven to 300°F. Grease an 8-by-8-inch baking pan. Combine flour and soda in a medium bowl. Mix well with a wire whisk. Set aside. In a large bowl use an electric mixer to blend the sugar and butter. Add egg and vanilla, and beat at medium speed until light and smooth. Scrape down the sides of the bowl, then add the flour mixture, pecans and chocolate chips. Blend at low speed until just combined. Do not overmix. Transfer batter into the prepared pan, and level top with a rubber spatula. Bake in center of oven for 35-45 minutes or until toothpick comes out clean but center is still soft. Cool on rack to room temperature. Cut with sharp knife into 1-by-2-inch bars.

1 1/2 cups firmly packed light brown sugar
1 cup plus 3 tablespoons all-purpose flour
1 stick (1/2 cup) unsalted butter, melted and cooled
1 1/2 cups sweetened flaked coconut
1 cup chopped blanched almonds
2 large eggs, beaten lightly
1 teaspoon vanilla
1/2 teaspoon salt

Steps:

  • Preheat the oven to 350°F. In a bowl with a fork stir together 1/2 cup of the brown sugar, 1 cup of the flour, and the butter until the mixture is combined well, press the mixture evenly onto the bottom of a 13-by 9-inch baking pan, and bake it in the middle of the oven for 10 minutes. In the bowl with the fork combine the remaining 1 cup brown sugar, the remaining 3 tablespoons flour, the coconut, the almonds, the eggs, the vanilla, and the salt and blend the mixture well. Spread the coconut mixture evenly over the crust and bake the mixture for 20 minutes, or until it is pale golden. Cut the mixture into 48 bars and let the bar cool completely in the pan on a rack. The coconut bars may be made 1 month in advance and kept frozen in airtight containers.

1 cup chopped pecans
1 cup butter
1/2 cup semi-sweet chocolate chips
2 cups sugar
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
4 large eggs
1 teaspoon vanilla extract
3/4 teaspoon salt
1 (10 1/2 ounce) bag miniature marshmallows
1/4 cup butter
2 1/2 tablespoons unsweetened cocoa
2 1/2 tablespoons milk
2 cups powdered sugar
1/2 teaspoon vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees,.
  • 2. Place pecans on a baking sheet.
  • 3. Place in a 350 degree oven for 4 minutes. Stir and bake another 4 minutes. Remove from oven and set aside.
  • 4. In a microwave safe dish, microwave butter and chocolate chips in a large on HIGH 30 seconds. Stir and microwave another 30 seconds. Stir until smooth.
  • 5. Combine the chocolate mixture with the sugar, flour, cocoa, eggs, vanilla, and salt. Stir until well combined.
  • 6. Pour batter into a greased or parchment lined 15- x 10- x 1-inch jelly-roll pan.
  • 7. Bake at 350° for 20 minutes.
  • 8. Remove from oven, and sprinkle evenly with miniature marshmallows; bake 4 to 6 minutes or until nice and puffy.
  • 9. Remove from oven and sprinkle with pecans.
  • 10. In a sauce pan, combine the butter, cocoa, and milk until combined.
  • 11. Then cook, stirring constantly, 2 minutes or until slightly thickened; remove from heat.
  • 12. Beat in powdered sugar and vanilla with an electric mixer until smooth.
  • 13. Place frosting in a quart sized freezer bag. Snip the corner with a pair of scissors and pipe over the bars.
  • 14. Cut into bars and enjoy. Makes 15 bars.

2 cups all-purpose flour
1/2 tsp baking soda
1/2 cup light brown sugar, packed
1 cup pure maple syrup
1 large egg
2 tsp pure vanilla extract
1 cup (4 oz) walnuts, chopped
Maple Frosting:
1/2 cup salted butter, softened
2 oz. cream cheese, softened
1 Tbs light brown sugar, packed
3 Tbs pure maple syrup
1/4 cup & 2 Tbs confectioners' sugar
walnut halves (optional)

Steps:

  • Preheat oven to 325°F. Grease an 8 by 8 inch baking pan. To make bars: In a medium bowl combine flour and soda. Mix well with a wire whisk and set aside. In a large bowl with an electric mixer blend sugar and butter to form a grainy paste. Scrape down sides of bowl, then add syrup, egg and vanilla. Beat at medium speed until smooth. Add the flour mixture and walnuts, and blend at low speed just until combined. Do not overmix. Pour batter into baking pan and smooth top with a spatula. Bake 40-45 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes, then invert onto cooling rack. Cool completely before icing. To make frosting: In a medium bowl cream butter and cream cheese with electric mixer at high speed. Add brown sugar and maple syrup, and beat until smooth. Reduce mixer speed to medium, and slowly add confectioners' sugar. Once sugar is incorporated, increase speed to high, and mix until smooth. If frosting appears thin, gradually add confectioners' sugar until frosting thickens. Using a metal spatula, spread frosting on top and sides of maple bars. If desired, make designs on frosting or decorate with walnut halves. Yield:12-16 bars

5 cups rolled oats
4 cups semisweet chocolate chips
8 ounces finely grated chocolate bar
3 cups chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Cream together butter or margarine, white sugar, and brown sugar. Add eggs and vanilla.
  • Mix together in a separate bowl: salt, baking powder, baking soda, flour and oatmeal (put small amounts of oatmeal in blender until it turns to powder. Measure out 5 cups of oatmeal and only "powderize" that, NOT 5 cups "powderized" oatmeal).
  • Mix all of the above.
  • Add: chocolate chips, grated chocolate bar, and chopped nuts (any kind).
  • Bake on greased cookie sheet (make golf ball sized balls) and bake about two inches apart. Bake for 8 -10 minutes. Do not overbake.
