EASY HOMEMADE SPAGHETTI SAUCE RECIPE
My family's secret homemade spaghetti sauce is easy to make using a few staple ingredients you may already have on hand! Perfectly thick and packed with flavor, you'll be ditching that store bought pasta sauce!

Steps:
- In a large pan heat the extra virgin olive oil over medium heat until just shimmering. Add the onions, garlic, and finely grated carrots. Cook for about 5 minutes, stirring regularly until softened.
- Add the crushed tomatoes and about 1/2 cup water. Add a generous pinch of salt and pepper. Stir in oregano, paprika, crushed pepper flakes, if using. Finally, stir in the fresh basil and parsley.
- Bring the sauce to a boil, then turn heat to low. Cover and let simmer for about 15 to 20 minutes. Check partway through, and if you feel the sauce is too thick, you can add a bit more water (preferably some of your pasta cooking water). When sauce is ready, throw in more fresh basil, if you like.
- If serving for dinner, add cooked pasta of your choice to the sauce. Mix to combine and let the pasta cook in the sauce over low heat for about 5 minutes.

MOM'S SPAGHETTI SAUCE
This is a simple homemade tomato sauce and there is usually enough left for seconds. Just pop the leftover in the freezer. This sauce is also great for lasagna or terrific over your favorite pasta.

- In a large skillet cook ground beef with the chopped onions, parsley, and olive oil. Cook until onions are soft and ground beef is cooked through.
- In a large saucepan, combine tomato juice, tomato sauce, Worcestershire sauce, salt, ground black pepper, and garlic. Add ground beef mixture and simmer for 1 hour.

Steps:
- Heat a large pot. Add olive oil, yellow onions, bell pepper, garlic and celery. Sauté until onions and celery are translucent.
- In a skillet, cook the ground beef. Pour off any fat or water. Add to large pot.
- Add tomatoes. Then add and stir in all spices and grated carrots. Bring to bubbling.
- Reduce to simmer. Simmer, covered, for at least 4 hours. 6-8 hours is better, the flavors develop further. Check a few times, stir and recover.
- Freezes well.

VERY SPECIAL SPAGHETTI SAUCE
This is very meaty and not near as acid as most sauces. It's really worth the time. It makes a very large batch, so I often freeze half.

- Heat olive oil in a large pot over medium heat. Saute garlic until golden brown. Stir in ground beef, onions and green pepper. Cook until beef is evenly brown, and onions are tender. Stir in flour until smooth. Stir in red wine, tomato sauce, chopped tomatoes, tomato paste, Worcestershire sauce and sugar. Season with salt, cayenne pepper, celery salt, oregano and basil. Simmer for 3 hours. Stir in mushrooms at the end of cooking period.

BAKED SPAGHETTI CASSEROLE RECIPE
Steps:
- Cook spaghetti according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain grease.
- Stir in the spaghetti sauce and seasoned salt; set aside.
- In a large bowl, whisk the eggs, Parmesan cheese and butter. Drain spaghetti; add to egg mixture and toss to coat.
- Place half of the spaghetti mixture in a greased 9 x 13 inch baking dish. Top with half of the cottage cheese, meat sauce and mozzarella cheese. Repeat layers.
- Cover and bake at 350 degrees F for 40 minutes. Uncover; bake 20-25 minutes longer or until cheese is melted.

MY MOM'S VERY POPULAR SPAGHETTI SAUCE RECIPE
Once you make this, you'll have a hard time going back to Spagetti sauce in a jar, I promise! My Mom has been making this since I was a kid. It is a big batch, that I make and eat and freeze the leftovers. Great to have in the freezer, can be served with any pasta. I've made this for many, many friends and people are always asking for my recipe, so here it is, straight from our family cookbook my sister assembled as a Christmas gift to my family. I've always wanted to publish a recipe on here, and this is my first pick, because it is my 'sure thing'. It is hard to mess up and everyone who eats it love it. I belonged to a dinner club and the ladies asked for a repeat - that is a huge compliment! Parents, I don't recommend leaving out the tabasco for kids, it is not spicy, but it needs the flavor. I think it, the sugar and the worcestershire sauce make it special. In fact, I like a little more tabasco than the recipe calls for. Also, I added the celeryand carrots (the more veggies the better I believe). I hope you enjoy this as much as my family has over the years.

- Saute ground beef. Add onion, celery and carrots, cook until soft.
- Add every thing else! (tomato sauce, tomato soup, tomato soup, tomatoes, water, sugar, worcestershire sauce, tabasco, salt, oregano, garlic salt, basil, celery salt, and pepper).
- Simmer (covered because it splatters), for a good while (that's what it says). i usally don't time it, but let it sit on stove for at least an hour, some times two. I just add a bit more water if it gets too thick before supper time.
- Stir often, so it does not burn on bottom!

Steps:
- In medium skillet brown ground beef, onion, green pepper and garlic. Drain fat.
- Add tomato sauce, bay leaf, basil, oregano and grated parmesan cheese.
- Simmer about 1 hour. Remove and discard bay leaf.
