DEEP FRIED CHICKEN NECKS



Deep Fried Chicken Necks image

You need to start this recipe the day before. Definitely a conversation starter, but also economical to make and using a lesser loved part of a chicken.

Number Of Ingredients 12

1 kg chicken necks
2 small hot red chilies (finely chopped)
1 ½ tablespoons lemon grass (finely chopped)
1 tablespoon kaffir lime leaves (finely chopped)
2 cloves garlic (finely chopped)
2 tablespoons ginger (finely chopped)
1 ½ tablespoons light soy sauce (light soy sauce)
½ tablespoon fish sauce
1 tablespoon palm sugar (grated (can substitute light brown sugar))
400 ml coconut milk
250 grams plain flour
salt and pepper

Steps:

  • In a glass bowl place, chilies, lemon grass, kaffir lime leaves, garlic, soy sauce, fish sauce, palm sugar and coconut milk. Milk all ingredients well until combined. Place chicken necks in the mixture, cover with plastic wrap and place in the fridge to marinade for 24 hours (at least over night).
  • In a wok, pour in oil until around 7cm deep. Heat wok over a medium heat to 170 deg C (340 deg F) and pre heat your oven your oven to 120 deg C (250 deg F). Line baking tray with baking paper and set aside.
  • In a large blow place flour and season with salt and pepper.
  • Working with a few necks at a time, remove from marinade and then coat in flour mixture. Shake off extra flour before placing in wok to deep fry. Fry for around 4 minutes each side and golden.
  • Remove chicken from oil with tongs. Shake off excess oil, drain on some paper towel and then place on baking tray in the oven to keep warm.
  • Repeat with the remaining chicken necks. Serve with sweet chili or satay sauce.

Olive oil nonstick cooking spray
2 large eggs, beaten
1 tablespoon Dijon mustard
1 tablespoon honey
1 tablespoon hot sauce
Kosher salt and freshly ground black pepper
2 1/2 cups panko bread crumbs
2 teaspoons salt
1/2 teaspoon ground black pepper
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1 (3-pound) chicken cut into 8 pieces, skin removed

Steps:

  • Preheat the oven to 400 degrees F. Fit a sheet tray with a wire rack and spray with nonstick cooking spray.
  • In a pie plate or shallow bowl, whisk the eggs, mustard, honey, hot sauce, and salt and pepper, to taste, together until thoroughly combined.
  • Add the panko, salt and pepper, to taste, the paprika, cayenne, and garlic powder to another pie plate and whisk to combine.
  • Dredge the chicken through the wet mixture, then the dry mixture, patting the breading on so it adheres. Arrange on a wire rack lined sheet tray, making sure there is ample space between each piece of chicken. Give the chicken a spritz of the olive cooking spray. This will help brown and crisp up the coating.
  • Put on the upper rack of the oven and bake until the chicken is golden and crisp. The temperature should register 160 degrees F on an instant-read thermometer in the thickest part of the chicken, about 45 minutes. Transfer to a serving platter and serve.

Spicy Chicken Seasoning Ingredients:
1 tablespoon seasoning salt
1 tablespoon crushed red pepper flakes
2 teaspoons black pepper
2 teaspoons cayenne pepper
2 teaspoons poultry seasoning
1 teaspoon lemon-pepper
12 whole chicken wings, cut in 1/2 at the joint
Spicy Chicken Batter:
2 eggs
2 tablespoons hot sauce
1 tablespoon crushed red pepper flakes
1 teaspoon black pepper
1 teaspoon cayenne pepper
2 cups all-purpose flour
Vegetable oil, to fry

Steps:

  • In a small bowl whisk together seasoning salt, red pepper flakes, black pepper, cayenne pepper, poultry seasoning, and lemon pepper. Reserve 2 tablespoons in a separate bowl. Rinse chicken wings in cold water and place into a shallow baking dish. Sprinkle the wings evenly with the seasoning, and let them marinate, covered and chilled, for 1 hour. Whisk eggs, hot sauce, red pepper flakes, black pepper, and cayenne pepper into a medium size mixing bowl. Reserve. Put the flour into a shallow dish or pie plate. In a large deep-fryer or large Dutch oven heat oil to 350 degrees F on a deep-fat thermometer. Dredge chicken wings into the egg mixture then into the flour. Place wings 3 at a time into the hot oil and cook for 8 to 10 minutes, turning occasionally, until cooked through and golden brown. Remove to a paper towel lined sheet tray. Make sure oil returns to temperature before adding the next batch. Sprinkle the wings with the reserved seasoning for extra hot wings.

1 quart buttermilk
2 tablespoons hot sauce

Peanut oil, for frying
3 cups all-purpose flour

  • Season the chicken with salt and pepper and place in a casserole dish. In a nonreactive bowl, mix buttermilk, hot sauce and cayenne. Pour the buttermilk mixture over the chicken, cover with plastic wrap and place in the refrigerator to marinate for 2 hours.
  • Preheat a deep-fryer to 350 degrees F.

1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons lemon zest, about 1 lemon
8 bones in chicken pieces, (4 drumsticks and 4 thighs)
6 cups canola oil, for frying
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon onion powder

1 cup buttermilk
2 large egg whites
2 tablespoons vodka

Steps:

  • Dry brine the chicken: In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and lemon zest.
  • Pat the chicken pieces dry with a paper towel and season with the salt mixture, evenly coating each piece.
  • Line a large resealable container with paper towels and add the seasoned chicken. Refrigerate uncovered for at least 4 hours, preferably overnight.
  • 30 minutes before frying, remove the chicken from the refrigerator to bring to room temperature.
  • Add the canola oil to a large Dutch oven and heat over medium heat until the temperature reaches 350°F (180°C). Place a wire rack over a rimmed baking sheet and set nearby.

Delicious, braised chicken thighs from The Neely's on Food Network. Gina Neely claims that your man will love this one. The chicken is so moist and tender. I think the herbs and seasonings are a little strong, so I've indicated a range for the amounts. I have also subbed herbs de provence for both thyme and rosemary, and really like the results. I prefer to use a total of 1 tsp dried herbs de provence and 1/2 TBS of lemon pepper. And I like to add 1/2 tsp sugar to balance out the acidity in the canned tomatoes. Serve over hot buttered rice. I'm also going to try this with pork chops.

6 skinless chicken thighs
1 teaspoon salt
1/2 teaspoon pepper
1 medium onion, chopped
1 cup chicken stock
1/2 cup white wine
1 (14 1/2 ounce) can crushed tomatoes in puree
1/2-1 teaspoon dried thyme (or herbs de provence)
1/4-1/2 tablespoon dried rosemary (or herbs de provence)
1/2-1 tablespoon lemon-pepper seasoning
1/2 teaspoon sugar
2 tablespoons fresh parsley, chopped

Steps:

  • Heat the oil in a large skillet over medium-high heat.
  • Pat chicken dry and season with salt and pepper.
  • Brown the chicken about 4 minutes on each side.
  • Remove chicken and set aside. Pour off all but 1 tablespoon of oil from the pan.
  • Add onion to the pan and cook until tender, about 3 minutes.
  • Add chicken stock and wine. Stir, scraping any brown bits from the bottom of the pan. Turn heat to high and reduce by half, about 3 minutes.
