MUSHROOM BHAJI

Try this irresistible mushroom bhaji recipe today, which is perfect for vegetarians and vegans.

30ml (2 tbsp) vegetable oil
1 onion, peeled and sliced
2 garlic cloves, peeled and crushed
5ml (1 tsp) ground cumin
5ml (1 tsp) ground coriander
1 green chilli, washed and finely diced
2.5ml (½ tsp) chilli powder
450g (1lb) mushrooms, cleaned and sliced
15ml (1 tbsp) tomato puree
2.5ml (½ tsp) garam masala
60ml (4 tbsp) fresh cilantro, washed and chopped

Steps:

  • Gently fry the onion in the oil for about 10 minutes, or until softened.
  • Add the garlic and fry for another 2 minutes.
  • Stir in the cumin, coriander and chilli powder and fry for another 2 minutes.
  • Turn up the heat and fry the mushrooms until cooked, which should take no more than 5 minutes.The onions should be tender by then, if not, cook for a little longer.
  • Stir in the tomato puree and garam masala and cook for another 2 minutes.
  • Serve immediately as a side dish to an Indian meal, topped with fresh cilantro.

For this dish of stir-fried mushrooms, I use largish white mushrooms, but if your mushrooms are medium-sized, you should just halve them. Serve this as a part of an Indian meal, along with rice or breads, a fish dish, and a relish, or have it with scrambled eggs for brunch.

Number Of Ingredients 11

3 tablespoons olive or canola oil
1/2 teaspoon whole brown mustard seeds
1/2 teaspoon whole cumin seeds
1/4 cup finely chopped onions
10 ounces largish white mushrooms, quartered
1 clove garlic, crushed in a garlic press
3 tablespoons plain yogurt
1/8 teaspoon cayenne pepper
1 teaspoon ground coriander
1/2 teaspoon salt
2 tablespoons finely chopped cilantro

Steps:

  • Pour the oil into a frying pan and set over medium heat. When hot, put in the mustard and cumin seeds. As soon as the mustard seeds start to pop, a matter of seconds, put in the onions. Stir and fry until onions start to turn brown at the edges. Put in the mushrooms and stir for a minute. Take the pan off the heat and put in the garlic, yogurt, cayenne, coriander, and salt. Put the pan back on medium heat and stir well. Keep cooking and stirring until all the yogurt is absorbed, a few minutes. Stir in the cilantro toward the end.

Steps:

  • Wipe the mushrooms with a damp paper towel, trim the bottom of the stems, and slice into thick slices.
  • Heat the oil in a medium saucepan over medium heat. Add the onion and jalapeño, stirring for 5-6 minutes, until the onion is softened but not brown. Add the garlic and cook, stirring, for 2 minutes. Add the cumin, coriander, and chile powder, and cook for 1 minute. Add the mushrooms, salt and tomato paste, and stir to combine.
  • Sprinkle the water evenly over the mushrooms and reduce heat to low. Cover and cook for 10 minutes, stirring halfway through. The sauce should have thickened, but if it appears runny, cook uncovered for 3-4 more minutes to achieve a nice consistency.
  • Transfer to a serving dish, sprinkle the chives on top, and serve hot.

10 ounces frozen spinach, thawed, drained, finely chopped
8 ounces cremini mushrooms, sliced
1 inch piece gingerroot, peeled and chopped
4 garlic cloves, peeled and chopped
1 serrano chili, stemmed, seeded, chopped
salt (to taste)
1/2 teaspoon garam masala
1/8 teaspoon cayenne pepper
6 tablespoons heavy cream
1 -2 tablespoon ghee or 1 -2 tablespoon clarified butter

Steps:

  • Place ginger, garlic and chile into food processor or blender with 1/4 cup water and puree.
  • Heat 1-2 tablespoons ghee in a large skillet over medium heat; add mushrooms and saute until tender, about 5-10 minutes.
  • Add puree and saute, stirring for 30 seconds-1 minute or until fragrant.
  • Add spinach to pan and season to taste with salt, cooking for an additional minute.
  • Reduce heat to medium-low, cover, and cook, stirring occasionally, until spinach is soft (10-15 minutes).
  • Stir in garam masala, cayenne, cream, and a small amount of water if needed (to adjust consistency).
  • Cover and simmer 5-10 minutes.
  • Serve garnished with chopped cilantro (coriander), if desired, along with freshly steamed rice.

1 medium onion, finely chopped

1/2 teaspoon ground turmeric
1/2 teaspoon chili powder
1 teaspoon ground coriander
1 teaspoon ground cumin
3/4 teaspoon salt
1 tablespoon tomato puree
225 g button mushrooms, halved if large

Steps:

  • Heat the oil in a wok and fry the onions until golden brown.Lower the heat and add the garlic, turmeric, chili powder, coriander and cumin. Stir fry the spices for about 5 minutes adding a little water if necessary to prevent them sticking to the wok.
  • Add the salt and tomato puree, mix well and add the mushrooms. Stir until the ingredients are thoroughly mixed. Sprinkle about 2 tblsp water and cover the pan. Simmer for 10 minutes.
