Steps:
- Preheat the oven to 350 °F.
- Mix together the brown sugar, sugar, vanilla, oil and eggs in a large bowl.
- Mix in the flour, baking soda, salt and oats until fully combined.
- Add the corn flakes, coconut and pecans and stir well.
- Drop tablespoonfuls of dough onto a baking sheet to make the cookies.
- Bake for 8-10 minutes.
- Leave the dishpan cookies to cool on a wire rack.
- Serve the cookies piled high on a platter!

A volunteer at a Red Cross Blood Drive gave my sister this recipe years ago. This recipe will literally make a dishpan full of cookies. You will probably want to halve this recipe.

- Preheat oven to 350 degrees F (175 degrees C).
- In a LARGE bowl, cream brown sugar, sugar, vanilla, oil and eggs together. Add flour, soda, salt and oats. Mix well. Stir in corn flakes, coconut and pecans.
- Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes.
- Makes 10 dozen (2 inch) cookies. Caution: Halve this recipe if you don't want a ton of cookies.

PEANUT BUTTER COOKIES
Steps:
- Line 3 rimmed sheet trays with parchment paper.
- Add the peanut butter, butter and shortening to the bowl of a standing mixer fitted with a paddle attachment, and beat together. Add the brown sugar, and cream until light and fluffy, about 6 minutes. Add the eggs, one at a time, beating well in between each addition. Beat in the vanilla and combine until mixed.
- Whisk the flour, baking soda and 3/4 teaspoon salt together in a medium bowl. Add the flour in 3 additions to the peanut butter mixture, beating until just combined. Stir in the peanut butter chips.
- Use a 1/2-cup ice cream scoop and scoop the cookie batter onto one of the prepared sheet trays. Gently press down the tops of the cookies with a fork making a criss-cross. Sprinkle each cookie with a small pinch of salt and sugar. Place in the refrigerator to firm up, at least 30 minutes.
- Preheat the oven to 375 degrees F.
- Place 6 firmed cookies on each prepared sheet tray, leaving at least 4 inches of space between the cookies. Bake in batches until golden, 18 minutes, rotating the pans halfway through baking.
SANTA'S CHRISTMAS COOKIES

Steps:
- In a large bowl, use a whisk to combine the flour, salt and baking powder. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar together on medium speed until light and fluffy, 3 to 5 minutes. Add the eggs and vanilla extract and beat until completely combined.
- Reduce the mixer speed to low and add the flour mixture slowly, about 1/2 cup at a time until finished, mixing until just combined. Form the dough into 2 disks and wrap in plastic. Refrigerate until slightly firm, about 1 hour, or up to overnight.
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper, or spray with cooking spray.
- Roll the dough out onto a floured work surface and use cookie cutters to cut out shapes, then transfer to the prepared baking sheets, leaving about a 2-inch space between each cookie.
- Chill the cut-out cookies on the baking sheets for about 15 minutes before baking for a more precise shape. Bake until just starting to become crisp and golden around the edges, about 15 minutes. Remove the cookies to a rack and let cool completely.
- Use food coloring to tint Royal Icing into different colors. To decorate, cover the cookies with the Royal Icing, then sprinkle on decorations while the icing is still wet. Let the icing set completely.
- Add the meringue powder to 1/2 cup water in the bowl of a stand mixer fitted with the whisk attachment and whip for about 30 seconds. Slowly add the confectioner's sugar, and continue to beat until medium peaks form. If the icing is too stiff, add water a tablespoon at a time. Keep covered until ready to use. Transfer to a squeeze bottle for easier decorating.

- Sift flours, baking soda, baking powder and salt into a bowl. Set aside.
- Cream butter, peanut butter, and sugars together.
- Add vanilla and eggs one at a time, mixing well after each addition.
- At a low speed add dry ingredients and mix until just combined, about 10 seconds.
- Add chocolate chips and mix as little as possible to evenly distribute.
- Chill dough if desired.
- Scoop 6, 3 1/2 ounce (the size of a racket ball) onto baking sheet lined with parchment. Lightly sprinkle top with sea salt and bake at 350 for 15 to 20 minutes. Will spread to 5-6", so leave ample room. Cookies will still be soft, but beginning to brown.
- Transfer sheet to a wire rack for 12 minutes to cool (DO NOT REMOVE COOKIES).
- Transfer cookies to rack to complete cooling.

- Beat together 2 eggs and 6 Tbsps Milk.
- Add dry ingredients & shortening in a mixing bowl, blend well.

- First find a plastic dishpan (this keeps you from burning up your mixer). Blend oatmeal in blender until a fine powder.
