These burgers are the best on the grill in the summertime. Jam-packed with all kinds of stuff, and no tasteless bread crumbs!

Steps:
- Preheat a grill for high heat.
- In a large bowl, mix together the ground beef, onion, cheese, soy sauce, Worcestershire sauce, egg, onion soup mix, garlic, garlic powder, parsley, basil, oregano, rosemary, salt, and pepper. Form into 4 patties.
- Grill patties for 5 minutes per side on the hot grill, or until well done. Serve on buns with your favorite condiments.

NIMAN RANCH BURGERS
Steps:
- Build a charcoal fire or heat a gas grill.
- Place the ground beef in a large bowl and add the mustard, olive oil, salt, and pepper. Mix gently with a fork to combine, taking care not to compress the ingredients. Shape the meat into 6 (3 1/2-inch) patties of equal size and thickness.
- When the grill is medium-hot, brush the grill grate with oil to keep the burgers from sticking. Place the burgers on the grill and cook for 4 minutes. Using a big spatula, turn the burgers and cook for another 3 to 4 minutes, until medium-rare or more, or cook longer if you prefer hamburgers more well done.
- Meanwhile, break apart the English muffins and toast the 6 halves cut side down on the grill. Spread each half with mayonnaise and top with a burger and then with a heaping tablespoon of caramelized onions. Serve hot.
- Heat the olive oil and butter in a large shallow pot, add the onions and thyme, and toss with the oil. Place the lid on top and cook over medium-low heat for about 10 minutes to sweat the onions. Remove the lid and continue to cook over medium-low heat, stirring occasionally, for 25 to 30 minutes, until the onions are caramelized and golden brown. If the onions are cooking too fast, lower the heat. Add the vinegar, salt, and pepper and cook for 2 more minutes, scraping the brown bits from the pan. Season to taste (they should be very highly seasoned).

These no nonsense nut burgers are great. I have yet to find a recipe or a restaurant that makes as good of a version. Serve with chips... tortilla, blue corn, sweet potato, or other veggie chips. Use whichever types of nuts you like, or have handy such as pecans, walnut, hazelnuts, almonds, sunflower seeds, pumpkin seeds, or any combination of nuts you might like.

- Place walnuts and sunflower seeds in a dry skillet over medium heat. Cook, stirring occasionally until lightly toasted and fragrant, about 5 minutes.
- In a medium bowl, mash garbanzo beans with a fork, or chop in a food processor. Stir in the onion, egg, parsley, and toasted nuts. Season with pepper and seasoning blend, and mix well.
- Heat olive oil in a skillet over medium heat. Divide the bean mixture into 2 patties, and fry in the hot oil for about 3 minutes on each side, or until well browned and heated through. Place a slice of cheese over each patty, and remove from heat.
- Place the pita round in the same dry skillet the nuts were in, and heat for about 1 minute on each side. Cut the round in half, spread ranch dressing inside of each, and line the pockets with romaine leaves. Place a cheesy patty into each one, and top with sliced tomato and avocado. Serve with tortilla or potato chips.

NANAIMO BARS
The Nanaimo bar is a tremendously sweet, no-bake layered bar cookie from Canada made almost exclusively of packaged ingredients. The buttercream layer gets its yellow hue from custard powder, a vital ingredient that makes this a true Nanaimo bar. Use an offset spatula to give the chocolate top a surface as smooth as freshly Zambonied ice. The novelist Margaret Atwood included this recipe, from the chef Susan Mendelson, in her "Canlit Foodbook," a fund-raising book that featured food from literature, as well as author recipes. Ms. Atwood prefers walnuts in this recipe, but any combination of walnuts, almonds or pecans will do. We've added a smidge more cocoa and the optional addition of salt - but leave it out for the true Nanaimo bar experience.

