MULLED WINE CORDIAL
Give festive bottles of your own mulled wine to family and friends this Christmas season. They'll love it! You might want to double the recipe and keep a bottle on hand for parties at home, too. -James Schend, Pleasant Prairie, WI

Steps:
- Using a vegetable peeler, remove colored layer of peel from orange and lemon in strips, leaving the white pith. Cut fruit crosswise in half; squeeze juice into a large saucepan., Add wine, sugar, cinnamon, cloves and citrus peels to pan. Split vanilla bean lengthwise. Using the tip of a sharp knife, scrape seeds from the center into wine mixture. Cook over medium-low heat 1 hour to allow flavors to blend, stirring occasionally. Transfer to a large bowl; cool completely. Let stand, covered, 24 hours., Strain wine, discarding solids. Stir in brandy. Pour into glass bottles; seal tightly. Refrigerate at least 1 week. If desired, serve over ice.

MULLED WINE
Steps:
- Begin by placing the cloves, peppercorns, cinnamon and star anise into a large piece of cheesecloth. Make a pouch and tie it with kitchen twine.
- In a large nonreactive pot over medium heat, add the wine, honey, lemon zest and juice, orange zest and juice and the cheesecloth of spices and bring to a simmer (be sure not to bring to a boil). Simmer for 30 minutes, and then add the brandy.
- When ready to serve, remove the cheesecloth of spices and ladle into warm mugs.

- With a fine grater, zest, then juice the orange.
- With the flat side of a knife, press firmly on the cardamom pods to bruise them. In a large pot (not aluminum), combine zest, juice, cardamom, cloves, allspice, peppercorns, cinnamon, wine, sugar, and brandy. Cook over medium heat, stirring, until sugar dissolves, 1 to 2 minutes.
- Reduce heat to low; simmer until flavors have melded, about 30 minutes. Pour through a fine-mesh sieve; garnish with cinnamon stick, if desired. Serve immediately.

- Place cinnamon sticks, cloves and rosemary on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag., In a 1-1/2-qt. slow cooker, combine the wine, cranberries, sugar, bourbon, orange juice and zest. Add spice bag. Cover and cook on low for 4-5 hours or until heated through. Discard spice bag. Serve warm.

MULLED WINE, BUT CHILLED
Warming in all but touch, this drink is ideal for cusp season, when the days can feel like autumn in morning and summer by afternoon. Cognac anchors the drink, fresh lime brightens it, and a simple syrup steeped with ginger, cinnamon, clove and cardamom evokes a classic mulled wine. The simple syrup here makes extra and keeps for a month in the refrigerator. Add it to lemonade, drizzle it over oatmeal or substitute it for standard simple syrup in another cocktail to make it automatically cozy.

- Place a coupe glass in the freezer to chill for at least 15 minutes and up to an hour. (Alternatively, fill the coupe with ice and water, stir for 30 seconds, pour out the ice and water, dry quickly, and pour in the drink into the now-chilled glass.)
- Prepare the syrup: Gently run the ginger under water to remove any traces of dirt. If the ginger is thin-skinned, leave the skin on. Otherwise, peel. Use the larger holes on a box grater to grate the ginger, and add to a small saucepan. Place over medium-high heat.
- Add 1 1/2 cups water, cinnamon sticks, cloves and peppercorns. Bring to a boil, then lower the heat and simmer on medium until the liquid reduces by about half and is very fragrant, about 20 minutes.
- Add the sugar and cardamom, and stir until the sugar dissolves. Remove pan from the heat, and set aside to cool completely. Strain through a fine mesh sieve. This makes about 1 cup. Store in the refrigerator for up to 2 weeks. (You can use this in place of a standard syrup in another cocktail.)
- Prepare the cocktail: In a cocktail shaker filled with ice, combine the wine, Cognac, vermouth, 1/2 ounce mulled simple syrup and lime juice. Shake and strain into the chilled glass.