- Line an 8-by-8-inch (20-by-20-centimeter) metal baking pan with parchment, allowing parchment to overhang by about 2 inches (5 centimeters) on two sides.
- Prepare the base: In a double boiler, or a heatproof bowl placed over a saucepan of boiling water, whisk butter with granulated sugar, egg, cocoa powder and vanilla until melted. Continue whisking until mixture thickens slightly, 1 to 2 minutes. Remove from heat.
- Stir in crumbs, coconut and nuts until the mixture is well combined and resembles wet sand.
- Transfer mixture to the parchment-lined pan and use your fingers to press it into an even layer. Transfer pan to the refrigerator to chill until firm, at least 15 minutes.
- Meanwhile, prepare the buttercream: In a stand mixer fitted with a paddle attachment, cream butter on medium speed for about 1 minute. Add heavy cream and custard powder and mix until combined, scraping sides and bottom of the work bowl as needed. Add 1 cup confectioners' sugar and mix on low until incorporated. Add remaining confectioners' sugar and mix on low until combined, scraping the bottom of the bowl as needed, then mix on medium-high speed until smooth, light and fluffy, 2 to 3 minutes.
- Remove pan from refrigerator. Dollop the buttercream on top of the base layer then gently spread it evenly on top using an offset spatula. Transfer pan to the refrigerator to chill until buttercream is set, about 30 minutes.
- Prepare the topping: In a small, heavy saucepan or a double boiler, heat the chocolate and butter over low, stirring often, until melted and evenly combined, 2 to 3 minutes. Remove from heat. Take pan from refrigerator and pour chocolate on top of buttercream layer. Working quickly and carefully, spread the chocolate evenly over the buttercream using an offset spatula. Sprinkle with flaky sea salt, if using.
- Return pan to refrigerator and chill until chocolate hardens, about 25 minutes.
- To serve the bars: Lift excess parchment to remove Nanaimo square from the pan. Cut into 16 2-inch (5-centimeter) squares. Store bars in the refrigerator until ready to serve. Bring to room temperature before serving. Store remaining bars in the refrigerator for a few days, or wrap well and freeze.

NANI BURGER
Even if you're not a burger lover, I promise this will make you a believer! Dubbed after me by my husband and our friends, it's been a long-time favorite in our household, and has been requested time, and time, again. Be warned, however, this isn't a quick burger and the first few times you may find that some of the stuffing will leak out, if not every time. Don't be discouraged-I've been making these for years and still spring a leak here and there, but the majority of it stays put!

- Cook bacon until crisp, or as desired.
- Drain and set aside.
- IN A LARGE MIXING BOWL: Combine the meat mixture until thoroughly blended.
- ON WAX PAPER: Divide the meat into approximately 1/2 to 1 LB balls.
- Take each ball and flatten the meat into an even, 1/4" thick circle (be certain it's not too thin; otherwise, all your ingredients will leak out while cooking).
- Leaving about an 1/8" gap on the top, bottom and "one" side of the flattened burger round, overlap each cheese half from top to bottom, starting at the center of the circle, working your way to one edge (you only want to put the layers on one half because you'll need to fold the other half over to make the burger).
- Layer mushrooms and bacon over the cheese.
- Spoon 2T of BBQ sauce over the cheese, mushrooms and bacon.
- SHAPING THE BURGER: Carefully fold the burger round in half, using the empty side of the meat to cover the cheese/bacon/mushroom/BBQ.
- Begin folding and pinching the edges to close the burger.
- Once the edges are closed, continue to form the burger to the shape of the French roll, closing up any holes you may find.
- Use any excess meat from the edges to patch up any holes you may find.
- (At this point, the burger should be about the same height and width as the roll.) COOKING THE BURGER: You can either grill or pan fry the burger.
- GRILL: Place the burgers over medium coals.
- Cook on a covered grill for approximately 30 minutes, turning the burger every 5-7 minutes to melt the cheese evenly.
- PAN FRY: Place the burgers in a skillet on medium-low.
- Cover and cook for approximately 20 minutes on each side, or until the juices run clear.
- Serve on the French roll with honey mustard and any other desired condiments (avocado slices are great!).
- *The cheese may be varied, as well as the stuffing in its entirety.
- I've varied this recipe by using only ground beef, adding grilled red and yellow bellpeppers, stuffing with chili and using ground turkey.

- Preheat oven to 350°. Cook noodles according to package directions until al dente; drain. In a large skillet, cook the beef, onion and green pepper over medium-high heat for 10-12 minutes or until meat is no longer pink; drain. Stir in the noodles, soup, cheese, water and chili sauce. Transfer to 2 greased 8-in. square baking dishes., Toss bread crumbs and butter; sprinkle over casseroles. Bake, uncovered, 35-40 minutes or until bubbly and golden brown. Freeze option: Cool unbaked casseroles; cover and freeze up to 3 months. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Cover casserole with foil; bake as directed, increasing covered time to 45-50 minutes or until heated through and a thermometer inserted in center reads 165°. Uncover; bake 10-15 minutes longer or until golden brown.
